I am feeling much better than yesterday morning from the deep tissue massage. I’m happy Jeremy is on his way back to Arizona! I had a great weekend but it’s always night to have someone to enjoy it with. He actually lands in 30 minutes so I have to hurry this post up to go get him.
I’m extremely proud of myself. I accomplished a very unusual challenge this weekend. It was more of a bet. Jeremy bet that I couldn’t put together a thousand piece puzzle by the time he landed. Call me pathetic, call me a nerd, but don’t call me a failure. I started Thursday night and finished it this after noon! I thought about letting it sit there, but if I didn’t complete it, I would have had to eat 20 cherry tomatoes. Cherry tomatoes are up there on the “foods I can’t tolerate” and “cringe when you think about eating them” lists. It wasn’t an easy puzzle! That picture only shows half of it.
Oh and if you’re wondering what the heck is in that cup…its Whole Foods 365 hot chocolate!
Thursday night, I had the grocery store make me fresh sushi rolls and I paired them with a bowl of soup. I forgot to post the photo the other day. The roll with the avocado is the spicy dragon roll and the other is a spicy tuna roll. My favorite 🙂
I did make a quick grocery run yesterday before my hike. I’ll make another “hotel stash” with all the goodies in a post later.
As I was browsing the coffee creamers, I looked below and found these babies. That whole “drinking my calories” thing goes out the door on Christmas and I down as much eggnog as I please. I don’t care how many healthy cookies you stick in front of me, I’m going for the eggnog. Eggnog is pretty heavy so finding an alternative that taste just as good was a treasure. Now I can add it to my protein shakes all winter. But on Christmas you better believe I’ll be drinking the real deal eggnog.
My body was feeling so much better yesterday afternoon so I decided to go blow some energy. I picked up a bag of trail mix to snack on before I headed up Camelback. I added some freezer dried blueberries to the mix, too. The freezer dried berries are good but the sun-dried are a lot better.
I only made it 3/4 way up. It was getting pretty late and because I was by myself, I didn’t want to hike in the dark. I made it back to the hotel around six and had a salad from Whole foods.
It’s not the most attractive salad, but probably because I threw everything in a to-go box. The salad had edamame, kale, feta, salmon, zucchini, black beans, onion, falafel hidden under the lettuce, corn, couscous and ginger sesame dressing.
Before I forget, I want to update you all on my training. As you can see…this week was a flop. But I can’t say my body didn’t need it. We all have our “off” weeks but it motivates me to do my best next week! This is why I don’t schedule rest days. You naturally run into them, unless you have a consistent schedule everyday.
Friday was a rest with a little light walk. Saturday I blew a little energy on a hike. Today I skipped my big run because I didn’t feel like running. We all have those days, right? Tomorrow I turned my three mile run into a four mile run. I’m going to work on getting a steady run in and tomorrow work on my time!
Oh and you guys will be proud of me. I went out for breakfast “for one” today!
