This morning I wasn’t feeling too well so I wanted something warm and comforting. I decided to make some oatmeal, but as I was grabbing the oats I saw the left over pistachio pudding mix. A light bulb in my head went off and I decided to add it to my oatmeal. I wasn’t promising myself a delicious outcome but it was worth a shot. When I was finished preparing the oatmeal I took a small bight and my eyes lit up with relief! It tasted great! The oatmeal was very fluffy from the pudding mix and the almonds gave it the perfect crunch. I wonder what flavor pudding I’ll put into my oatmeal next………………..
Ingredients:
- 1 Serving Whole Grain Quick Oats (prepared with water)
- 1 Tbsp Pistachio Almond Pudding Mix
- 1 Packet Truvia
- 1 Tbsp Water
- 1 Tbsp Sliced Almonds
- 2 Tsp Shaved White Chocolate Bark (You could use white chocolate chips as a substitute)
Directions
- Prepare Oats with water as directed on box. (I used the microwave directions to make it faster)
- When the oatmeal is done add 1 tbsp of water, 1 packet Truvia and pudding mix and stir.
- Top the oatmeal with Almonds
- Take a sharp knife and scrape the white chocolate over the oatmeal.
