Peanut Butter Chocolate Chip Protein Balls

These delicious peanut butter chocolate chip protein balls are gluten-free, vegan, and can be made in ten minutes!

Ingredients
  

  • 1 1/2 Cups Quick Oats
  • 1/2 Cup Creamy Peanut Butter
  • 1/4 Cup Unsweetened Coconut
  • 1/4 Cup Vanilla Plant-Based Protein Powder
  • 1/8 Tsp Sea Salt
  • 1/2 Tsp Ground Cinnamon
  • 3 Tbsp Maple Syrup
  • 1/2 Cup Dark Chocolate Chips
  • 3-6 Tbsps Almond Milk

Instructions
 

  • In a large bowl, combine quick oats, peanut butter, coconut (if using), protein powder, sea salt, cinnamon, maple syrup, and 3 tablespoons of almond milk. Use a fork or electric mixer to mix until well combined.
  • The mixture should have a cookie dough-like texture. If it’s too dry, add almond milk one tablespoon at a time. If it’s too sticky, mix in a little more oats.
  • Fold in the chocolate chips (or your preferred mix-ins).
  • Scoop about a tablespoon of the mixture and roll it into a ball using your hands.
  • Keep them in an airtight container in the fridge, freezer, or on the countertop.
