Good morning and happy Monday, everyone! I hope you’ve all had a great week. I’m blogging from the hotel room at Disney World, so I think it’s safe to say that my week is already off to a great start. I have about an hour before we head out the door for breakfast, so I wanted to squeeze in a quick recap post before taking off. When I get home from Disney, I’ll be recapping everything we did, ate, and the entire itinerary from our trip. It’s been a blast so far, oh and I’ve finally tried the Dolewhip…YUM!
The last time we chatted, I told you guys I was heading out to take engagement photos for my best friend! I knew it was going to be a long and exciting day, so I fueled up with a turkey sandwich and chili before heading to the location. The sandwich was made with Udi’s bread, chive Kite-Hill cream cheeze, and smoked turkey slices from Trader Joe’s. The chili was leftover from Panera bread from a few nights before.
I’m excited to share that it was a complete success! Becca and her fiance looked absolutely stunning! We are going to meet up Saturday to go through the rest of them together, but I’ve shared some sneak peeks from the ones that Becca has shared on her Instagram 🙂 I’m excited for her to see the rest of them because I loved how they turned out. They are such a beautiful couple.
I got home around 7 pm and skipped out on going to the gym. I was too exhausted, hungry, and excited to start going through the photos from the day. For dinner, I sauteed some snap peas, bell peppers, and cauliflower gnocchi and then tossed them in the Kite-Hill chive cream cheese! I made random things all week long because I wanted to use up what I had in the house before heading out on my trip. I’ll be doing a grocery haul video when I get back!
For my breakfast on Tuesday, I had a bowl of my protein oats with maple syrup and peanut butter. This combo is amazing!
For dinner, I did more cauliflower gnocchi and green beans, but this time sauteed in sesame oil with a little bit of gluten free soy sauce and everything but the bagel seasoning. I’ll be adding this to my next meal prep! I could have eaten ten bowls of this dish because it was delicious!
On Wednesday, I finished up a few DIY things for my Disney trip. Instead of buying the expensive shirts there, I ironed on a Minnie patch from Hobby Lobby to one of my shirts and glued pearls to the collar. I love how it turned out!
I took a break from my projects and had a protein shake! It had one scoop of vanilla plant-based protein, strawberries, almond milk, and ice.
I had a quick dinner because I still needed to finish up packing and wanted to be in bed by 9 PM since I had to wake up at 3:20 am to head to the airport. I baked a gluten/dairy free crabcake from Earthfare and made sesame green beans with Everything But The bagel seasoning! I can’t believe it took me so long to try this seasoning because it’s incredible!
Kyle’s mom bought me the perfect set of cube bags for my birthday. They made packing so much easier! It was a set of ten, so they fit all of my things perfectly. I put the hotel snacks in one, my bathroom necessities, electronics, t-shirts, and other random items. I will never go back to my regular packing style ever again! I’ll make sure to ask where she got these so I can share with you! I know they have some sets on Amazon, but I can’t find this particular one.
I woke up super early, and it was so cute because Kyle had my coffee all ready for me to go and wrote the cutest note! He knew I’d for sure see this one since it was on my coffee machine.
I left my house at 3:50 am and headed to Caitlin’s parent’s house. Her mom was so sweet and drove us to the airport! We landed in Orlando at 8 am, and were super excited for the day!
Charlotte was rainy and cold when we left, so it was nice to be in the warm weather! We were excited to get checked into the hotel and head out on the day’s adventures!
We grabbed a quick salad (kale, avocado, tomatoes, pickled onions, and lime dressing) from our resort’s cafe and then hopped on the bus to Caitlin’s race expo so she could get checked in and pick up all of her bags. Afterward, we headed to the Magic Kingdom! I’ll blog all about that later. 😉

Happy Monday, Taralynn! I personally love the week before a major (or minor!) vacation. You get all excited and you anticipate the fun that’s coming so much! 🙂 My favourite Disney character is… oh my, I really can’t choose! I love them all. Maybe Simba? Haha! 😀

After hearing so many people rave about the Everything But the Bagel seasoning and not understanding how it could possibly be that great, I finally tried it a few weeks ago. WOW! I still don’t understand how it can be as great as it is, but it is! Question about the cauli gnocchi – have you ever cooked it and then reheated leftovers, and if so, is it good reheated?

The leftovers are delicious but soggy. I’m so weird though because I kind of love that texture because they remind me of dumplings.

I’ve created a ton of presets in Lightroom myself and use those:) But some of my favorite on visco are E6, C3, L6, AND C7 😀

I surprisingly didn’t like it! I feel like the cauliflower flavor was very present in it compared to the other cauliflower crust pizzas I have had. I loved the texture though!

If I could be on any TV game show, I'd totally be on MasterChef! I heard Gordon Ramsay is actually a really fun person in real life and nothing like his abrasive TV persona.
IDK if sriracha counts as seasoning but that stuff is amazing!

Can’t wait to see the Disney post!!!! I also LOVE Everything but the seasoning! I recently tried the cauliflower gnocchi from TJ’s, I followed the directions to steam them in some water but they came out soft…they were still delish but they look even more amazing crispy! How do you get them so crispy? Do you just saute them?

They are going to be so good!! WE HAVE DONE SO MUCH! lol
I hear so many people have issues with the gnocchi, but definitely, don’t follow the directions! I microwave them for 30 seconds and then fry them on the pan with sesame oil on all sides! They get crispy on the outside.
