Sometimes throwing together all the veggies you have in the house for a quick healthy lunch turns out tasting pretty good! I love using cottage cheese as a dressing too because you get a quick protein fix.

  • 3 Cups Lettuce
  • 1/2 Cup Cottage Cheese (Mixed in W/Lettuce as Dressing)
  • 1/3 Orange Bell Pepper Sliced
  • 1/2 Cup Red Onion, Green , Yellow and Red Bell Pepper Diced
  • 1 Serving Croutons.
