Oatmeal Chocolate Chip Cookies with Coconut & Maple Syrup

  • 2 Cups Rolled Oats
  • 1 Cup Gluten-Free Flour
  • 1 Cup Shredded Coconut
  • 1 Tsp Baking Powder
  • 1 Tsp Ground Cinnamon
  • 1/4 Tsp Sea Salt
  • 1/3 Cup Coconut Oil Melted
  • 1/3 Cup Maple Syrup
  • 1 Large Egg
  • 1 Cup Chocolate Chips


  1. Preheat oven to 350-degrees

  2. In a large bowl, mix together the rolled oats, cinnamon, gluten-free flour, shredded coconut, sea salt, and baking powder.

  3. Mix in the melted coconut oil, maple syrup, and egg into the large bowl.

  4. Fold in chocolate chips.

  5. Add two tablespoon-sized dough balls onto a baking sheet two inches apart.

    Bake for 10-12 minutes.
