The best way to use up all of your vegetables in the fridge before they go bad is to make meals that require lots and lots of vegetables like, stir-fry. I tend to buy a lot more produce in the summertime because of how fresh and inexpensive it is. There are so many farmers markets down in he Carolinas that I love going to. There is a new one up by my house that has walking trails aligned with berry trees. That farmer’s market has the best bell peppers I have ever seen and I picked a few up a couple days ago.
If you’re living in Charlotte, the Charlotte Regional Farmer’s market is like a shopping mall filled with fruits and vegetables. It’s huge and there isn’t anything you won’t find. Their wine selection is fabulous as well.
With all the vegetables in my house from visiting the farmer’s market, I made stir-fry. I was just saying the other day in a previous post that I hadn’t made stir fry in a long time and now I’ve made it twice this month. I’ve never made a kielbasa stir-fry before and I was pretty impressed with how it turned out. Kielbasa has a pretty strong flavor and so you don’t need much of it in the stir fry, especially if you cook the vegetables in the kielbasa and olive oil grease.
First you’ll need to heat a frying pan on medium-high, slice the kielbasa up, and add it to the frying pan with 1/4 cup of olive oil. After the Kielbasa is lightly brown, remove it from the pan. Add all the vegetables (sliced bell peppers, carrots, onions, and whatever veggies you’d like) and let them sauté in the the leftover juice from the kielbasa. After the vegetables are sautéed, add the kielbasa back into the pan. Sprinkle a little salt and pepper over the top and bam, you’re done! The flavor of the kielbasa really comes out in the vegetables and so you really don’t need any spices! Maybe add a little pepper! I ate mine on a bed of rice with a huge salad.

I’ve never had kielbasa but I love making a stir-fry with chicken, mushrooms, carrots, and snow peas and serving it over brown rice! Such a great way to get in lots of veggies and so delicious, too.

Haha I had to check what kielbasa is because I never heard that in English than I realized it’s actually something we have here in Hungary called ‘kolbász’, really traditional Eastern European! Never thought about using it in a stir fry, but I assume it would give it a unique flavor indeed!
