On The Eighth Day of Christmas My True Love Gave to Me…Banana Spinach Protein Bars.
I know what you are thinking. Spinach and Banana? Gross! They also don’t look too appetizing, but sometimes food taste a lot better than it looks, and that goes for these bars. I’m fully prepared for the comments, but judge with your taste buds instead of your eyes.
On Thursday I was baking for Jeremy’s boss. I had just came home from the gym feeling weak, and in need of an energy boost. Coffee doesn’t always do it for me after the gym, it dehydrates me. Banana’s are always a good choice after a work out, so I used banana as my base. I stared at the bag of spinach contemplating on adding it to the bars. I ended up taking the risk, and was pleased with the outcome. The spinach becomes flavorless, but adds a great source of iron and fiber.
The bars taste like peanut butter banana bread. They are high in protein and fiber. After I took them out of the oven, I had a couple and froze the rest. I thought they would be perfect to take on the road trip. If you have hours to spend in a car driving home for Christmas, these would make a great road trip snack. It’s much cheaper to make your own food rather than stopping at places.
You could also make a bunch to keep around during the Christmas parties if you find yourself eating too many sugar cookies.
2 Tbsp Ground Flax
1 Tbsp Chia Seeds
2 Tbsp PB2 Powdered Peanut Butter
2 Scoops Vanilla Protein Powder Whey (you could replace with vegan)
1 Extra Ripe Large Banana
1 Tsp Ground Cinnamon
1 Cup Spinach (break into little pieces)
-Preheat Oven to 350 Degrees
-Mix all ingredients together in a large mixing bowl, until creamy texture forms.
-Spray baking pan with cooking spray, pour batter into pan
-Bake for 12-13 minutes. Edges should be golden brown.

I’m officially putting my true love on the naughty list. What would make him think that I’d want eight females milking a cow? I honestly feel sorry for the cow. I set the eight ladies up with jobs at the Skinny Cow Company and the Laughing Cow Company. I’m sure they will be much better off there.
After all that stress, I needed a energy boost. I baked up some protein energy bars, and now I’m off to give my true love a piece of my mind!
