I love using dinner leftovers in my breakfast. Eggs are good sweet or savory, so whenever I have dinner leftovers, I throw them into a scramble or omelet. I do that a lot and that’s why I never get sick of eggs. Last night, I made crockpot wings, zucchini, and baked potatoes. I’ll post the recipe later today. I used the leftover potatoes in the egg scramble today.
-Whisk together 5 large eggs and 1/4 cup of milk.
-Add the eggs to a greased frying pan on medium heat and scramble.
-Heat potatoes up and add them to the scramble.
-Add about 1/2 teaspoon of garlic powder, and remove the eggs and potatoes from the heat.
I paired the eggs with 2 slices of whole grain toast and Applegate chicken apple breakfast sausage links. If you haven’t tried the Applegate brand, you’re missing out.
While I was cooking, I had a little entertainment. Grumples was all over diving for tennis balls and bubbles.
He likes to hide the tennis ball in the couch or just sit with it in his mouth for a long time.
Sometimes he likes to see what I’m making on the other side of he counter. I know it’s probably a “bad owner” thing to let him do that, but he’s way too cute to get upset. I’m lucky he doesn’t shed.
He loves when I blow bubbles at him.
It’s crazy how obsessed I am with my dog. I know it’s weird.

Grumples is absolutely adorable! My boyfriend and I have a beagle and rottweiler and I so want another puppy but I will just stick to “awwing” over your pup instead 🙂

I just made an egg white omelet this morn with spinach and mini peppers 🙂 but i also had some leftover ground turkey from turkey taco night! YUM 🙂 eggs are da bomb! And its totally cool to be obsessed with your dog. But I am a dog owner too…so I understand.

I make my own salsa which I guess is more like a pica de gallo but when I have lots of leftovers I mix it into my scrambled eggs and it’s delish with a side of avocado 🙂

This may not be everyone’s cup of tea….but when I have leftover baked salmon from the previous night, I love to break it up into small chunks and add it to my scrambled eggs in the morning. I was hesitant to try it at first but it’s actually delicious!

I can’t wait for the potatoes recipe! My boyfriend and I love those kind of potatoes! And don’t feel bad, I talk to my dog in a baby voice all day because that’s what he likes. Dogs are spoiled, but worth it.
