I miss being able to brag about the weather. I have no idea what happened, but it’s been so chilly here. It’s making me feel less bad about staying inside today, so I guess it’s a blessing.
I’m trying my hardest to eat super clean and fuel up on healthy protein and vegetables. I rarely add greens to my breakfasts, so today I added cooked kale and brussels sprouts.
I cooked the kale and brussels sprouts on the stovetop with cooking spray, onion powder, garlic powder, and black pepper. For the eggs, I scrambled five egg whites together. I also had a cup of nonfat Greek yogurt while cooking!
It’s day five of the fitness challenge, and I’m feeling the pain today. After this post, I’m heading out on my walk. I loved today’s circuit because it wasn’t high impact. It was relaxing, and I followed it up with a nice stretch. The circuit workout only took about 25 minutes.
Workouts that you can do in your living room are the best. You don’t have to waste time driving anywhere, and it’s hard to make excuses not to do them.
After my circuit, I took a bubble bath with muscle pain relieving bath salts.
Now that I have my coffee, it’s time to talk all about my week.
I didn’t have an easy week. I tried to do as many fun things as possible, but I was so stressed out. Both dogs were sick, which made me sick. But no worries, they are both doing much better! I’m praying for a relaxing and stress-free week. Going in and out of vet offices is no fun.
Last week, I was on a lettuce wrap kick for lunches. They are quick, low carb, and high protein. This one had Applegate turkey slices, Applegate bacon, gouda, yellow mustard, and iceberg lettuce.
I had a long run planned on Tuesday because I had a crummy run week with the dogs being sick.
I dread the neighborhood run because of the hills, but I know I need to run them more because of my upcoming half marathon. The route is going to be hilly, and I want to be ready. My goal for the half is to finish. I don’t care about my time, and I don’t care if my miles end up being 11-minute ones. I just want to be able to say I ran the entire 13.1 miles. For me, having the endurance is more important than being fast.
I ended up being very proud of this run. It felt so good, and it reassured me that I could do this. I have to thank my running partner, Meighan, for inspiring me with a long “YOU CAN DO IT” text message. I had so much stress built up from the week, so I think that is what pushed me during this run. Exercise is such a great outlet, and it’s much cheaper than therapy 😉
My mom and I took the pups for a small walk when I got back. My mom came over to watch movies with me Tuesday night, and she kept an eye on the pups while I was out on my run.
I made a protein shake for dinner. It had 2 scoops vanilla protein powder, 1 frozen banana, 1 cup unsweetened almond milk, and 1/2 cup water. I also had Greek yogurt and a peanut butter waffle later in the night because I was so hungry.
Post-run bath with my muscle pain relieving bath salts. 🙂
My mom and I went out for a long walk after coffee on Wednesday morning, and then I made us some protein shakes for breakfast. She’s obsessed with my protein shakes and always asks me to make them.
After my mom had taken off, I started working on the new fitness challenge! My lunch was pretty much a protein plate. It had scrambled eggs and ground turkey.
Sleepy boys! Poor Grumples was NOT feeling well.
I found a new iced coffee to try at the grocery store while I was picking up healthy eats for the challenge. It was good, but not as strong as I usually like my coffee.
For dinner, I made roasted brussels sprouts, carrots, and ground turkey. They were seasoned with sea salt, garlic powder, onion powder, black pepper, and olive oil.
I headed out to run errands on Friday. It looked like fall outside.
I decided to pick up some flowers and pots for my garden! I wasn’t going to plant anything until Saturday because it was going to drop down to 32 degrees on Friday night.
After running errands, I had a late breakfast. I used some of the leftover ground turkey in my omelet with sweet potatoes and spinach.
I had coffee and fresh fruit on the side.
I met up with Becca at the gym, and we did day one and day two of the challenge’s circuits.
I picked up Chopt for dinner. My salad had chickpea falafel, grilled chicken, cucumber, tricolor quinoa, kale, arugula, romaine, and goat cheese.
Kyle came over on Friday night so we could watch Dateline 🙂 It’s our favorite thing to do on Friday nights.
Saturday morning cuddles.
These are the Vogue cups I found at last week’s estate sale! I’m obsessed. I was supposed to go to some estate sales over the weekend, but I wanted to stick around with Grumples since he was still sick.
My shake had blueberries, banana, almond milk, ice, spinach, and vanilla protein powder.
I decided to plant all of the flowers while Kyle was at the gym.
I will most likely become a crazy flower lady by the end of the summer.
I need to make my wreath, add the new glass door, and paint the porch next, but I am so happy with the progress I’ve made. I think it looks so much better 🙂
After working outside for a bit, I made lunch and got ready for my long run with Meighan.
I had some leftover protein shake from breakfast and leftover Chopt.
We decided to drive all the way to Waxhaw for our run. We wanted a new scenery and hills. We didn’t really WANT hills, but we needed them.
I was so so so so proud of our run. I had a cramp at mile four but pushed through it, and eventually, it went away. This route was so hilly, and it was exactly what we needed for training. I don’t think this will be the last time we run in Waxhaw. We ran the back country roads, and it was lined with gorgeous old southern homes. I was too focused on the beauty of it all to pay too much attention to the difficulty of the course.
And you can’t go to Waxhaw without stopping at the creamery. Meighan and I split coffee ice cream on the way home!
I picked up peanut butter cup for Kyle and a couple flavors for my parents.
Kyle and I made a Blue Apron, an awesome meal kit delivery service, on Saturday night. IT WAS SO GOOD, but I’ll post that Thursday with all of our other Blue Apron meals.
Sunday morning breakfast: Gluten-free blueberry waffle with peanut butter, Applegate bacon, and scrambled eggs!
Becca and I went to get coffee on Sunday morning at Amelie’s French Bakery in Rock Hill. It had been so long since we’ve had coffee there.
I had the latte with an extra shot of espresso
Later in the day, we grabbed lunch at Zoe’s kitchen. I had their tossed Greek salad.
And then we did some shopping 🙂
When I got back from hanging out with Becca, Kyle and I went for a walk around uptown. I was feeling so stress-free because Grumples was feeling better 🙂 We made another Blue Apron, and then watched the O.J. Simpson documentary.
I ended the night with popcorn and puppy cuddles!
Kyle’s mom sent me this quote for half marathon inspiration this morning, and I had to share it with you all!

I also love hiking and playing tennis. Alaska’s summers are gorgeous and I love spending as much time as possible outside, especially because the sun is out for so long! Good idea! I’ll have to look into that this summer. Getting my racket redone makes more sense than getting a new one, because everything else is still perfectly fine, the grip is just coming undone.

Your posts are so motivating! I’ve decided that once it’s warm enough to actually breath outside (which should be soon) I am going to start running. I envy people who make it look easy! But I’m dedicated to making it happen.
My favorite outdoor activity is just walking and hiking with my dog. Her curiousity for the world just makes it so much more enjoyable.

Can I just say, I’ve been training for the Chicago Shamrock Shuffle which will be my first 8K. Runs have been alright, but today was a particularly stressful day and when I got home from the office I did not feel like running. I sat down to blog and read your newest post – and then I saw the title “Running is Cheaper than Therapy”. I closed my laptop and went for a quick few miles before I even read the post. Totally right- Its unseasonably warm outside and it felt amazing. Thanks for the inspiration today (and most days!!) <3

I WAS TOO! I did NOT like her the first couple of weeks but grew to LOVE her as the time went on. I love that she gives zero cares and does anything she wants! I don’t think him and Vanessa will work out. She seems more in tuned with what she wants. PLUS HE WILL NOT MOVE TO CANADA! I can’t blame him, though. #proudamerican His best bet would be Raven, if he chooses any of them.

I love to hike especially locally. (Crowder’s Mountain, etc.) I’m a gardener.. like I mentioned just a bit ago. I can easily spend 6-8 hours outside on a Saturday come Spring and Summer and not even think about working out on the weekend. BECAUSE THAT IS A WORKOUT. I love working in my yards and gardens. I get it honest. (from my Mama)
I plan on going to South Carolina’s own National Park – Congaree this Spring or Summer. (I think people forget we have a National Park or don’t even realize we have one to begin with) Going camping for the weekend there. I’m a total National Park geek. We have some day trips to go hike to some waterfalls in North Carolina as well. Lots of fun outdoor weekends planned. I love the Carolina’s… and the Southeast in general. WE HAVE SO MUCH TO DO AND GREAT PLACES TO SEE.
I don’t watch The Bachelor. I’m like the only chick who doesn’t watch. LOL! My TV stays on HGTV, Food Network & DIY only. Heehee. But I do dig Dateline when I remember to watch it.

And your runs look like they’re going amazingly well — you will definitely be ready for that half marathon. 🙂 And I agree–running is one of the best (and one of the cheapest) kinds of therapy — I’m always so thankful that God gave us the ability to run!
Running is definitely a favorite outdoor activity, but I also love hiking/camping and riding horses. However, with living in town, running happens much more often than the other hobbies do.
In a couple of weekends, my hubby and I get to road trip down to Denver to hang out with family! His brother and our sister-in-law live down there, and then another brother and sister-and-law are flying in for the weekend, so it’s going to be a grand Robinson reunion in the West. I’m sure tons of laughter and sarcasm will be involved.
Nope, no Bachelor (or a TV!) for me.

I have a running question for you if you don’t mind. How do you stay hydrated on your long runs? I noticed that you don’t have a hydration belt on, so I was wondering how you drank during your runs. I’m also training for a half marathon (5 weeks to go!!!) and aside from stopping at my car every few miles to get a drink, I haven’t been able to figure out a good way to stay hydrated. I’m looking into a hydration belt, but I’ve found them to sometimes be a little big and clunky to actually use.

Luckily I don’t really get thirsty. I never really sweat until the end of the workout either, which is kind of strange. BUT, I stay super hydrated before my run and days leading up to the run. If my run is longer than an hour, I make sure to bring energy chews. You should try drinking potassium or electrolyte drinks before your run to help with levels. I love having bananas and coconut water before long runs!

My favorite outdoor activity is probably running. I’m lucky to live in a place between mountains and sea, so I have an amazing view everytime I go running. Spring is already here and I’m not very far from the beach, so I think I’ll have a picnic soon : friends, food, and sunny weather is a must for me!
I don’t watch The Bachelor (I’m currently trying to read more and spend less time on TV shows).
And, I really love your food pics, it always makes me hungry ^^

1. I love hiking. But my FAVORITE thing in the summer is to skip dinner, grab 2 scoops of my favorite ice cream with a friend, or the Mr and head to a nearby park and walk around. The loop there is 5 miles, so I don’t feel bad about the ice cream at all.
2. So much craziness coming up. This weekend I am meeting up with a long lost aunt for dinner. She reached out to me and I found out she only lives 2 hours away, so we’re going to meet in the middle for dinner. It’s been 15+ years since we’ve seen each other. Which is kind of wild.
3. No Bachelor for me. Never watched it, and am really bad at watching TV live, I always forget that it’s on ’til it’s like halfway through a program.
A quote I love is “Life’s battles don’t always go to the faster or stronger man, but sooner or later the man who wins is the man who thinks he can.” It reminds me that the mental strength and confidence is half the battle!

2. I am going out of town for a bridal shower this weekend! I fly often and I like to bring my own food when I visit people (to be a courteous guest and to plenty have healthy options). Most times I am unable to stop at a grocery store when I get to my destination, and I can only bring what I can pack. This limits me to dry goods and non-perishable items. Most often I pack granola bars and protein bars. Do you have any recommendations of healthy foods I can pack on my carry on? Or a blog post you can direct me to?
3. I do not watch the bachelor but I’ve heard plenty of spoilers!

Thank you so much! That means a lot to me 🙂 & I’m also so happy the dogs are doing better. It’s so scary not knowing what is going on and we still do not know what had happened. We are thinking virus since they both had it. I even dumped out their expensive dog food and bought all new bags just in case it was the food! I was so worried!

So cool you travel often and I hope you have so much fun at the bridal shower. I love your dedication for bringing your own food! I think making a big batch of homemade trail mix is great, quest/no cow bars, apples, oranges, peanut butter packets, or other little foods that fit in your bag and wont make a mess!

If you ever end up going back towards Waxhaw, you MUST check out the Southern Olive on 521 in Indian Land! From the outside, it looks like an olive oil store (and it is…) BUT the owner is gluten free, and they have a TON of gluten free goodies!! I splurged and got the black cherry cheesecake bar, and it was to DIE for!!! They also have coffee and tea! I haven’t tried their coffee yet, but I’ve heard it’s so good! They get a new roast every week in small batches so it’s always fresh! It’s a gluten free hidden gem!

I love walking on super nice days, getting all the fresh air and exercise in!
No weekend adventures for me this week. The temp keeps dropping and it will be low 30’s over the weekend so I don’t plan on doing much! haha maybe trying some vanilla bean frosted ricotta cookies

I couldn’t have said that in the past and it just goes to show that things eventually fall into place. Never settle on the “ok” things. Kyle is one of the kindest and sweetest people I know and I have learned so much from him. I feel so lucky.

Love walking outside when the weather is perfect! Walking the huge trail by the river is my favorite. My husband and I just bought our first house, so I cannot wait until summer. House has a big fenced in garden in the backyard, cant wait to fill it up!
Do you have any weekend adventures coming up?
We have two friends, one from Georgia and one from South Carolina coming up to visit us here in Wisconsin this weekend and into next week. We are supposed to get a big snowstorm on Monday…. they are both really looking forward to experiencing that, haha…
