I’m sure you’ve already guessed that there is NO WAY I took one bite of this dish. Why?…MUSHROOMS. I wouldn’t put one in my mouth for money. (well theres a price) I made Jeremy and egg scramble for dinner the other night. To me, this is how men enjoy their eggs! My dad would have loved this. It has meat, potatoes, and bourbon! Jeremy said it was awesome! It was also a quick fix!
Ingredients: *1/2 cup of mushrooms, *2 tbsps bourbon marinade, *1/2 cup white, purple, and red potato medley, (softened boiled or microwaved and sliced), *3 turkey sausage links cooked, *4 large/medium eggs, *3 slices of mini ham, and cooking spray.
*I served the scramble with whole wheat toast!
In a greased frying pan, add 1/2 cup of mushrooms and two tbsps of bourbon marinade.
Add potatoes to the pan with the mushrooms.
Cook on medium high until the potatoes and mushrooms are fully cooked.
Mix in turkey sausage and cook for about one minute.
Crack four medium/large eggs into the pan with the vegetables and turkey sausage.
Scramble all the ingredients together on medium heat.
Add shredded ham to the scramble and continue to cook until fully done!

I love mushrooms! They can really add a meaty texture without it being too filling-looks yummy tho.!
