I’m up early this morning, ready to get sweaty and sore! I need to sweat out all of the football food and Sunday dinners. But, first…I wanted to post my dinner from last night. Most of the time, my dinners are simple and easy to put together. Eating healthy doesn’t mean you have to spend hours in the kitchen. When I’m cooking for one, my favorite thing to prepare is a salad. It’s the easiest to shop for and you get more for your money.
The salad I made last night had baked chicken, red onion, avocado, cucumber, spring mix lettuce, croutons, tomatoes, and a side of Italian dressing. The broccoli recipe is here! The drink is carrot ginger juice from Trader Joes with with ice and ginger Kombucha.
