In a large mixing bowl, combine oats, coconut, maple syrup, and coconut oil until the ingredients are fully coated.
Preheat oven to 325 degrees and line a baking sheet with parchment paper.
Spread the oat mixture evenly on the parchment-lined baking sheet.
Bake for 10-15 minutes. Use a spatula to spread the granola now and then to make sure it all cooks evenly. The edges will cook faster.
Once cooled toss in the cinnamon, sea salt, and cranberries. If adding chocolate chips, let the granola cool completely before adding otherwise they'll melt.
Let the granola rest for 20 minutes before serving or storing
