Sometimes throwing together all the veggies you have in the house for a quick healthy lunch turns out tasting pretty good! I love using cottage cheese as a dressing too because you get a quick protein fix.
- 3 Cups Lettuce
- 1/2 Cup Cottage Cheese (Mixed in W/Lettuce as Dressing)
- 1/3 Orange Bell Pepper Sliced
- 1/2 Cup Red Onion, Green , Yellow and Red Bell Pepper Diced
- 1 Serving Croutons.
