Hello & Happy Wednesday!
I woke up with good intentions to head to the gym, but I am just way too sore today. I went on a long walk with the dogs this morning instead. Three days in a row of HIIT workouts is a bad idea. I am going to get some things done around the house, finish some blog work, and maybe go for a run or an athletic conditioning class later this evening.
It’s the perfect time to drink coffee and blog about my week. By the way, I’ve been drinking medium/dark roast Sumatra coffee from World Market, and it’s one of the best store-bought roasts I’ve ever had. I am going to get back there soon to grab more.
So today’s project: these frames. I bought all of these frames for $5.00 at a thrift shop. I am going to be using four paint colors to paint “abstract” to match the guest bedroom and keep the frames brown to match the bed and end tables. I’m going BOLD in this room. I usually do simple warm colors, but I want to make the guest bedroom modern and fun. It’ll still be warm and cozy, but there will be more to look at. Let’s go back to Friday.
For breakfast, I had an omelet and an English muffin with jelly on the side. The other half didn’t make it to the plate 🙂 I was super sore from boot camp class, so I decided to head to yoga instead.
Kyle’s roommate is literally “yoga man.” I decided to join him for a power hour hot yoga class. This class is way more than just relaxing and stretching. There is so much strength training and balance involved. I think it’s great to incorporate yoga into rest days. Yoga helps you ground yourself.
I go on Luna’s Living kitchen kicks. I’m in one now and I can’t get enough. It was the perfect vegan meal to have after yoga. I started with the Yo LaMango. It had mango, banana, matcha green tea powder, spinach, hemp milk, and I had them add kale as well. It’s my go-to!
And of course, I ordered my favorite! I had the fire & brimstone burger. It comes with homemade gluten free quinoa-millet veggie burger spiced with chipotle sunflower hummus, onion, cucumber, guacamole and house hot sauce. It’s honestly one of my favorite meals 🙂 I had the rest for dinner on Friday night.
After Luna’s, I headed to The Sunflour Baking Company for a small cappuccino. Love that place 🙂
Later on Friday night, Kyle and I took the dogs out to my parent’s house so they could run around in the backyard. I think it tired them all out…
I headed to the gym early Saturday morning to run on the treadmill, and do some weights. I kept it light.
After the gym on Saturday morning, Meighan, Caitlin and I decided to try out Roots Cafe. It’s a new spot located in Southend, and I highly recommend it. I’ll be adding it to my Charlotte list. The staff were extremely friendly, the coffee was amazing, the food looked so good (I’ll be ordering next time), and the place was so cute inside!

I ordered a small skim cappuccino with an extra shot of espresso. This was the first place where I didn’t need to order the extra shot. Their espresso was rich and carried itself with a strong and bold flavor. It didn’t need one at all 🙂
I can’t wait to try their breakfast next time.
After coffee, the girls and I headed to Ikea and did some other shopping. I picked up a new duvet for the guest bedroom and browsed around their outdoor department. I was so hungry, so I picked up a KIND bar for the trip home. I did a big grocery haul (same as the list from the last recap post) to stock up the fridge.
I decided to try out the SILK almond milk yogurt and I was shocked at how good it was.
I added granola, chia seeds, and had fresh fruit on the side. It was raining the rest of the afternoon, so after I showered off, I plopped on the couch for literally two hours and finished a book.
I had plans with Caitlin and Meighan on Saturday night, so I got myself out of my couch potato mode, got ready and headed to Meighan’s place. It was pouring down rain, but that always happens on days where I actually do my hair.
When I got to Meighan’s, she had a mixed drink ready for me. I took one sip, and I instantly knew it was going to be a wild girl’s night out. It had blended fruit, crystal light, water, and 50% vodka. Holy moly! It was strong but good.
Another place I’ll be adding to my Charlotte list, Sophia’s Lounge. Sophia’s lounge is a new luxurious cocktail bar. It was so chic, vintage, royal-like, and the decor was to die for. We couldn’t stop looking around. The atmosphere was so unique and exactly what Charlotte needed.
We wanted everything on the menu. I’m talking about the food and drinks. I started with the Lolita for my first cocktail. It had campari, cochi Americana, still and sparkling rose, and grapefruit bitters. Perfection.
We were so hungry, so we ordered their impressive charcuterie board and the lamb tartare. The lamb tartare had smoked olive oil, harissa aioli, shaved radish, crispy shallot, and polenta crackers. It was so unique and so full of flavor. it was recommended by our (freaking amazing) waitress, and it did not disappoint.
We were having so much fun and did not want to leave, so we ordered a bottle of wine.
After we had our wine, we agreed on one more drink! Girl’s night was too much fun. I don’t go out often, so when I do, I go all out.
I ordered the YUZU 🙂 The yuzu had yuzu, grapefruit orange bitters, cherry, and mezcal lunazul anejo tequila! I was SO SO SO SO impressed with Sophia’s Lounge. It’s right next to 5Church, and across from The Dandelion Market (which are both on my Charlotte list). Make a reservation and GO!
We all headed to Fuel pizza to split pizza and cookies. Treat yo self. This was such a fun night.
If you’re wondering, yes. I felt it in the morning. I still woke up early, but I was a bit slower than usual…Omelet and sweet potatoes for breakfast 🙂 After breakfast, I headed to Target to get some organizers for the closets, and cleaning products for the power cleaning session. I don’t know why I get so excited about cleaning products, but I do.
Kyle and I headed to the gym Sunday afternoon. I just did a quick run and called it quits. I figured I’d recoup on Monday.
Kyle is obsessed with my enchiladas, so I made them for dinner with a toasted semolina vegetable salad. I was supposed to make pan-seared chicken from the Blue Apron, but we decided to make chicken enchiladas and the side salad instead. A Blue Apron makeover 🙂
I made a couple of the enchiladas with multi-grain flatout wraps, and some in the bell peppers. Recipe Here 🙂
Back to the grind on Monday morning. I headed to a HIIT class, and it kicked my butt! I know I’ve said this before, but the weight training and HIIT classes have changed my life. I used to just focus on cardio, running, cardio, running, and it just wasn’t working for me. I was physically in pain, and mentally unhappy. Since weight lifting, I’ve noticed how much stronger I’ve been, mentally happier, and so excited with all the muscle and strength gains. I’m excited to see where the next month of training brings me 🙂 Don’t get me wrong, I’ll still be running, but just ten miles a week!
When I got home on Monday morning, I prepped some chocolate banana oatmeal muffins! I’ll post the recipe soon:) I love having these healthy muffins before or after a workout.
I also made more egg cups. I love keeping these high protein snacks in my fridge for when I need something quick. I put sweet potato and bell peppers in these. I also mix garlic powder, onion powder, Italian seasoning, and black pepper to the egg mixture.
For lunch, I had egg cups, leftover salad, and strawberries.
I’ve been using my popsicle cups to freeze my Greek yogurt! They make the perfect dessert. For dinner, I had a turkey wrap, a banana oat muffin, and strawberries.
Monday night was dedicated to tea time & The Bachelorette.
I woke up Tuesday morning for another HIIT workout followed by ten minutes of Stairmaster and some extra weight training.
When I got home, I had some chocolate oat mini muffins with peanut butter on top & egg cups 🙂
Dinner: Carrots and hummus, and a turkey & pepper jack cheese wrap with bell pepper, lettuce, and yellow mustard.
I took the boys out to my parent’s house to run last night, and then we cuddled up on the couch before falling asleep! 🙂

YES!!!!!! You just need to become a World Market member (free) and you earn a stamp when you buy their coffee – on Wednesdays I go and buy 2 bags of coffee and that’s 4 points! I LOVE weights, if I could be at my best weight with out cardio I would never run again and be OK but that is just not what works for me so I have to have a balance!
I meal prep every single weekend, between working a full time job, running a side business, planning a wedding, working out and still being social meal prepping is my only saving grace to keep me from hitting up the drive thru for 3 meals a day.
favorite meals in our house depend on who you are asking lol my fiancé is a meat and potatoes guy but not so much me! I am from new Orleans tho so really any good southern cooking is my favorite thing ever!

Well. HIIT workouts have cardio included in them. You don’t necessarily need cardio to lose weight. A lot of people gain beautiful muscle and burn fat by weight lifting alone. My boyfriend never does cardio but stays lean by lifting heavy weights. I think cardio is great, but weight loss is more than that. It’s about mixing up your workouts, relaxing, eating clean foods, treating yourself, relaxing, and not worrying about that number on the scale either. Maybe try some HIIT workouts a couple times a week instead of just focusing on cardio. This is just my opinion though 🙂 Should consult with a doctor!

I definitely lean toward being a ‘cardio queen’ but I mix in a couple days a week of either lifting or body weight circuit training, as well as Pilates and Yoga! I have to keep a balance otherwise, I end up injured and frustrated and not as tone as I would like!

Cardio is something I enjoy and look forward to, but unfortunately it usually makes up my workout. I try to do 15-20 minutes of weight training a few times a week. Those classes are so inspiring. I’ll be looking for a new gym with classes with the move to Raleigh!
A favorite in our house are stuffed peppers and ANY grilling! On Sundays we meal prep tons of chicken, roasted veggies, salads for lunches, and nuts/fruits for snacks during the week. Meal prep CHANGED MY LIFE! It’s so nice to come home after work and already have lunch for the next day and most of dinner ready to go!

2. I am so against meal prep 🙂 One, I hate eating food that’s been prepared more than 1 day ago and two, I don’t like eating the same thing all week. I do prepare my (easy) lunches in the morning and then usually cooks something fresh for dinner. And I try to plan ahead with grocery shopping so I don’t eat out all the time or buy unhealthy food when I go shopping hungry
3. My fave recipe to make is spinach-feta-lasagna. It’s soooo good!

I’m not a cardio junky at all, most cardio is so boring to me (or I’m on doctor’s orders to not do it, such as running). But I know it’s super important for my weight loss journey, so right now my gym schedule consists of three spin classes a week and two days of weights! Spinning is definitely my favorite form of cardio. I suck at motivating myself to go faster or harder, but it helps when someone else is yelling “Did you come here to play or did you come here to sweat?!”
I haven’t been meal prepping lately, but that’s mostly because I live alone and eating the same thing for a week straight got SO boring. But my current job gets me a discount on a meal delivery service, so I’ve been using that!
A favorite recipe at home (which is NOT healthy in the slightest) is… corn pancakes. ☺️ (They’re regular pancakes with creamed corn in them, not like a different kind of potato pancake!) My brother apparently got it from a home ec teacher in middle school, and my mom thought it sounded gross but made them because he begged her, and I don’t think my family has ever eaten pancakes another way. It’s one of the few meals I absolutely HAVE to have when I visit!

Spinning is a GREAT form of cardio. The spin class I go to incorporates weights and I love that addition. Yeah, I go through the boredom phases too.

I love to run races so much! So I spend usually at least once a year to train for a race, a half marathon, 10k, but when I’m not training I love insanity workouts, for sure one of the best but honestly I have fun doing them, and somewhat a hit workout. I used to life 5 days a week but got burnt out on it. I think with exercise it’s important to adjust with your season of life!

I LOVE cardio! Sweating is my way to evacuate all the stress and negative thoughts. I haven’t been running a lot recently and everybody notices that I’m not at my best.
I try to balance with some barre workouts and yoga but nothing, really, helps me as much as cardio does.
Do you meal prep?
I try to do it every weekend, but summer is all about salads, and I prefer to follow inspiration of the day when I make one.
What is a favorite recipe in your house?
My go-to recipe (a family recipe, by the way) is a terrine made with smoked salmon and cottage cheese. It’s an all-time success (one of my friends told me “Do it toa man and he’ll fall in love with you!” – I’m thinking of serving it to my future boyfriend ^^)

I am definitely a CrossFit junky 😛 I try to be balanced and incorporate a few runs here and there but mainly my cardio now a days comes from burpees and the dreaded assault bike (which you should try sometime if you haven’t already- KILLER WORKOUT!)
I meal prep mainly my breakfasts and lunches (plus hubby’s meals) on Sunday and it almost ALWAYS has slow cooker buffalo chicken or carnitas for quick protein options for the week!
And Sophia’s Lounge looks like so much fun!

I am a cardio junkie when it comes to being able to run outside. In my last town I was living in, I always ran around the park, but now where I live, I’m just not quite comfortable enough with the area yet to run outdoors by myself. So now that I have been using my gym membership, I find that I’m more of a weight lifting junkie! I just hate running on the treadmill for long periods of times. When I run outside, I can easily hit 3-4 miles and it seems like on the treadmill I struggle to push through to 2 miles!
I am a sporadic meal prepper, though I really wish I was more consistent because it makes eating healthy so much easier. Definitely need to push myself to be better with it and not get lazy! I find when I meal prep, I make healthier choices because I don’t have to think about what I’m eating, I just know I have health stuff easily available.
My husband and I love stir fry, so I’d say that is the most popular ‘recipe’ in our house, though I don’t usually follow a recipe. I just chop up random veggies and whatever meat we have and then make a sauce with low sodium soy, cornstarch, honey, garlic, and ginger.

I like to think I have a lot of balance in my life. I HATE cardio, but do about 10-15 min a day and spend about 45-60 min lifting weights! I love lifting.
I try to meal prep for the most part, but a lot of recipes I try turn out not so good after a few days. I also HATE reheated chicken. gross. I usually end up eating salads with those pre-seasoned tuna packets for lunch and cooking dinner almost every night. I enjoy cooking, but baking has my heart <3
One of my boyfriend's favorite meals that I cook is this chicken wrap with avocados, chicken, cheese and greek yogurt. toast them on the stove and they are DELISH.
It looks like you had so much fun with your friends! Such a different side of you that I have never seen! I hope you recovered smoothly 🙂

1. I love biking, running & hiking, which are all cardio, but I definitely spend my fair share of time in the weight room. These last few weeks have been pretty cardio heavy, but I remind myself that some working out is better than none.
2. Oh hells yeah. Meal prep is my JAM! I truly don’t know how people work full time & live without meal prepping. Not having to stress about breakfast, lunch & usually dinner not only saves me money, but time too!
3. I’m so bad about not using recipes! I just sort of make things up & hope they taste good. Your enchiladas make me want to make my enchilada pasta though. It’s rotini cooked, and then I add pinto beans, diced tomatoes, enchilada sauce, a bit of cream cheese or milk to make it creamy + corn, peppers & onions! Then I top it with some cheese at the end. It’s my version when I’m too lazy to roll up my enchiladas!

I used to be a cardio junkie, but now I like a good balance of cardio workouts like running, strength workouts like yoga or weights, and HIIT workouts that work the whole body and incorporate strength and cardio into one! I also have days where I don’t want to workout, per se, I just want to move! And for those days, walks with friends are perfect. Also, have you ever used the Nike Training Club? It’s a free app with tons of HIIT workouts! They’re great if you don’t want to be stuck to a class schedule, or can’t make a class one day.
I don’t meal prep anymore because it doesn’t feel intuitive to me anymore. It started to feel too boxy and rigid. I usually plan about 3 meals for the week and grocery shop for those ingredients, then leave the rest up to whatever my taste buds and heart desire! I used to do so much meal prep though, so maybe I just got burnt out.
Lately, my favorite recipe is just my overnight oats! Haha, so boring. But cool, creamy oats are so nice for breakfast in the summer!

Those muffins look SO good! I have phases when I love anything cardio, and times when it’s the last thing on my mind/what I want to do. When I don’t like cardio, I typically focus on strength and yoga and walks. I’ve recently found a walking partner, who lives close by, which makes it so much more fun and motivating! 🙂 It really makes all the difference. (Though I still need walks on my own). I don’t meal prep, and from what I know it definitely has its pros and cons. I think that dicing veggies would be a huge time saver for me, but I don’t think I’d be very successful in portioning my food, etc. We have a teenager in our house, so often all the food is gone before we know it! One of our favorite recipes probably is my kale avocado salad with pomegranate seeds and clementines and radishes!

I am definitely more balanced. If I didn’t switch it up I would get bored, and fast. I’ve had to learn fitness as an adult because it wasn’t something I was interested in when I was younger, and it’s hard enough to stay on top of.
Boredom in fitness leads me to boredom in meal prepping. I can’t eat the same thing everyday for a week. And I’ve heard of doing main proteins and varying sides to choose from, but have yet to try it and see if it works for me. Meal prepping is also difficult because I cook dinner every night for 4 other people in the house that have way different taste preferences than me. So I’m cooking every night whether I prep or not. Consequently, it feels a little redundant.
Favorite recipe in my house is an easy answer: chicken Alfredo. My husband and kids lose it every time I make it. Haha I make it all from scratch using higher quality cream (usually local fom a farmer’s market) and butter (Plugra) and fresh grated Parmesan. And if I’m feeling really good I’ll make dinner rolls from scratch, too.
Side note: I, too, always wake up early after a night of drinking and also get excited about cleaning products! I guess it keeps me excited about cleaning. Haha

I 100% used to be a cardio junkie – all I did was run! Now I’m in LOVE with HIIT classes, yoga, and weight training too. And WOW, I actually have a booty now! It’s fantastic. I still run, but now I actually enjoy working out since I have so much variety.
I meal prep when I’m teaching during the school year, but during the summer I get to be a little more relaxed since I’m home for most meals.
A current favorite right now is our whole wheat pumpkin pancakes, or lemon asparagus orzo. YUM!

HIIT sounds so fun, might give it a try. I am a cardio junkie, lately I have been incorporating more yoga into my week and have noticed some great results! I try to meal prep every week but I am currently getting a new kitchen fitted so eating lots of salads as easy fast to make. My favourite recipe is your granola bars honestly they are fantastic, great for after the gym or a hike! I have decided to take the rest of the week off and go skiing! Hope you have a great week!

I am a cardio junkie! I’m pretty over weight currently and I feel like I need cardio but I go to the gym with my friend who takes me through weight training work outs 🙂
I love to meal prep any type of chicken for the week and eat it in all different ways!!
My boyfriend and I love baked chicken tenders! I want to get an air fryer to make them in!

Hello Taralynn! I love all of your posts. It’s so great you have access to good HIIT classes where you are at. I am most definitely a cardio junkie (just running). I am trying to incorporate more strength sessions into my running schedule which is about 15-20 miles a week. Do you have any suggestions? Have you noticed a difference in your overall body composition from cutting back on running and focusing more on strength? Also last question kinda random: What is it like to live alone and do you have any pointers for living alone? I just signed my first lease by myself and and terrified/excited. Any decorating tips or social/mental health tips would be appreciated! Please never stop writing, you are so fun and inspirational to keep up with <3

If you slowly add them every day, you’ll start to love them.
I feel mentally better. I feel physically better. I am way more “tighter” in places, my butt and thighs are actually getting bigger, but all muscle. It can actually take a while before you start burning fat and catching up with the muscle building. I’ve read a lot of articles on this and sometimes the weight gain takes time for the body to adjust. This is why so many people quit doing strength training. It’s important to stay off the scale and stay in it for the long run! It feels as if I’m bulking right now, but I’m just retaining a lot of water and gaining muscle. My body is going through a transition 🙂 I’m excited to see where I’m at in six months.
Living alone. LOVE IT 🙂 You can decorate any way you want, do whatever you want, and watch whatever you wanna watch! Invest in a top of the line security system to make you feel safe. I spend more on security than I do on cable + internet + utilities combined. You’ll feel better. I also have my boyfriend over on the weekends, so I’m not always alone. Get in a routine 🙂 Do you have any pets? They are always good company too!! You’ll find that you’ll be getting so much done alone and your place will always be clean (if you want it that way)!

Good morning! Love seeing your simple but healthy food! Way to kill it with your gym workouts!
1) I used to only run here and there until I joined a gym and got a trainer a few years ago. Now, I love the balance! I switch between lifting, running, yoga, and random classes such as Orange Theory thrown in. In the winter when the weather is bad I’ll do some Youtube videos at home as well. I’m so glad to have this balance, my body is thanking me! Early this year I was lifting a lot during the week and the scale went up and my clothes were tighter, but I had to remind myself that it’s GOOD since it’s muscle.
2) I don’t prep for the week, maybe for like 2 days or something. I get bored with meals so I need to switch it up a lot, lol.
3) Favorite meals change a lot, but currently it’s actually a recipe from Chrissy Teigen’s “Cravings” cookbook. She has a thai recipe for Basil Chicken in there and it’s SO GOOD and easy! Thai chicken, basil, jasmine rice, and then we usually steam some broccoli to go with it. Yum!

How much time do you spend on your HIT workouts? The reason I can’t straw away from running all the time is because I’m so busy and it seems to be the quickest, most effective workout. But my legs are starting to get heavy and I clearly need to cut back on the cardio. I need weight lifting in my life but don’t have an hour to put into working out. Can you get a good weight lifting session in a 30 min – 45 minute window?? Im a full time grad student + work 30 hours a week so staying fit is a struggle.

Some of the HIIT workouts I do are 45 minutes and some are 90 minutes! It depends if you do them yourself or go to a class. You can get SO MUCH out of a 30 minute HIIT workout! You many not burn as many calories during that period, but by building muscle you’ll be burning more calories all day long! You’ll see more results with 30 minutes of HIIT rather than 30 minutes of running! & you definitely get the heart rate going! My friend Meighan does HIIT workouts five times a week and works monday-friday 8 am-5pm! She does them in the morning or night class! She said they give her more energy, you just have to adjust!

What I would dooo to eat at Luna’s! It always looks so darn delish. I’m trying to convince my hubby that Charlotte could be our next move- so much yummy foooood (and coffee). & that looked like the quintessential girls night! How fun! – Ugh bring on the guilt trip! I’m such a cardio junky! I do mix in Insanity a couple times a week, but I always go to a run for a standard workout. BUT I do carry up my groceries (including the milk gallons)- so that’s strength training, right?!
– I do try to meal prep, but I’m such a creature of cravings. And I never know what will sound good, ya know?! I can’t tell ya how many times I have a fridge full of groceries, and stilll go out to get sushi. SMH.

1. I used to be a cardio junky!!! Within the last year or so I started to incorporate more weights than I had in the past. BEST decision I ever made. I do a pump class (weight lifting) 2-3 times per week and I am seeing definition in places I have never seen before! I’m still doing cardio but weight lifting has changed my life (and mind) like you mentioned.
2. I do meal prep. I work 12 hour shifts so it is a must. I usually meal prep on Sundays!! I also find that when I don’t meal prep I eat less healthy. I tend to just grab whatever to eat because its easy.
3. Favorite recipe in my house right now is burrito bowls! They are so easy and you can add so many different things to them. I love them!! Also, lasagna. Because who doesn’t love lasagna? Such a comfort food!!

Love body pump class! I feel the same way as you when it comes to fitness! It’s been two months since sticking to these classes and I can feel a huge difference in my muscles and strength.
SAME AGAIN! Even working from home, I’ll eat unhealthier if I don’t have healthy options prepared.
