Yesterday after getting some work done in the morning, Emilee and I went out to run some errands. Of course when girls run errands, they make unnecessary pit stops for coffee, clothes shopping, and lunch. We did all of that. I was only supposed to grab peanut butter, kale and rice cakes from Whole Foods, but that all turned into more.
I like cuddling up on rainy days, but I also enjoy going out in the rain. It’s the mood of the storm that puts me at ease.
I really did not need to go shopping, but no one really NEEDS to, we just want to because we can. There is a new outlet mall in Charlotte, and I have been wanting to go, so Emilee and I decided to explore a little.
I bought some new jewelry, only because I never turn down an elephant, new shorts and a couple of tops.
After running the UNNECESSARY errands, we ran our planned errands to Whole Foods. (after grabbing lunch next door at CAFE MONTE)
I’m one of those people that always finds something to buy at the checkout. I’m a sucker for cute packaging. At least Whole Foods puts healthier options up there. I’ve been obsessed with these fruit leathers for a long time. Sometimes I make my own.
After leaving Whole Foods, the sun decided to come out.
I picked up several cold brew iced coffees to bring home. Whole Foods has a pretty good selection.
I also love the local magazines on the shelf. It’s always nice to know whats going on in the community. Plus, it’s great for my new website (which you should check out) Young in Charlotte.
When I got home, before getting back to work, I made an iced coffee drink.
The only downfall is that the Larry’s cold brew is expensive for the amount you actually get, but still tasty.
Later in the evening while watching Dirty Dancing, I decided to bake some kale chips! Kale chips are super fast and easy to make.
Kale is EXTREMELY good for you. This saturday during the football games, I am going to make tons of kale chips (for me and whoever wants them) and other healthy snacks!
-Preheat the oven to 350 degrees.
-In a large mixing bowl massage kale for about 4 minutes with 2-3 tablespoons of olive oil.
-Add whatever flavors you’d like! I used parmesan and garlic! (4 tablespoons parmesan & 1 tsp of garlic powder)
-Place kale chips on a baking sheet.
Bake for 15-20 minutes or until the kale is complete crisp. I like to leave the kale in the oven after I turn it off to make it extra crispy. I store the leftover chips in a plastic baggy out on the counter. The kale stays crisp and lasts several days.

Yes, the checkout snacks are so tempting especially at Wholefoods! The packaging always gets me too, with all the nutritional benefits and health claims haha. I usually buy my kale chips but I just bought a dehydrator, so I will try this soon 🙂

Ok, so this kale chip recipe looks amazing! I usually buy the kale chips that are sold in the front of TJ Maxx by the check out line..but I think I am going to have to start making my own!

Such a cute necklace! Fruit leathers bring me back to my childhood. Every summer I go to Big Bear with my family and grab one from the grocery store when we go shopping. I don’t think you can grow out of them.

Such cute stuff! Just an FYI cold brew is concentrated, so it’s supposed to be diluted. It’s also super easy to make at home (I do to save money). Enjoy!

These kale chips are still one of my all-time favorite snack recipes. I make them all the time and I love the addition of parmesan. I do tend to overcook them a bit, but I’ve had good luck with putting them under the broiler for a few minutes.
