Happy Monday!
I had such a fun weekend. It was both wild, and calm. Of course, I’ll blog about that tomorrow! 🙂 I have about an hour to waste before heading to the gym, so I thought it would be a good time to share my banana spice oatmeal muffin recipe. I appreciated all the feedback about using a new recipe format for my posts, so now you can expect those printable versions! I’ve also been going back and adding a printable version to my older recipes. Under the recipe tab, there is a new one that says “printable.” Hoping to make this easier 🙂
For the past month, I have been attending boot camp and athletic conditioning classes five times a week. I love to have food prepped and ready to go. It helps me stay on track, and makes my choices easier and healthier. I’ve been making healthy muffins for a pre-gym carb fix, and egg cups for a post. These banana muffins are perfect because of the potassium in the bananas. Potassium can be lost from the body during a serious sweat session, so it’s important to provide your body with enough. Potassium helps sore muscles and the function of muscles. It’s the perfect electrolyte! I find my workouts are always better when I have a banana before, and same with my long runs.
This recipe is so easy to make. It doesn’t require a ton of ingredients, and it’s the perfect way to use up the old bananas.
Banana & Spice Oatmeal Muffins
Ingredients
- 2 Extra Large Over-ripened Bananas
- 2 Large Eggs
- 1 Tsp Baking Soda
- 1/2 Tbsp Baking Powder
- 1 1/2 Cups Quick Oats
- 1/2 Cup Swerve
- 1 Tsp Vanilla
- 1/2 Tbsp Ground Cinnamon
- 1/2 Tsp Nutmeg
- 1/2 Tsp Ground Ginger
- 1/2 Tsp Sea Salt
- 2 Tbsp Chia Seeds
Instructions
- Preheat oven to 375 degrees
- In a large bowl, combine oats, mashed bananas, eggs, vanilla, almond extract, Swerve, cinnamon, chia seeds, ginger, sea salt, baking powder, and baking soda together.
- Grease a muffin pan.
- Evenly distribute the batter into the twelve serving muffin pan. (approximately 1/3 cup) I also made a mini muffin batch. It made 48 mini muffins.
- Bake 20-23 minutes.
- I stored mine in a container in the refrigerator.
Notes
These muffins are full of flavor and have a soft and fluffy texture. They are so good with a little peanut butter on top and a side of coffee.
I also made my second batch into mini muffins. I loved those as well! These muffins are so good, and you can’t even tell that they don’t have butter, sugar, dairy, gluten, or nuts! Kyle LOVED them. I’m making a new batch today with cocoa powder. And next week, a blueberry lemon! The weather has been so hot here lately, so adding the spice had me dreaming of fall 🙂 I didn’t take it as far as adding pumpkin, but soon, guys. Soon. 🙂

Yes! I’d use about 1/4 cup & maybe even a tiny drizzle on top before they go in!

Hi!! My favorite banana recipe is chocolate chip banana bread; it’s so so good! I’m not super into the Bachelorette, but I did watch when Chris Soles was on it because I’m from Iowa (go Hawks!!). I am actually a vegan so do you have any suggestions for replacing the egg in the recipe??

hmmmmmmmm what do you usually use as egg replacements? I’m not too good with that! I know that there are egg replacement’s in the baking section. I know someone will help you out in the comment section!:)

I’m in love with grab and go pre-workout snacks that I’VE made (so I know everything that goes in them!) so these are perfect! I bet they would be amazing fall treats with a little pumpkin added 🙂 (I’m a pumpkin freak).
They’d also be great for a quick breakfast snack before work! And to help me not eat what the kiddos are having for breakfast at school haha.

Oh my gosh! These look amazing! I’m a sucker for anything with ginger or nutmeg. Definitely will be trying these out. Maybe with some White Chocolate Wonderful slapped on top? Ha!
I hate, hate, hate the hot weather (and we are over 100 degree temps in California), so I am dreaming of fall…..and dreaming of decorating for Christmas. My kids are like…seriously? Oh wow, these look wonderful! I found that butternut squash can actually work well in substitution of mashed bananas! I’ll probably end up adding sliced banana on top for the delicious sweetness, of course! 😉

I am making these as soon as my bananas turn a little! They sound phenomenal! I am going to put blueberries in them too! These will be great to meal prep for breakfasts and snacks! I made these tonight and love them! I don’t have Swerve (never heard of it!) and I didn’t want to use sugar so I subbed applesauce. I added 1/2 cup extra oats to balance out the liquid and it turned out really well. Next time I would add some extra cinnamon. 🙂 I’m definitely looking forward to trying one with a bit of almond butter before my run tomorrow morning! Thanks for the recipe!

I just made this and can’t wait for them to come out of the oven!! However, the recipe was hard to follow because you don’t have the ingredients in the instructions list in the same order from the ingredients list. And you talk about adding almond extract, but didn’t include that in the ingredients list. Just giving you some helpful constructive criticism:)

I just wanted to say thank you for sharing this recipe! My husband and I are trying to make more healthy choices, which is always such a struggle, and these are the perfect thing for me to make at the beginning of the week so that he can have something easy to grab in the morning. I didn’t have any chia seeds on hand when I made the first batch, and if anyone else is wondering, they’ll turned out just fine – but I can’t wait to try them as written!

YUM! I didn’t see any amount for the almond extract in the recipe so I added a little extra vanilla. Also switched out Swerve for coconut sugar and added dark chocolate chips and walnuts – so delicious. Love how quick and easy this recipe is too! Thanks for another good one!
