I like to food prep during busy weeks. Sometimes school and work is hard to balance. I usually make a giant salad on Sunday and eat it throughout the week. I’ll top it when some kind of protein or pair it with soup.
I grocery shop on sunday and pick up all kinds of toppings. The salad changes each week.
This week I added:
- Mini Colored Bell Peppers
- Romaine Lettuce
- Fresh Spinach
The salad usually lasts about five days.
Just make sure you don’t add the dressing on until you’re ready to eat. It’ll get soggy!
