Seaside Dinner: Mesquite Flax Seed Breaded Cod

Tonight we had a seaside dinner!

I made dinner for my parents tonight. They love fish as much as I do. I thought cod would be a perfect fix. They normally eat salmon, crab, or shrimp. It was a risk, but they ended up loving this recipe! My mom said it tasted “restaurant style”. And the best part…its healthy! My mom doesn’t go back for seconds, ever. But I caught her stealing fish from my dad’s plate…after seconds!

Here is the recipe for mesquite flax seed breaded cod!

Ingredients: *approximately 2 lbs of fresh cod, 1/2 cup flax seeds, 1 tablespoon mesquite spice, *1 tablespoon lime juice, *1-2 eggs, 1/2 tablespoon lemon pepper, and *diced can tomato with chilis.

Combine 1-2 eggs with 1 tablespoon of mesquite spice and 1 tablespoon of fresh squeezed lime juice.

-Rinse the cod under water.

-Lather the cod with egg and mesquite spice.

-Coat the cod with ground flax seeds.

-Sprinkle lemon pepper seasoning on top of flax layer.

-Don’t worry about coating the bottom.

-Grease a baking pan with olive oil or cooking spray.

-Bake cod 20-22 minutes at 375 degrees.

-Microwave the sweet potato (before cutting) for 7 minutes or until soft.

-Slice them into blooming potatoes.

-Place them in the oven with the cod.

-Cook 20 minutes.

-Prepare any toppings or garnishes while your cod and sweet potatoes are baking.

-I chose mustard for dipping sauce because it goes perfect with the cod and the sweet potato. Occasionally, I’ll use a little ketchup. Hey! I’m human.

For the toppings I chose a dollop of plain Greek yogurt, diced tomatoes with chili, sweet corn, yellow bell pepper, lemon, and cucumber.

-Maybe I got a little carried away with toppings but I just love colorful things!

The fish was cooked perfectly. There is none leftover for tomorrow. We devoured it!
