On New Year’s Day, dinner was all up to Nick and I. We decided to make our favorites: sweet potato fries, grilled chicken, baked salmon, baked spaghetti squash marinara, sweet sesame green beans, fresh salad, and roasted red potatoes.
I haven’t had salmon in a long time. I think I ate it so much that I grew tired from it. Now, I’ll be back on a salmon kick. Publix didn’t have a large salmon filet, so we had to buy individual ones. Apparently others were thinking salmon for dinner as well.
I marinated the salmon in olive oil, soy sauce, juice from 1/2 lime, garlic and herb seasoning, brown sugar, spinach, and sesame seeds. After preparing the salmon, I baked it in the oven for 20 minutes. All ovens cook differently so pay attention to the salmon. Overcooked salmon isn’t my favorite and that’s why I don’t like smoked or grilled salmon.
Another dish we made was spaghetti squash marinara. This was Ralph’s first time having spaghetti squash and I’m pretty sure we convinced him to use it in some of his recipes from now on. He put it in his omelet like I do the following morning and sent me a picture. I was pretty proud.
We baked the squash with Ralph’s homemade sauce, and topped it with mozzarella cheese.
We also cooked the sweet sesame green beans and sweet potato fries.
Nick seasoned and grilled the chicken in brown sugar, garlic and peanut oil. The roasted red potato recipe can be found right here!
Everything turned out pretty good, and it was a nice healthy start to the New Year!

Anyway, to the question. How do you cook your spaghetti squash? 2 years of eating healthy and I have only tried it once and I didn’t make it. Spaghetti squash seems like such a large intimidating vegetable,lol.
