Healthier Peanut Butter Oatmeal Cookies

  • 1 Cup Gluten Free Oats
  • 1/2 Cup All-Purpose Gluten Free Flour (or almond flour)
  • 1/2 Tbsp Baking Soda
  • 1 Tbsp Baking Powder
  • 1/4 Tsp Sea Salt
  • 2/3 Cup Swerve (or stevia)
  • 2 Large Eggs
  • 2 Tsps Vanilla Extract
  • 1/4 Cup Coconut Oil (melted)
  • 1 Cup Creamy Peanut Buter (or your choice of nut butter)


  1. In a large bowl, combine the oats, baking powder, baking soda, flour, salt, and Swerve together. 

  2. Stir the eggs, melted coconut oil, and vanilla into the dry ingredients. 

  3. Mix in the peanut butter. 

  4. Preheat the oven to 350 degrees

  5. Grease a baking sheet and scoop two-tablespoon sized balls of dough onto the baking sheet. Press down with a fork. Leave about one inch between cookies. 

  6. Bake 12-14 minutes (The cookies will continue to cook when you remove them from the oven.) Take them out with they are slightly soft in the middle and fully cooked on the outsides.
