It was about 8pm when I got home the other night from hanging out with a few girls I met at the complex. I wanted to whip up something fast and delicious. I wouldn’t really call this a recipe…more of a “fix”. It took me about thirty minutes to whip up! I baked some leftover chickens rummies to go with it!
You’ll need: 2 large zucchini, 1 jar pasta sauce, 1 package rising moon organic ravioli and parmesan cheese.
Boil water and cook ravioli as directed on the package.
While you are cooking the ravioli, bake the zucchini slices in the oven at 400 degrees for 24 minutes.
Add sauce to cooked noodles and let it sit on the stove while the zucchini cooks.
Add the zucchini slices to the sauce and ravioli and give it a good stir!
Serve with parmesan on top!

Aw man! I haven’t had ravioli in forever, I am talking like 13 years at this point, and I don’t think I ever will be able to again! That being said, these photos/recipe brings back so many memories, and those are just as good 🙂
