Garden Fresh Peach & Black Bean Salsa

Ingredients
  

  • 5 Cups Tomatoes, chopped a variety
  • 1 Large Yellow Bell Pepper, diced
  • 1 Large Green Bell Pepper, diced
  • 3 Jalapeño Peppers, finely chopped
  • 2 Large Peaches, diced
  • 1/2 Medium Red Onion, diced
  • 4 Garlic Cloves, minced
  • 2 Tbsps Honey or brown sugar
  • 1 Tbsp Lime Juice
  • 1 Cup Black Beans, drained and rinsed
  • Sea Salt, to taste
  • Parsley or Cilantro, chopped & added to taste

Instructions
 

  • Chop & Prep: Dice all the veggies and peaches into small, even pieces for the best texture.
  • Mix: In a large bowl, combine tomatoes, bell peppers, jalapeños, peaches, red onion, and garlic.
    **Before mixing everything together, I like to let the chopped vegetables sit in a strainer for about 20 minutes. This helps release some of the excess juices, so the salsa isn’t too watery.
  • Season: Stir in honey, lime juice, black beans, sea salt, and your choice of parsley or cilantro. 
    You can also add in garlic powder, black pepper, or chili flakes!
  • Let It Rest: Allow the salsa to sit for at least 30 minutes before serving to let the flavors meld. Every hour that passes, the salsa gets more and more flavorful!
  • Serve with tortilla chips, in a salad, over grilled chicken, or in tacos!
