These Healthy Butternut Squash Fudge Brownies are gluten-free, dairy-free, and vegan and made without refined sugars. They get their natural sweetness and irresistibly moist, fudgy texture from wholesome butternut squash and pure maple syrup.

Ingredients
  

  • 15 Ounces Butternut Squash Puree
  • 1/2 Cup Maple Syrup or your choice of sweetener
  • 1/2 Cup Peanut Butter or your choice of nut butter
  • 2 Tsps Vanilla
  • 1 Cup Unsweetened Cocoa Powder
  • 1 Tsp Baking Soda
  • 1/2 Tsp Sea Salt
  • 1/4 Cup Dark Chocolate Chunks optional

Instructions
 

  • Preheat oven to 350 degrees.
  • In a mixing bowl, stir the butternut squash puree, maple syrup, peanut butter, and vanilla until combined.
  • Fold in the unsweetened cocoa powder, sea salt, and baking soda.
  • Line a baking dish with parchment paper, and spread with cooking spray. Pour in the brownie batter and spread evenly with a spatula.
    I used a 9x5 pan.
  • Top the brownies with the dark chocolate chunks (or walnuts!) and bake for 50-55 minutes.
  • Allow the brownies to cool completely before slicing into them.
    Store these brownies in the refrigerator or freezer for the best fudgy results!
