Halloween is over, but pumpkin season isn’t! I’m still excited for pumpkin pie on Thanksgiving! I’ll have to come up with a lighter version soon. A couple weeks ago, I attempted roasting pumpkin seeds for the first time. It was a success. So, when my mom told me she was carving pumpkins, I immediately told her to save the pumpkin seeds. I can’t believe I threw pumpkin seeds away for 21 years. They make the perfect snack and kill any sweet tooth. Instead of making the same cinnamon roasted recipe I decided to change it up a little, and make an apple pie flavor.

To make these pumpkin seeds you can follow this recipe HERE. Instead of adding the cinnamon. Add: 1/2 tbsp of vanilla, 1 tbsp apple pie spice, 1/2 tsp ground cinnamon for the flavoring. Don’t forget to follow the olive oil directions the same.
