Yesterday was my workout rest day. Of course, I still stayed active and played basketball, went for a long walk, but I stayed away from running, or anything else extremely active. I have to remind myself that my muscles need time to heal in order to perform correctly.
I was in the mood for pizza, but didn’t want to feel like crap after eating it without working out. I usually don’t mind a slice of pizza on a running day or workout day. I didn’t have anything in the house to make crust anyways and there was no way this lazy pajama girl was getting in the car to get ingredients.
I knew I had pizza sauce leftover, and I was going to make tortilla pizzas! The only problem is that they don’t fill me up. I usually have to eat 2 or 3 of them and by that time, eating actual pizza would have made more sense.
Luckily I stopped at Earth Fare a couple of days ago and bought zucchinis and peppers. I was going to make my roasted vegetables, but I can always replace them. Pepper and zucchini pizzas are freaking delicious, guilt free, and incredibly filling! Plus they are so easy to make and quick!
All you need: bell peppers, zucchinis, your choice of shredded cheese, your favorite pizza sauce, parmesan, olive oil, and garlic powder!
Preheat the oven to 400 degrees.
Slice bell peppers, throw them in a pot of boiling water, and boil them for 5-7 minutes. They’ll be slightly wrinkly and soft.
Add bell peppers to a greased baking sheet.
Lightly coat peppers with olive oil.
Sprinkle them with parmesan and garlic powder.
Add pizza sauce and shredded cheese!
Bake 15-20 minutes or until crisp!
Slice the zucchini as thin as you can! That way it’ll be more crisp.
Add zucchini to a greased baking sheet.
Spread olive oil and sauce over the zucchinis.
Sprinkle parmesan, cheese, garlic powder.
Bake 15-20 minutes or until crisp!
While the pizzas are in the oven, prepare your side dish! I chose to make a salad, another filling and nutritious food.
Salad Dressing:1/4 cup olive oil, 1/8 cup Balsamic Vinegar of Modena, 3 tablespoons honey, 1/2 tablespoon garlic powder, pink of sea salt, 1 teaspoon of italian seasonings
This salad had roma tomatoes, crumbled mozzarella cheese, tortilla strips, italian lettuce blend, avocado, and my homemade dressing.
The pizzas came out perfectly and definitely hit the spot!
Next time I make these, I’m going to add pineapple and Canadian bacon!

Those look yummy! My favorite healthy swap: Instead of eating a regular brownie, I just stick the Quest chocolate brownie flavor in the microwave for about 30 seconds. It tastes just like a warm, soft brownie! Delish!

These look so good! Lately I’ve been hooked on the cauliflower pizza/cheese sticks. It’s so much more filling to use veggies instead of bread, and you feel so much better too!

My favorite way to make a quick pizza is to use an English muffin! Mini whole wheat English muffin pizzas keep me full for a surprisingly long time 🙂

I am not a huge fan of zucchini, but this looks pretty good.
I also want to try making it into actual crust. Have you seen that on Pinterest? I think I’d start with half whole-wheat flour and half zucchini crust, but it’d still be way healthier!

If you squeeze spaghetti squash through a dish cloth to drain all the liquid and mix it with a little egg white and bake it until its crunchy it makes an amazing crust!
