That’s a tough one. I’d have to say September 13th. Becuase it’s not too hot and not too cold. All you need is a light jacket.
If you’re wondering where you’ve sorta heard that from…Miss Congeniality (or just so you don’t think I’m weirder than usual).
When I walked outside this morning, I had the instant goosebumps. I had to run back inside and grab a light jacket. It was 61 degrees and that may not seem cold to some of you, but compared to the upper 90 degree weather we’ve been having, it was chilly. My body isn’t used to it yet, but I’m loving every second of it. Soon, I’ll be transitioning to jeans, leggings, and scarves full-time.
The air conditioner was officially shut off this morning, and the windows have returned to open duty!
Last night, I skipped the nap and went over to a friends to sit around the fire. I came home smelling like a bonfire and it put me in a great mood. Now, you’re probably sick of me talking about fall, but I can’t help it; I’m just so ready for it!
Pumpkin, Plaid, Bon Fires, Booties, Scarves, Leaves, and Football…Oh My!
After church this morning, (and yes, I wore my new flannel dress…without the tights) I made some flour-less banana egg protein pancakes with blueberries. I make the banana-egg pancakes a lot, but sometimes I like to add a little extra protein powder for a vanilla flavor and a fluffier cake.
This pancake had: 2 tablespoons vanilla protein powder (use your favorite), 1 whole egg, 3 egg whites, 1 large extra-ripe banana, and 1/2 cup blueberries.
Mash and stir all ingredients together (minus the blueberries).
I heated a pan to medium and sprayed it with a little cooking spray. I poured about 1/4 of the batter into the pan and sprinkled it with blueberries. I just cooked it up like a normal pancake.
This recipe makes five, 1/4 cup sized pancakes.
I made one of the pancakes 1/2 cup in size.

Nutrition Per pancake (depends on type of protein powder used)
FOR ONE: 76 Calories, 6 Grams Carbs, 2 Grams Fat, 6 Grams Protein, 3 g Fiber, 4g NATURAL sugar.
And if you plan on eating ALL THE PANCAKES for breakfast (like me)
FOR FIVE: 380 Calories, 30 g Carbs, 10 g Fat, 30 g Protein, 15 g Fiber, 20 g NATURAL sugar.
That’s an awesome breakfast to kickstart your day!

I was good friends with her daughter and I used to love going through all her pottery! She’s extremely talented! She made these for me about four years ago and they game in different colors with matching dipping bowls.

Those pancakes look amazing, and I am so with you on being excited for Fall. It took me a while to get in the Fall spirit, but now I am so ready! There is just something about the leaves changing, the smells and food, comfy clothing, and being with friends/family… it just makes me so happy! I also love that plaid dress you are wearing, it looks so cute with those leggings and booties! 🙂

The weather is perfect in Michigan today, 65 degrees and sunny! I lit my pumpkin candle and opened the window while studying today… I am so ready for fall!!

Mmmm protein pancakes are my fav!!! Flannel dresses are so cute! I need to add some to my wardrobe, but I am always in scrubs these days so I feel silly buying a bunch of clothes. It is beginning to look like fall outside now- yay for changing leaves!

If you’re trying to cut down on carbs, you can also make the pancakes with protein powder, one whole egg and one egg white + 2 tbsp chia seeds and a bit of water or almond milk.
That’s how I make them, with cinnamon roll protein powder, and they’re AMAZING 🙂
