Happy Monday, everyone! After hitting the upper 90’s all last week, I’m looking forward to the 80-degree weather coming our way this week. Even though the weather was absolutely brutal, I had a pretty great week. I managed to get caught up on all of my backend blog work, hang out with friends and family, fit my runs in, make some tasty food, and more! I’m going to keep my focus on organizing and spring cleaning round two this week. My closets, kitchen, and garage need a complete clean out! I currently have two baskets of laundry to fold, so after this post, you’ll know where to find me!
CHANGES TO THE WEEKLY RECAP BLOGS
Before I begin this week’s recap blog, I wanted to chitchat about some changes! You’re going to notice a new format and organization of the weekly recap. I wanted to try something different, and I hope you all don’t mind. Please let me know in the comments if this new format is a “NAY” or “YAY” for you! I promise I will not be offended because your feedback is important to me! A lot of you have been reading my recap blogs for many years, so I love hearing your thoughts! The reason I changed it up a bit is that I wanted to add a little organization to them and help people find what they’re searching for a bit easier. 💜

WHAT I ATE: ON THE SAVORY SIDE
Throwing meals together without a plan is my go-to pretty much every night. Last week was no different!
LETTUCE WRAP TURKEY TACOS WITH SPANISH RICE
I used to make lettuce wrap tacos all the time. When I came across an old blog post, I immediately knew that I wanted those lettuce wrap tacos for dinner. I prepared the ground turkey with the taco seasoning packet, and then filled a lettuce wrap with the taco meat, salsa, dairy-free plain yogurt, homemade guacamole, vegan cheese, and had Spanish rice on the side!
CHOPPED SALAD FROM CHOPT
Whenever I’m near a Chopt, I have a hard time resisting their delicious salads! I love building my own salads when I’m there. This one had kale, romaine, tomatoes, falafel, sweet potatoes, cucumber, cranberry, avocado, blistered green beans, and chickpeas. I had the green goddess & smokey chipotle for my dressing. I don’t know what happened, but this time the chipotle dressing was hotter than ever! I love spicy stuff, but my lips were on FIRE for hours. Other than that, the salad was delicious!
SMOKED TURKEY LETTUCE WRAP
I needed to use up the extra lettuce from taco night, so I added smoked turkey breast with onions, mustard, and veganaise. I had bean crisp chips and arugula salad on the side.
BAKED CHICKEN WITH A WHITE BEAN & KALE SALAD
Last week, I made a big batch of chicken in the oven for Kyle and me to eat throughout the week. I ate a lot of it on salads for lunch, or randomly throughout the day when I was hungry. One of my favorite ways to eat it is with kale & white beans! I sauteed kale and cabbage together with white northern beans and flavored them with the Everything But The Bagel seasoning from Trader Joes. I had a side of cranberry apple quinoa which was also from Trader Joes. This was lunch on repeat for the week.
VEGAN BROCCOLI KALE PIZZA
What’s a weekly recap without at least one night being broccoli kale pizza night? I have this at least once a week. I love the broccoli kale crust from Trader Joes! The key is to bake each side of the crust on 420 for about ten minutes before adding the toppings and cooking again. I had the Trader Joe’s pizza sauce, and delicious mozzarella vegan cheese. I loved the SoDelicous brand, but it didn’t melt as good as Daiya or TJ’s vegan cheese.
CHICKEN SALAD & BABY KALE
One of my favorites for lunch or a snack this week was my dairy-free chicken salad recipe with baby kale and Tessemae’s dairy-free Caesar dressing. I usually add quinoa on top.
RUNNING UPDATES
This week, I decided to wake up at 5:30 am to get outside by 6:15 am for my morning run. This was the only way I was going to be able to do it because the weather was 95 + by 11 am, which is the time I used to go out on my runs. I have to admit, I have grown to love my early morning runs. The weather is perfect, the neighborhood is calm, and I get to ease the anxiety of “fitting in my run” first thing in the morning. I love that it’s my main priority as soon as a wake-up, and the rest of my day runs smoother and less crammed for time. It looks like I’ll be turning into a morning runner this summer, and I’m not even mad about it! 💜 Since last week was Memorial Day, I shared that 5-mile run in last week’s recap post.
WEDNESDAY 3-MILE RUN
I finished Monday’s 3-mile run by 6:30 am. I was incredibly proud of myself because I have never run that early in my entire life. I had that runner’s high as I walked back. I ended up taking Grumples and Leo another two miles to walk it off, and I loved that it was cool enough to walk them a longer distance.
FRIDAY 4-MILE RUN
I had 6-miles planned for Friday morning. Because I didn’t get home from sand volleyball until 11:30 pm on Thursday, I was zonked when I woke up in the morning. I hit snooze so many times, but the fact that I even got out of bed and completed a 4-mile run had me proud of myself. If you want to push your body to do something, you really can. My attitude towards running lately has been so new to me. I think it’s been all about proving to myself that I still have it in me.
SUNDAY 6-MILE RUN
I forgot to set my alarm clock the night before. Leo hit me in the face with his paw around 6:15, and I had never been so grateful for his neediness until that moment. I was excited because it was 64-degrees outside! I had a few sips of coffee, put on my new running shorts (ps thanks to everyone who recommended the body glide), tennis shoes, filled a bottle of water to keep on the sidewalk for me to sip (helps with my dry throat and allergies), and headed out. I planned only to go five, but I felt so fantastic on that fifth mile that I wanted to keep going and hit six. Initially, I wanted to hit six on a flat trail because my neighborhood is so hilly, but I figured it would be really good for strength running up the hills.
HITTING MY SIX-MILE RUNNING GOAL
I wasn’t going to post this photo because I hated the way it looked, but who looks good after six miles, early in the morning, and after sweating out buckets. Plus, I was extremely happy at that moment. I could barely run 1-mile a little under three months ago! I hit three miles for the first time in April, five miles in May, and nailed my six-mile goal in June! I had a lot of self-doubt through it all, but pushing through the mental-blocks is essential! My goal has been to get back into running where I can do it comfortably for about an hour once a week because it honestly helps me with my mental health and calms me down throughout the day. Running used to be my go-to outlet, and now I’m so happy I can lean on it again.
SO WHAT’S NEXT?
I’m just going to continue to run every other day! The key for me is to run intuitively. If I know I’m not feeling it off the bat; then I’ll just run three. If I feel like running four, five, or six, then that’s what I’ll do. I won’t be training for any half marathons or anything like that, but I would like to set up some fun 5k’s to run this fall with readers. That’s currently in the works!

HIGHLIGHTS OF MY WEEK
I did so many fun things this week! After knocking out all of my backend work by Friday, my entire weekend was open for FUN! I didn’t have to do any shoots, recipe developing, traveling, or writing. I didn’t get around to any housework, but I’ll catch up this week! Here are a few of my favorite things from the week!
GIVING MY LIVING ROOM AN ENTIRE MAKEOVER!
My living room has been pretty dull lately. I’ve wanted to give it an entire makeover that would make being in the living room more fun! I love colors, but my living room was lacking. My mom had Friday off, so we grabbed a pink drink at Starbucks and visiting a ton of decor stores to give my living room a new look. I’m excited to share the reveal with you this week! I’m hoping to have it done by Friday! I’ll make sure to give details on just about everything!
SHIRT DETAILS: I bought this button down eyelet top from Old Navy in Pink & White. My only complaint is that they don’t have it in 100 more colors! I’m absolutely in love with the fit, the material, and the feminine details! Here is the link! Oh, and my hat is from Gap! You can find it here.
CALIFORNIA ROAD TRIP SHOPPING
In two weeks, I’ll be heading to Lake Tahoe for Meighan’s 30th birthday weekend! After that, Caitlin and I will be driving down the coast of California! We finalized the itinerary last week, and I am excited to document and share our journey! I’ll be filming a vlog, writing all about our California Coast adventure, and sharing updates on Instagram! I am unbelievably excited! I wanted to pick out a few new outfits to take with me on the trip.
I spent all day with Becca shopping around some local boutiques and then making our way to the Southpark Mall. I picked up some new earrings, sandals, and this new jumpsuit! It reminded me of Julia Robert’s in Pretty Woman!
A WEEKEND WITH THE PUPS
After being in Savannah last weekend, it felt so good to be home with the dogs. I always miss them so much when I’m gone! We spent time doing our miles early in the morning, and even though they take up most of the bed, I love our late-night snuggles!
SEEING MY FAVORITE NEIGHBORHOOD DOGS
I get to say “hi” to these cuties every time I’m out on a walk or run. Luna, the big gray dog, always runs and jumps up to the fence so I can pet her! She’s honestly the sweetest dog. Hazet, the little beagle, is 14 years old! He’s also the sweetest! He sits in the yard all day, and I love getting to pet him when I walk by. 90% of my neighbors are dogs, so I feel pretty lucky 😆
LAST SAND VOLLEYBALL GAME
I had so much fun at our last volleyball game! Even though we only won ONE game this season, we busted our butts and tried our best! I’m going to miss playing on Thursday nights!
FLOWERS AT WILSON’S NURSERY
I stopped at Wilson’s nursery to pick up more flowers for the front! Kyle and I also picked up some potting soil and other gardening supplies to start working on the front this week. I love adopting new flower babies 😊 🌸
A FEW THINGS IM LOVING THIS WEEK:
I love sharing products and other things I’m loving! Last week had a lot of “firsts.”
HOMEMADE ICE CREAM
I can’t stop, and I won’t stop. I bought an ice cream maker a few days ago, and Kyle and I can’t stop making homemade vegan ice cream! So far, we’ve made vanilla, chocolate peanut butter, strawberry, and cookie dough! We are making them with almond milk and monk fruit to keep the sugar low and dairy free. They are so good, and I can’t wait to do summer ice cream recipes for the blog! I think my ice cream maker has been my best investment in a long time. It’s so easy to use, to clean, and it’s pink! READING BEFORE MY RUN
I know some people can jump out of bed and go straight to a workout, but I need at least thirty minutes to have some coffee and downtime to wake up. I’ve been skipping out on my laptop and going straight to my book. I’m currently reading The Last Thing I Saw, and it’s excellent! I’ll give you guys an update after I finish. Oh, I did finish Every Breath by Nicholas Sparks! It was a beautiful book 😊
NON-DAIRY CHOBANI
WOW! WOW! WOW! The non-dairy Chobani is by far the best! I was also shocked at how low the sugar was in the flavored kinds compared to other brands. It has 11g of sugar, which is way better than the 20+ grams. I love having it after a run when I need to replenish my muscles and sugar levels! The texture and flavors taste like actual yogurt (not the Greek kind.) I’m hooked!
RECIPES TO TRY THIS WEEK
I ate so many delicious things this week that I think you’ll love! I love quick, easy, and simple recipes! During the summertime, I don’t like to cook as often, so many of my meals are things that are thrown together.
One of my favorite meals I had on repeat this week was the Pizza-Style Cauliflower Gnocchi! Head over to that blog post to get the recipe. It’s a three-ingredient fix that is mouthwatering! It’s gluten-free & vegan as well.
COCONUT MANGO SORBET
The most refreshing summer snack! I made this because I was craving sour candy, and it hit the spot!
PEANUT BUTTER BANANA BITES
I have been eating these after my morning run and with my coffee! They are the perfect post-workout snack to boost sugar levels, energy, and potassium! They take a couple of minutes to make.
MOCHA SMOOTHIE BOWL
This is the perfect afternoon, pick-me-up! A boost of protein and espresso to help you energize your day! It tastes so good and much healthier than the Starbuck’s Mocha frappes!
SINGLE SERVING PEANUT BUTTER PROTEIN BALLS
I didn’t have time to make breakfast, and I had no protein bars in the house before heading out the door to tennis. I quickly added all the ingredients to a mug, rolled them into balls, and took them to tennis with me!
BANANA PROTEIN PANCAKES
I eat these almost every other day! I had them for breakfast this morning with fresh blueberries and peaches. I use the Birch Bender paleo pancake mix, but any pancake mix should work!
BLACKBERRY SPIRULINA SMOOTHIE BOWL
My favorite way to cool down during the hot summer is a smoothie bowl! Blackberries are super-rich in antioxidants, and spirulina is a great iron, magnesium, and protein source!
HOMEMADE GO-TO GUACAMOLE!
I could eat it by the spoonful! This is the guacamole I made for taco night. It’s simple and easy to mix up.
EATING LOCAL:
I need to take the time and update my Charlotte guide because I’ve been to so many new places since writing it! I love sharing the restaurants I go to.
REIDS FINE FOODS
After shopping around this weekend, Becca and I had lunch at Reids Fine Foods. We started with the poke lettuce wraps (YUM), and I had the chargrilled salmon with Brussels sprouts and truffle fries. I was so hungry from a walk all around the mall, and my six-mile run, so this was the perfect fuel!
UNDERCURRENT COFFEE
I finally got around to trying out Undercurrent Coffee in Plaza Midwood! I cannot wait to go back and try their food, but their coffee was pretty good. I had a dirty chai tea latte with oat milk. I had a few people message me on Instagram asking what “dirty” meant. It just means it’s a chai tea latte with espresso added to it 😊

So, I have to say, this new structure is a “Nay” for me. I can understand the reasoning behind it and I´ll love reading your blog anyways, but with the former day-by-day-structure it´s like I relive your week with you in chronological order!
I admire your discipline with running and listening to your body. I´m a overweight, but I started Nordic Walking two weeks ago, I can already walk longer and feel a lot better. I agree, it helps with my anxiety!! In a few months, after a few lost kilograms lost, I´d like to start running,.
For your running content, I´d love to see more photos of your running routes.
My highlight for this week is, that I found the courage to comment on this post in English (I´m German).

I found a pair of running shorts from New Balance at TJ Maxx and they worked great!! OMG body glide is everything!! I put it on and the shorts stuck to it the whole time! I didn’t deal with the chafing.

I agree with a couple other comments. It was harder to follow and I liked when the photos and comments were right after each other so it was easier to read and understand. I do like the format of subtitles, just not that all the photos are first and then the words.
So I’m going to have to say Nay.
One thing I really liked was the pictures with the recipe right next to it. Those are colorful, cute, and helpful.
My highlight this past week was celebrating accomplishments with my roommates with a wine and apps night.
I’d love to see how you stretch and maybe a warm-up/cool-down routine with running.

NAY, I like the old style much better; for some reason this one just felt clunky/harder to follow, less interesting and the format just made me not want to read it. I appreciate that you are trying something new and experimenting etc, but in this case, I think weekly recaps are more reader-friendly when they are done in chronological order. I think this style would be great for a holiday blog/city guide or something like that though 🙂

2. The highlight of my week is my husband’s golf tournament! It’s a big qualifier that I’m hoping he will do well in. He’s trying to make the PGA Tour. <3
