I’m sitting in the airport with just a few minutes left before we board our flight back home! I can’t wait to see my family! I planted a few seeds in our group chat with my husband and mother-in-law. This delicious crock pot creamy chicken and tomato soup is one of my mother-in-law’s favorites! After watching my tutorial, she made it for her friends and even prepared it for us when we visited last spring. I texted, “I have a crockpot if you’d like to make some of that tomato and chicken soup” in the group chat. They did go to the grocery store last night, so I’ll keep you posted if they ended up making it. I’m so ready for some home-cooked food. After traveling, dining out gets to be way too much. This is one of my favorite healthy, yet comforting recipes, and if they don’t make it, I’ll make sure to stop and grab all the ingredients to do it.

I was chatting with her before I left about this recipe, and I realized I never put it on my blog—it was only on my TikTok! Since I had a bit of time before the flight took off, I decided to hurry up and get this posted just in case you’re looking for a delicious slow cooker recipe to throw in the crock pot for dinner!

Creamy Chicken & Tomato Italian Soup Ingredients:

  • 2 tablespoons Olive Oil
  • 2 lbs Chicken Breast
  • 4 cups Potatoes, diced
  • 2 cups Cherry Tomatoes
  • 1 tablespoon Minced Garlic (or more, to taste)
  • 2 Packets Good Seasons Italian Dressing Seasoning (my favorite with olive oil on salads!)
  • 4 ounces of Cream Cheese or Feta
  • 5 cups Fresh Spinach

Here are the steps for making Creamy Chicken and Tomato Italian Soup:

Prepare Ingredients:

  • Dice 4 cups of potatoes.
  • Mince 1 tablespoon of garlic (or more, to taste).
  • If using fresh spinach, rinse and chop 5 cups.

Combine Ingredients in Crock Pot:

  • Add 2 tablespoons of olive oil to the crock pot.
  • Place 2 lbs of chicken breast into the pot.
  • Add the diced potatoes, 2 cups of cherry tomatoes, and minced garlic.
  • Sprinkle 2 packets of Italian dressing seasoning over the ingredients.
  • Add 4 ounces of cream cheese (or feta).

Cook:

  • Set the crock pot to high and cook for 2 hours.
  • If you prefer a thinner soup, add 1/2 cup of water at this stage.

Add Spinach:

  • After 2 hours, remove the lid and stir in the fresh spinach.
  • Add a pinch of black pepper to taste.
  • Cover and continue cooking for an additional 3 hours.

Shred Chicken:

  • After 5 hours, remove the chicken breasts and shred them in the crock pot.
  • Stir the soup to combine all ingredients well.

Serve:

  • Scoop the soup into bowls and serve hot. Enjoy!

Equipment

  • 1 Crock Pot

Ingredients
  

  • 2 Tbsps Olive Oil
  • 2 lbs Chicken Breast
  • 4 Cups Potatoes Diced
  • 2 Cups Cherry Tomatoes
  • 1 Tbsps Minced Garlic (or more)
  • 2 Packets Italian Dressing Seasoning Good Seasons Brand
  • 4 Ounces Cream Cheese or feta
  • 5 Cups Fresh Spinach

Instructions
 

  • Add two tablespoons of olive oil, chicken breast, diced potatoes, cherry tomatoes, minced garlic, an Italian dressing packet, and cream cheese in a crock pot.
    Cook on high for two hours.
    If you do not want a super thick soup, add in 1/2 cup of water.
  • Remove the lid and add spinach and a pinch of black pepper.
    Cook for another three hours.
  • After five hours, break apart the chicken, and serve!

    This looks like an amazing recipe. I will definitely be making this along with the gluten free chocolate chip cookies. I love cooking warm broths and soups when the weather starts to turn cool. These will be a perfect project for a free day.
