Valentine’s Day, Christmas, Easter, or whatever holiday you’re celebrating, these lemon poppy Linzer cookies need to be on the menu. They look super impressive but are actually easy to make, and they taste like Pop Tarts. I know that’s such a strange comparison, but it’s true. And if you don’t like Pop Tarts, well…

I cannot wait to make these cookies with a heart cutout and a strawberry filling for Valentine’s Day. I will not stop there either. I also plan to make these with a lemon custard filling this summer. It is such a versatile cookie recipe. It took me a few attempts to get this recipe just right, but on the tenth batch, I finally nailed it. Now this recipe is a foolproof one, so do not worry about going through any trial and error like I did. Apparently, really cold butter does not work for these, so if you are planning to make them, take the butter out of the refrigerator right now.

I made these cookies with gluten free flour and with regular flour. The gluten free flour took about a minute longer to bake, but both versions made a delicious cookie. When I used vegan butter, the cookies were a bit softer, but they still worked beautifully. I wanted to share these swaps just in case you are planning to make them. Since these cookies have zero eggs, making them vegan is a super simple swap.

If you do not like raspberry jam, use any flavor jam you want. Do not like jam at all? Try filling these cookies with Nutella. Wait, I need to do that ASAP. If you do plan to use Nutella, leave out the lemon juice and add vanilla instead. I am not sure lemon and Nutella would be a great match, but then again, some people eat pickles and peanut butter together.

The raspberry and lemon combo were born to be together. These sweet Linzer cookies hold up perfectly outside of the refrigerator for about a week. We finished our last one last night.

Super Simple Ingredients for Lemon Linzer Cookies

Ingredients

• Unsalted butter at room temperature or Earth Balance vegan butter
• Powdered sugar
• Lemon juice
• Almond extract
• Salt
• All purpose flour or gluten free flour
• Poppy seeds optional

Filling and Topping

• Raspberry jelly or any filling
• Lemon juice
• Powdered sugar

How to Make Lemon Poppy Linzer Cookies:

Preheat the oven to 370 degrees.

Add the room temperature butter, powdered sugar, lemon juice, and almond extract to an electric mixer. Mix on medium speed until smooth and fully combined.

Sift the flour, then slowly add it to the mixer along with the salt on very low speed. Mix just until combined, then gently mix in the poppy seeds.

Scoop the dough out of the mixer and place it onto a lightly floured surface. Roll the dough out with a rolling pin until it is about three quarters of a centimeter thick.

Use a cutter to cut out the cookies. For half of the cookies, cut out a center shape to create the Linzer tops.

Transfer the cookies to a non stick or parchment lined baking sheet.

Bake for 6 to 7 minutes. Do not let the cookies brown. Let them sit on the baking sheet for about five minutes before transferring them to a cooling rack.

Mix the lemon juice and raspberry jelly together to create the filling.

Once the cookies are completely cooled, add about one tablespoon of filling to the center of each bottom cookie, leaving about three quarters of a centimeter around the edges so it does not spill over.

Place the cutout cookie on top, then finish by sprinkling with powdered sugar.

    The recipe was outstanding and my daughters loved them. I had to add a few drops of water to my mixer because my dough was a little crumbly but after that it rolled out flawlessly. We used blueberry jam with the lemon. Thanks for all of these recipes you’re serving up this year! Desiree ~
