Grandpa's Gumdrop Cookies

Chewy oatmeal gumdrop cookies that have become a Christmas cookie tradition.

Ingredients
  

  • 2 1/2 Cups All-Purpose Flour Gluten-Free Flour Swap
  • 3 Cups Old Fashioned Oats
  • 1 1/2 Tsps Baking Soda
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Sea Salt
  • 1 Tsp Ground Cinnamon
  • 1 Cup Unsalted Butter softened
  • 1 Cup Brown Sugar packed
  • 3/4 Cup Sugar
  • 2 Tsps Vanilla
  • 2 Large Eggs
  • 3 Cups Gumdrops Sliced in half

Instructions
 

  • Preheat oven to 350-degrees
  • In a large bowl, sift together: flour, oats, baking soda, baking powder, salt, and cinnamon. 
  • In an electric mixer, combine the butter, sugar, and brown sugar on medium speed until light and fluffy.
  • Slowly mix in the vanilla and egg.
  • Keep the mixer on low speed and slowly add in the dry ingredients. Increase the speed gradually until combined.
  • Fold in the halved gumdrops.
    I always keep the purple gumdrops out because not everyone likes the taste of black licorice.
  • Add heaping tablespoon-sized drops of dough onto a baking sheet. Keep the cookies about one and a half inches apart.
  • Bake 10-12 minutes. They'll be lightly brown around the edges and soft in the center. They'll continue to cook once you take them out of the oven.
