“Uh oh, guess what day it is. Guess what day it is. Huh? Anybody? It’s hump day! Whoo Whoooottt! Half way through the week! I have a recipe that is going to knock you off your chair and hopefully hold you over until the weekend! Not only is this post a recipe, it’s a giveaway! And who doesn’t love free stuff? Especially a healthy one!
Yesterday I decided to bake Paleo cookies!
These cookies turned out perfect. I wouldn’t change a thing! I’ll be making these for the tailgate Friday!
You will need: *1 Cup Almond Flour, *3 Tbsp Coconut Flour, *1 Large Egg, *1/4 Cup Melted Coconut Oil, *1/2 Tbsp Baking Soda, *1 Cup Unsalted, No Sugar Added Natural Almond Butter, *1 Tbsp Ground Cinnamon, *1/3 Cup Pure Maple Syrup (Or for low sugar, add a light syrup) *1/8 tsp salt (optional), *2 Tsp Vanilla. If you like your cookies sweet, add in Stevia if you’d like.
In a large mixing bowl, add one cup of almond flour. Do not press down.
Add 3 tablespoons of coconut flour to the bowl.
Mix in the baking soda, salt, and cinnamon to the dry ingredients.
In a separate bowl, mix together syrup, vanilla, and egg.
Add wet ingredients into the dry.
Mix together the dry ingredients and wet ingredients until combined.
Measure out a cup of almond butter. You may substitute the almond butter with other nut butters. I have tried these with peanut butter and they were perfect! But to make them Paleo, I used almond butter.
By the way, I’m obsessed with my new measuring cups from Dexas!
Stir the almond butter in with the rest of the ingredients.
Add coconut oil to a microwave safe bowl and microwave for 45 seconds or until melted.
Add the 1/4 cup of melted coconut oil to the cookie dough.
Preheat the oven to 350 degrees and grease a baking sheet.
Scoop 1 tablespoon sized cookies onto the baking sheet. You will need to form the cookie with your fingers I think it would be super fun to make these in the shape of footballs for a tail gate or other shapes for parties!
The cookies bake fast! Take them out as soon as the edges brown and the cookies turn lighter. Approximately 7-9 minutes.
Place the cookies on a cooling sheet and put the next batch into the oven. I used my chop and scoop as a cookie rack!
This recipe makes exactly 27 tablespoon sized cookies.
Nutrition Per Cookie: 85 Calories, 3 g Carbs, 8 g Fat, 3 g Protein, 1 g Fiber, and 1 g Sugar!
The nutrition will differ depending on what nut butter or syrup you choose to use!
These are the perfect snack, workout fuel, party food, breakfast grab, or dessert! They are so healthy and full of nutrients! You could fool anyone into thinking these aren’t healthy! I dipped mine in almond milk for breakfast this morning 🙂
One thing that Paleo has introduced me to is coconut oil. I have been using a lot of it lately. It’s magic!

What could you use instead of the coconut flour? I’ve looked everywhere for it and I can’t seem to find it!
