I have been obsessed with Blue Apron since trying it out for the first time last summer. Every month, I go through the online delivery schedule and pick out the boxes I want delivered. There is no commitment whatsoever and you can choose from all kinds of plans. I’m going to start trying out their vegetarian options next. I usually do about one box a month. I also have my parents hooked on the boxes and they get one each week. My mom always sends me photos of their meals and lets me know how she likes them.
I know I am one person, but I find that ordering the box for two is so convenient. I prepare all the meals in one day and then package them up in containers so I can eat them throughout the week. It saves so much time and it’s super fun to have a glass of wine, play some music and cook away.
I decided to spend Friday night blasting Taylor Swift with a glass of wine and food prepping with my Blue Apron! Food prepping is so much easier with Blue Apron because I don’t have to go to the grocery store or choose what I’m going to make.
The first meal I made was the Hoisin Shiitake Burgers. The fun thing about Blue Apron is that you don’t have to follow their directions to a tee (I mean you should) but it’s kind of fun to put your own spin on it as well. Instead of topping the burgers with the sauce and added veggies, I decided to add them all into the burger before cooking. It made it easier for food prepping. Also, I decided to brave it out and add the mushrooms!
The recipes come with cards so you can easily follow them.
I added some oil to the pan and then cooked up the burgers.
Even with changing up the directions a bit, they turned out perfectly! They were moist and filled with flavor. I ended up crumbling the burger on a salad for dinner. The sweet potatoes were delicious as well.
The next recipe I made was the Sumac-Spiced Salmon & Labneh with freekeh, kale and almond salad. I love how Blue Apron introduces me to new foods every time I try out a box. I had never heard of freekeh before! Maybe I was living under a rock?
This is the meal that my mom called me raving about (we had the same box delivered) she was obsessed with the salmon and couldn’t get enough freekeh. She ended up going on a freekeh hunt at the grocery store the next night.
This dish was super easy to make and I will definitely be recreating it again. I loved the addition of the dates and almonds in the freekeh. It had such a unique flavor and texture. I had never thought of adding cooked kale to a rice type dish, but I’m excited to start doing that.
I put all my meals in a food prepping container to heat up throughout the week!
The last dish that I made was the Provencal Chicken & Potato Stew. This meal was so warm and flavorful. It fit in perfectly with our chilly weekend. The garlic toast was the perfect touch and it was even better the next day!

I love Blue Apron! I started my subscription after you posted about it, and get about a box a month (sometimes more often when I can’t choose from all of the delicious recipes)! I’ve discovered that BlueApron also comes in VERY handy when moving, so that your not left moving or throwing away lots of ingredient, since it come all exactly portioned!
I always follow the instructions to a T, but I like that you changed yours up a bit! Maybe next time I’ll try a spin of my own!

I’m the same way! Sometimes if you switch to vegetarian you get more options to choose from and that is so fun 🙂 They turn out great when you follow them, but its fun to change things up now and then!

Your Valentine’s Blue Apron dinner post convinced me to try Blue Apron. We are 7 weeks in an absolutely love it! At first it was hard because my hubby and I are cooking the meals together and, well, we do things differently. But now we got it down and it is just an amazing harmony in the kitchen. The food is delicious! We are trying foods we never heard of (like freekah), I’m eating mushrooms (used to hate them), I ate beets (still hate them, but I tried), I post fancy pics on Instagram of each meal, and really I could go on and on. I have never used my kitchen more; the only drawback is having to clean after ever meal, haha. Thank you for the recommendation! I am definitely spreading the word.

Omg that Provençal Chicken & Potato Stew looks delicious! I wish it was cold enough here in California to make it! It would have been wonderful last week when I was in Monument valley and it was 38 degrees!!
