Chop & Prep: Dice all the veggies and peaches into small, even pieces for the best texture.
Mix: In a large bowl, combine tomatoes, bell peppers, jalapeños, peaches, red onion, and garlic. **Before mixing everything together, I like to let the chopped vegetables sit in a strainer for about 20 minutes. This helps release some of the excess juices, so the salsa isn’t too watery.
Season: Stir in honey, lime juice, black beans, sea salt, and your choice of parsley or cilantro. You can also add in garlic powder, black pepper, or chili flakes!
Let It Rest: Allow the salsa to sit for at least 30 minutes before serving to let the flavors meld. Every hour that passes, the salsa gets more and more flavorful!
Serve with tortilla chips, in a salad, over grilled chicken, or in tacos!
