I’m the type of person that eats the filling out of the pie. I have never been a huge “crust” person. I’d only eat my grandpa’s, because his was the best. I have yet to eat a pie as good as his. Even when I make his recipes and follow his cooking videos… I just can’t conquer it! But I’ll never give up. Instead of spending hours baking a pie with crust that I’ll just pick the filling out of, I make baked fruit that taste like pie filling. And the way the house smells while the fruit and cinnamon bakes is incredible.
You can do this with almost any fruit. I chose blackberries, peaches, strawberries, and cherries.
-First preheat the oven to 350 degrees and spray a baking sheet with organic cooking spray.
-Wash and chop up the fruit. Spread the fruit evenly across the greased baking sheet.
-Sprinkle ground cinnamon and a Stevia packet over the top. Bake for 20 minutes.
-Serve over your favorite yogurt and top with a little sprinkle of ground cinnamon.
-This was delicious and I plan on making it again for dessert!
