In a large bowl, combine quick oats, peanut butter, coconut (if using), protein powder, sea salt, cinnamon, maple syrup, and 3 tablespoons of almond milk. Use a fork or electric mixer to mix until well combined.
The mixture should have a cookie dough-like texture. If it’s too dry, add almond milk one tablespoon at a time. If it’s too sticky, mix in a little more oats.
Fold in the chocolate chips (or your preferred mix-ins).
Scoop about a tablespoon of the mixture and roll it into a ball using your hands.
Keep them in an airtight container in the fridge, freezer, or on the countertop.
