Good morning, everyone! It’s crazy to think that I’m blogging from the place it all started. When I was in college, I remember sitting at the Vine Coffee shop here in Ottumwa Iowa, opening up my laptop, and starting my blog. I had one of the best weekends back home and I can’t wait to share it all with you. My family is absolutely crazy in all the good ways and this weekend was just a reminder that I need to come home more often. I will be sharing my adventures from Iowa this week along with YouTube videos! 😊
I have about two more hours before everyone starts waking up to head down to breakfast. Our flight leaves later this afternoon, so we’ll be heading up to Des Moines around noon. I thought it would be a great time to squeeze in a blog post, so I went downstairs to grab some coffee, and now I’m ready to share my weekly eats with you! This week is a little different because I challenged myself to eat a vegan diet. Not only was it a vegan diet, but I wanted to make sure it was a healthy vegan diet, so none of the processed “chicken” nuggets or bags of sweet potato fries. I wanted all of the food to come from whole ingredients, so I decided to challenge myself to eat 80% raw. Of course, I’m a newbie, so I had roasted sunflower seeds without thinking about it, had an accidental gluten hiccup (not fun), and heated up my almond milk for my cappuccinos. But overall, I completed the challenge pretty well. I threw it all out the window once we landed in Des Moines though because I wanted to have an amazing weekend without worrying about my food being raw vegan. I also have to give anyone who is a raw vegan/vegan so much credit for their dedication because it’s not always accessible, so you guys are awesome! To be honest, I really enjoyed this, and if I didn’t have to travel, I could probably stick to the raw diet. This little challenge taught me to reach for things like bananas, avocados, and nuts for snacks instead of grabbing a protein bar or other processed foods. Eating food that wasn’t cooked made me feel full longer and more energized. I know I’ll take a lot from this and apply it to my everyday lifestyle.
When you’re eating a raw vegan diet, grocery shopping will be easier each time because you will have learned what you like eating, what you go through the fastest, and what is absolutely forbidden from ever entering your cart again.
For my first haul, I picked up unsweetened almond milk, cacao powder, gluten-free oats, paleo style muesli, Garden of Life raw protein powder, tomatoes, avocado, green onion, mango, lime, sauerkraut, kale, macadamia nuts, coconut aminos, seed crackers, baby spinach, bananas, ginger butter, vegan dark chocolate, and unsweetened coconut milk yogurt. When you’re eating a raw diet, it’s hard to waste produce. The produce is thrown into smoothies, salads, cut up for snacks and used for salad dressings. The raw vegan diet can actually be pretty simple. The first salad dressing I made was incredible! I couldn’t believe it was all plant-based. It reminded me of the Caesar dressing from one of my favorite vegan spots in Charlotte. I knew I had to make more of the dressing because it was going to make eating salads so easy. I couldn’t get enough, and I just wanted more!
The dressing is thick, so you have to use your hands to massage the kale and spinach with it. I topped the salad with mangos, cashews, sunflower seeds, avocado, red onion, and more splashes of the coconut aminos. I grew a real love for mangos during the challenge. I don’t know why I never buy them.
After the gym on Monday night, I ended up making the same exact salad. Before going to bed, I made a little jar of overnight oat with the Happy Rolled Oats, Paleo style muesli (which is just fruit and nuts), and almond milk. The overnight oats aren’t sweet, so I added cinnamon and nut butter in the morning.
On Tuesday, I had some overnight oats with my coffee early in the morning and then snacked on apples, cashews, and almond butter in the late morning. Another thing that is so good that I forgot to take a picture of is almond butter drizzled over mango slices. YUM!
I made sure to have a smoothie every day. Smoothies are a great source of iron, protein, and other quick nutrients you may be missing out on during a raw vegan diet. My smoothies had spirulina, matcha powder, protein powder, pumpkin seed protein, almond milk, and ginger. I changed them up now and then, too.
Along with my smoothie, I had a salad with all the good stuff! I was getting really tight pains in my stomach and thought it was the diet changes, but wanted to check the cracker ingredients just in case. I thought I saw gluten-free, but the somersault crackers were dairy free and vegan, not gluten-free. This made so much sense. My stomach was in knots! Once I stopped eating those, the bloating went down and my stomach chilled the heck out!
I know this is so against raw vegan, but I had to treat myself to keep me powering through. I finished the oats in the afternoon with a mocha cappuccino! I added a square of vegan chocolate to the bottom of the coffee cup and added froth oat milk and espresso. Such a treat! If you are a vegan and need a mocha latte/cappuccino alternative, this is it!
These turmeric coconut wraps are my newest obesseion. I couldn’t believe how good they were! You can get them for super cheap at Thrive Market!
I filled the wrap with my homemade salad dressing, kale, mango slices, and cucumber!
I was really hungry after the gym on Tuesday night, so I had 1/2 banana, one cup almond milk, ice, cacao powder, pumpkin seed protein, and spirulina for a late night dinner/dessert.
I started Wednesday off with a delicious smoothie!
This smoothie had a banana, spirulina, pumpkin seed protein, cacao powder, almond milk, power matcha, and topped with almond butter.
This Rawtella came in the mail on Wednesday afternoon and I was so excited! It’s delicious! Rawtella is a raw-vegan version of Nutella. It’s perfect with strawberries.
Ingredients: Organic raw fresh and soaked/dehydrated hazelnuts, organic raw cacao nibs, raw coconut sugar.
I made a quik trip to the grocery store on Wednesday afternoon to pick up more lettuce, fruit, and nuts! You do go through a lot of produce during a raw vegan diet, which is so healthy for you, but can definitely get pricey! But once you know what you enjoy and eat most of, you can just grab it in bulk to save money.
I had to make more dressing because it’s life! I added sesame oil and brazil nuts to this one and it was much creamier! Yum!
Dinner before the gym! I had my greens tossed with the homemade dressing, mangos, Mary’s jalapeno seed crackers, shaved brazil nuts, and coconut aminos! If I was craving hot food, drinking tea with my meal helped kick the craving. It gave me the warm feeling. I’m sure eating a raw vegan diet during the winter would be tough, but like everything, you get used to it.
I had another salad after the gym, but added some butternut squash spirals for extra crunch!
On Thursday morning, I walked the dogs and then made a spirulina & banana protein shake before heading out to get my hair done!
I was at the salon for about three and a half hours! It was 2:30 pm, and I was only running on a smoothie. I stopped at Whole Foods to get a bottle of water, some mango slices, a power shot, and pineapple to eat on my drive home!
I also stopped at Starbucks and picked up a coconut milk cappuccino! I had three hours of housework and packing to catch up on, so I needed that extra fuel.
I picked up some small little items to bring with us on the plane and to our hotel. This Get Back To Human chocolate is amazing! We had a piece last night when we got back to our hotel room
After cleaning the house and packing for the trip, I made a yummy salad for dinner!
The salad had an edamame salad on top from Whole Foods, a couple tablespoons of quinoa, cucumber, romaine, onions, and my homemade dressing! Even though this salad was so delicious, I was ready for a hot meal. All of the raw produce an abundance of vegetables was a shock to my system. I told myself I was going to stick with it until I got to Iowa, and I’m so happy I did.
I packed some nuts for the plane just in case we got hungry!
Before we left for the airport, I made a breakfast smoothie! Whenever I fly, I make sure to have a dose of magnesium to help with my mood/anxiety! No matter how many times I fly, I always get that “first day of school” feeling before getting to the airport. Once I’m in my gate, it’s all fine and dandy!
I broke the raw vegan diet around 3 pm on Friday. My family and I went to a really cute cafe in Des Moines! You’ll get to see all the pics real soon!

Wow, I applaud you for even attempting the raw vegan diet! Good on you! I’ve only had raw vegan meals here and there – and while I enjoyed those, I don’t think I could make the commitment to going full-time! I love cooked food and warm soups too much! 🙂 🙂

I have never tried a raw vegan diet before, actually have never tried vegan or vegetarian. Don’t think I could either. I love meat.
I don’t get airport anxiety, I would get flying anxiety because it always made me sick to my stomach and I would get that nauseous head feeling… but now I take ginger root an hour before I fly and I don’t experience any of those things now and I actually enjoy flying!

I totally know how you feel! It’s definitely not for everyone. After doing raw vegan, I realized I could 100% do a regular vegan diet. Raw would be way too hard.
Ginger is so powerful for your stomach! I love adding it to my “anxiety” smoothies lol

Overall, what changes did you notice in your body? Weight, skin, digestion?? Anything that really stood out to you? I feel like I would have a hard time eating cold and crunchy all the time. I’m not a tea person so not having something warm and savory would be hard for me!

I have very dark purple skin under my eyes. I get so much sleep so it’s not a lack of sleep, but it’s a lack of iron because I’m anemic. I’ve been anemic since I was a teen. I was eating more foods rich in iron (spirulina) and noticed the color turned to a dark pink. My skin was already clear before I started, but the coloration looked better. I know that may sound weird but my face just felt “glowy.” This could have totally been in my head too, or the fact that I bought new skin serum lol
I actually craved less sugar, so this one was the big noticeable change for me. I didn’t crave sugar at all, which is rare. I usually always want something sweet at the end of the day, but not on this. I think eating all the raw foods and taking in all those nutrients helped. I didn’t feel hungry all day either, which was great.
I never weight myself, but I felt less bloated by day five.
I thought eating cold food all day was going to make it hard, but it didn’t affect me at all. It sounds much worse than it is.

Maybe give yourself a small window to try it out if you want! Don’t set the time-frame standards high! I knew I wouldn’t be able to do an entire month, so I set a small goal! Maybe even try it out for a day.
I found myself craving the salad dressing I made! I know it sounds so strange, but I didn’t crave anything at all. I read that it could be because I’m taking in so many raw nutrients that my body doesn’t crave other things. I don’t know for sure, but I was much LESS hungry doing the raw vegan diet.
YES! I had to buy bottles of water and force myself to drink them, which is in my video that I’m uploading today!!

OMG, this looks like such a challenge; I love raw food, but I would totally miss soup once it got cold!! I feel like it could get expensive being raw vegan (my husband tracks our monthly grocery expenses in Excel, and months where we buy a ton of produce is always significantly higher), so my husband and I just stick to regular old plant-based vegan, but I love Luna’s Living Kitchen– their kale burritos are to die for!!
How did you get your B12 during your week of raw vegan food? We take a supplement at home ourselves that has a ton of it, because it’s crucial to proper memory and brain function, but I know it can be hard to get on a vegan diet. My husband and I got a lot of grief about it when we went vegan two years ago, so I’m always curious what other people do!!

Yes, soup would be a hard one! I agree that if you don’t have your own garden, or choose to only buy organic produce, it could get pricey! But if you’re smart about it and buy things in bulk, you could probably keep it pretty cheap. It would take some effort and planning. I could definitely stick to plant-based vegan forever, but I don’t want to put my diet in a category. I try to eat as much vegan food as possible, but sometimes just want something non-vegan. Gotta have balance for me!

If I were going to go vegan full-time I’d start taking a b-12 supplement. But since it was only temporary, I didn’t. So to answer your question, I probably didn’t get any b-12 at all during this. It’s definitely important to get it somehow, so for sure I’d be more proactive if it was a permanent diet change 😊

One of my biggest obstacles to eating a raw/vegan diet is that I can’t eat any type of nut, and they seem to be in everything! So for now I just try to eat a higher percentage of fruits & veggies. I’m not really too concerned with the health aspects but I want to reduce the amount of meat I eat because of the environmental impact…

I don’t think I could have made it without eating nuts. You’re so right that nuts are basically in everything! Nuts are the cheeses, the dressings, the desserts, and so on! If you want to reduce your meat intake, you should try making black bean burgers and falafels to keep in the freezer! Making them yourself is inexpensive and less processed compared to the store-bought ones 😃

It could be all mental, but I definitely felt better. I didn’t feel sluggish, overly full, or tired. I ate more intuitively as well during this challenge and really listened to what my body was craving. It was definitely an eye-opener to me! I am going to start reaching for more whole/real foods!

I’ve never tried a vegan or raw vegan diet but I’ve been considering it for a short period of time to “reset” my body and make it easier to figure out what foods bother my tummy most.
I’m typically an anxious person, but I never get anxiety when I travel. I think it’s because I moved a ton when I was younger so for a while traveling was my normal.
Did you have trouble staying energized on this diet? Was it harder than normal when you worked out?

Not at all. I think I was more energized because my body had more energy from the whole foods. I was still eating tons of calories, fats, and protein. I think if someone were to try limiting their calories on this diet, they’d struggle for sure! But my body had a lot of nutrients to carry me through my day! 🙂

I definitely have a very healthy mindset compared to eight years ago. It’s crazy to think of where my mind was back then compared to now. I think you’re right that some people who struggle/have struggled shouldn’t attempt a diet like this. I did this to see how my body would feel and ate way more than I do most days. Realizing that the diet was very inconvenient for my lifestyle, not 100% satisfying, and returning back to my normal eating lifestyle was an example as to how my mind is in a better place. This definitely did not affect me in a mental way, but could potentially hurt someone who is going into a diet like this looking to “lose weight.” Hope that made sense 😊

Raw vegan always reminds me of the Sex and the City episode where Miranda calls the cold soup eating lawn lol. I’m sure it was better than that though! How was raw quinoa and the raw edamame? I’ve snuck taste before I cook it but it’s never that good.
I love the feeling of taking off in a plane. It’s my favorite part of traveling.

Hahaha! I remember that. It was much better than lawn 😉 The raw edamame salad was made at whole foods, so they added all kinds of really good spices. They actually had a raw vegan section at the Whole Foods here in Charlotte. I soaked and sprouted quinoa the first day and it was still crunchy and gross. I added a couple tablespoons of the Whole Food’s vegan quinoa on the Friday salad. I fit that into the 20% category for the day.
A great part, especially if you’re going somewhere fun!

1. I eat raw/vegan everyday for breakfast and lunch. I love mangos and smoothies the most! I love salads but am never good at making them interesting.

I was semi raw vegan for many years. I did make my own black bean burgers and ate heated foods quite a bit. I was easier to be raw vegan in midwest in summer and early fall. Winter and Spring was harder.
Now I’m not but I do try to eat Ovo vegetarian more so than meat. But sometimes I just want to have a burger with my kids. 🙂
I’m allergic to dairy so I do non diary for my dairy.

Loved reading this! We follow a plant based diet but I would definitely struggle with ALL raw foods. To be honest though, I know I would feel AMAZING if I did it because I always have tons of energy and feel great when my diet is mostly fresh foods. I love the feeling of buying tons of produce and then actually eating it all! So satisfying.
I don’t get airport anxiety anymore. I’ve actually really come to love the airport because it usually means we’re headed somewhere fun!

My favorite part was learning how to grab REAL food when I was hungry. I grabbed nuts, mangos, avocados, and things like that to satisfy myself instead of a slice of bread, protein bars, or other processed foods. I also liked that I hardly ever felt famished. I just felt satisfied ALL THE TIME! It was pretty cool.

I think so many people get it! It’s like I need to make sure I have EVERYTHING! lol You should definitely look into magnesium! It’s so important for health and we don’t get enough of it in our daily diets. It’s funny because I never realized that until Kyle’s mom was lecturing us about our magnesium consumption lol! She always knows all the superfoods to get!

I always have anxiety when I’m flying! Never thought about taking magnesium…great idea!! I’ve tried raw vegan for awhile, but it made me cold all the time and that’s a problem when you live in Wisconsin and winter lasts a good 7 – 8 months! 😬

You have a way of making some of the most plain foods look incredibly appetizing! I personally have never done a raw vegan diet (I actually have a condition that prevents me from eating a lot of raw foods, unfortunately). But if I were ABLE to eat those foods I would definitely be following your recipes for inspiration!
I don’t usually get airport anxiety, I love to travel. But I’m super type A so I usually have to double and triple check to make sure all my ducks are in a row. It drives my husband crazy–but he usually benefits from it! haha

I actually have gone on a raw vegan diet for 2 weeks once after having my gallbladder removed. I started easing back into my normal routine, but found myself getting really sick. It probably took a few weeks until I was able to be on my regular diet again. This may be because I had surgery, but did you experience anything similar? I’m curious. 😊

The only thing I experienced (my time was much shorter than yours, and I wasn’t dealing with the complications from a surgery!) but I noticed was extremely full after eating even the smallest amounts!

I’ve tried a raw vegan diet before as wel! I really enjoyed the food, it’s so full of taste and it feels so good on your body. I admit I did get lazy and after a week of following recipes i fell back into my old ways of takeout 😪 Every now and then I incorporate recipes, I wish I was more dedicated to food prep because I believe I could live and be happy just eating raw!

I ALWAYS get travel anxiety getting to the airport! I’m always fine by the time we’re ready to board the plane though!
Sorry you got glutened, that’s the worst feeling. 🙁 Did I miss somewhere that you went totally GF? I was confused at first since I thought your post was just about a raw vegan diet trial but I figured I’d ask! 🙂

I went completely gluten free about a year a half ago. I went gluten-free because of my endometriosis but then noticed whenever I had it I would just bloat and feel a ton of pain in my stomach. I did a sensitivity test and gluten was high on the list.
