Tonight I was in the mood for something filling and warm. I also wanted something fast. Instead of indulging in carbs, I substituted noodles with spaghetti squash. I ran out of pasta sauce tonight, so I added different ingredients to flavor up the dish.
2 Cups Cooked Spaghetti Squash
1 Tbsp Feta
1 Cup Grilled Bell Pepper
1 Tbsp Chopped Pecan
1 Tsp Olive Oil
2 Tbsp Chickpeas
1/8 Tsp Black Pepper
- Microwave or prepare spaghetti squash in oven.
- Mix in olive oil and black pepper.
- Top squash with: grilled peppers, chickpeas, chopped pecans and feta.
