Happy Monday, everyone!
I hope you all had a great week and an even better weekend. I just got back from a four-mile walk in hopes that it would slow my brain down, but I probably just destroyed all progress after downing an afternoon latte. Oops.
My recap post is coming in late because I’ve decided to change up my typical Sunday routine. After dinner on Sunday nights, I always work on my recap blog for the week. I’ve decided to take the next few Sunday’s off from the computer and slow down my writing flow. I write up to 2-3 blogs every day (some aren’t posted for months later) but I think it’s been causing my motivation to go down. I think they call it “getting burned out.” So from now on, I’ll be spending my Sunday’s completely computer free, and my evening’s phone free. I can’t promise it’ll be something I can stick to, but I’ll surely try. I will try to be “better.” My recaps will still be posted on Mondays though!

Have you ever had one of those days where there’s not much in the fridge, but you’re too lazy to go to the grocery store? Well, Monday was definitely one of those days. I was actually not up for much of anything on Monday, or for most of the week. Many of you know I deal with endometriosis. It’s not fun, I hate it, and hopefully one day I won’t have to deal with it anymore. I’ve been working with my doctor on solutions and trying to do it the most natural way possible. During my cycle, I’m extremely emotional, in so much pain, and feel like just sleeping in bed until the week is over. I know that’s a horrible way to feel, but it’s the truth. I won’t accept those feelings, so I try to turn it all around by eating right, working out, drinking a ton of water, reducing caffeine, and doing things that make me feel happy. Luckily, my week had a lot of ups to keep me in a good place.
For my lunch, I made a black bean dip to have with some spinach, salsa, and grain-free Siete chips.
My black bean dip had one can of drained beans thrown into the food processor with garlic powder, onion powder, cumin, sea salt, avocado oil, and black pepper. It was AWESOME! I’m looking forward to turning the dip into a burger form.
After lunch, I had a decaf cinnamon and nutmeg latte made with barista style almond milk.
On Monday night, I thought it would be a good idea to tag along with Kyle to the gym to walk the treadmill. Exercise is great for endometriosis pain as long as you’re not overexerting yourself. Walking is an amazing form of exercise and does wonders to the body and brain. Exercising also helps me drink more water, so that’s another plus side to it.
I was up at 5:30 am on Tuesday with the dogs because they were ready to go for their morning mile. I’m not sure if they like the morning mile or if they correlate it to getting fed afterward.
Later in the morning, I had some hardboiled eggs with maple syrup (looks like a weird combo but it’s delicious) and some cinnamon paleo protein pancakes. I use the Birch blender mix with vanilla protein powder. I’ll even add some Melt spread. Have you guys ever had that brand of “butter?” It’s so dang good!
For lunch, I had arugula with a honey mustard vinaigrette, hard-boiled eggs, my bean dip, and sunflower seeds. I was still eating what was leftover in the kitchen because I was not in grocery shopping mode.
On Tuesday night, I did a four-mile walk with alternating speeds and inclines.
Kyle and I always walk the dogs a mile in the evening when it’s cooler out. After showering off from the gym, drinking a protein shake for dinner, and brushing my teeth, we headed to bed super early so we could watch Sharp Objects. Leo was in his happy place!
Even though I fell asleep super early, I also woke up super early. 2:45 am early…My cramps were so bad that they kept me up, so I went downstairs to take a Tylenol, another prescription from my doctor, and then ran a hot bubble bath to lay in for a while. An hour later the medicine kicked in and I was able to finally go back to sleep.
I didn’t wake up until 8:30 am the next morning which is so rare for me, but I’m so happy I got the sleep. Kyle walked the dogs with me before he headed to work, and then I had a bowl of oats before heading to my appointments.
My breakfast bowl had banana oatmeal from Gluten Freeda, maple syrup, pecans, and freeze-dried fruit.
On my way home from my afternoon appointments, I stopped at Whole Foods to finally pick up some groceries, and a snack for the drive home. I bought Lenny Boy Kombucha, a local Charlotte brew that is amazing, and a chocolate hazelnut RX bar.
I was so excited when I saw the dog’s new pool I ordered from Amazon sitting on the porch. I couldn’t wait to open it up and let them swim in it. I know this is embarrassing but I also bought them bathtime toys to play within the pool. It was funny because they kept running to the pool, taking the bath toys out and setting them on the grass. It looked like they were rescuing them.
I love this pool because it’s heavy-duty and not one of those pools that your dogs will rip with their nails and it comes in different sizes. We bought the XXL and my dogs are 65 and 80 pounds. It also folds up nicely so I can keep it on the garage shelf. They can both comfortably lay in the pool without touching the sides.
I spent the rest of Wednesday getting caught up on laundry and work!
I thought it was fall when we woke up on Thursday.
It was 58-degrees and I was in heaven. I walked the dogs for a mile and a half, fed them, and then went back out to hit a total of three miles before I started working.
Not only was the weather amazing, but I was finally feeling well again. I was back to myself by the time Thursday rolled around.
For my breakfast, I had a cup of frozen berries, protein powder, spinach, cashew butter, and almond milk.
For lunch, I had leftovers from the Whole Foods hot bar! I had their fajita chicken, paleo fried rice, dairy-free tuna salad, and guacamole.
On Thursday evening, I decided to do a really slow walk at a very high incline on the treadmill. I did 45-minutes at a 3.0 pace at a 5.0-7.0 incline.
For dinner, I had Whole Food’s paleo rice, eggs, and guacamole.
I know I say this a lot on my blog, but I feel like it’s important for me to mention that not everything I eat ends up on this blog. I snack randomly throughout the day on nuts, yogurt, or other random things in the house when I’m hungry. I don’t take photos of everything, so please don’t think this is all I eat. That would not be enough to sustain me or a healthy amount to eat with my lifestyle.
We had another beautiful morning on Friday!
After walking, I sat down to blog and had a protein smoothie. My smoothie had frozen berries, protein powder, and water.
After my afternoon walk, I had Brad’s veggie crackers topped with turkey slices, broccoli sprouts, and guacamole! Such a tasty combo.
On Friday night, I went to the Panther’s game with my friend Caitlin. The weather couldn’t have been any more perfect, and it was a great way to put me in the fall spirit! 🏈
Somehow, my glasses must have fallen off of my head at some point during the game. We could not find them anywhere! Turns out, the guy next to us took them home with him because he thought they were his wife’s. Luckily he knew the people in front of us, who knew Caitlin’s family, so we got his number! We had to drive all the way north to meet him to get my glasses. I didn’t end up getting home until around 1:30 am…
I made myself a turkey sandwich, let the dogs out, and went straight to bed!
There was NO sleeping in for me on Saturday morning. I was up four hours later because Leo wanted to go for a walk. It’s funny how he’ll come to lay on top of me but leave Kyle peacefully sleeping. 😆 I’m the type of person that can’t fall back asleep if I wake up in the morning, so I gradually got out of bed, walked them, and sat down to have coffee before heading to my tennis group. I couldn’t believe I was still going but I didn’t want to leave my partner.
I fit in a cup of coffee and a bowl of oatmeal with cashew butter on top before heading out.
We played tennis for three and a half hours on Saturday morning. I was struggling to keep up, but managed to pull through! After tennis, I headed to Earthfare to pick up some things for dinner at my parent’s later. It was my mom’s birthday, so I told her I’d make her a low-carb lemon meringue pie. I was being way more spontaneous that I should have been on Saturday. Part of me wanted to buy the pie, but part of me wanted a challenge.
I picked up a cranberry almond turkey bar for the ride home and it was so tasty! I love the Epic bars. I haven’t tried their nut bars yet, but I hear they taste a lot like the RXBARS. I’ll have to try those out soon. After showering off, I sat down for an hour with my cinnamon latte.
I should have tried to take a nap, but I was too wound up to do so.
I did manage to get the pie made. Goodness, that crust was perfection! There will be a post all about it soon.
We headed to my parent’s house around 6 pm to have dinner and celebrate my mom’s birthday.
My mom makes these incredible baked pears wrapped in prosciutto topped with honey as an appetizer. Such an easy dish to make and very delicious! I bet they’d be great topped with goat cheese as well.
This was such an exciting night for my parents. I mentioned a while back that my dad had started building a fireplace in the backyard. He’s never done anything like this before because he’s usually building furniture like the ones in the picture. He watched several youtube videos, read some books, and then built this image in his head for what it would look like. Months later, it’s finally done. They have to finish the stones and add the nautical rope detail at the bottom, but they lit it up for the first time on Saturday, and it was a success! My dad built the furniture, did the concrete, and pretty much everything else in that yard! It looks amazing and I can’t wait to see when it’s officially finished. He has about 200 photos of the whole process that he’s going to let me post on the blog. I’m going to let him write the whole thing 😊

For dinner, we had roasted vegetables and burgers on the grill. I decided to try out the Beyond meat burgers because they were on sale at Whole Foods. They were awesome! I had one while I was visiting Savannah and fell in love. They are plant-based burgers without the soy!
I love wrapping my burgers with iceberg lettuce and topping them with guacamole, mustard, and ketchup. I’m sorry but a burger is not a burger without mustard and ketchup.
We spent the night sitting around the fire listing to music and talking. When I fell asleep on the couch, I knew it was time to go. I had finally hit my wall.
I didn’t wake up until 8 am on Sunday and needed every ounce of sleep I could get.
After my morning dog walk, I had a breakfast smoothie. It had frozen berries, spinach, protein powder, and cashew milk topped with cocao nibs, cashew butter, and raspberries.
On Sunday afternoon, I made lemon cupcakes with the box of Swerve cake mix they sent me. I’m blown away by how amazing these turned out. They are carb-conscious treats, grain-free, and will blow you away!
I made the chocolate chip cookies and those were also so delicious! We are going to make the chocolate ones this week 😊
For the oil, I used sunflower. I also added two tsps of lemon extract to the batter. Don’t eat the batter because it’s hard to stop!
For the frosting, I went with a dairy free coconut based frosting. You could make your own, or take the easy route like I did! I put them in containers and stored them in the freezer for dessert.
Later in the afternoon, Kyle and I headed to the gym. I did a light walk on an incline of 3.5.
We stopped at Home Depot on the way home to get some things for the house and yard. I finally hung up the beautiful windchime Kyle’s mom bought me! It sounds so pretty in the morning.
We made a healthy Sunday dinner. I had chicken marinating for 14 hours in the fridge! I knew it was going to be good on the grill.
We had roasted veggies, a veggie stir-fry, grilled asparagus, and arugula for our sides. We had so much leftover that I turned them into my dinner for the rest of the week.
Oh, and I finally got around to trying the Cashew Queso from Siete! I think it’s one of those things you have to try for yourself to see if you like it. I’ve seen SO MANY people go crazy over it, but it’s just “ok” to me. I bought four because I thought it was going to be the best thing ever, but I’m still not sure. I’ll probably add them to recipes and see how it holds up! Kyle actually really likes it, so I think you’ll have to try it for yourself to make up your mind! 😊

I relate to this post so much. I have PCOS and Endometriosis and some weeks are so rough. It can be hard forcing myself to exercise, but once I do I usually feel better.
Congrats to your dad, he did an AMAZING job!

I remember you telling me this! My doctors actually mentioned PCOS the last time I went in there, but haven’t done further testing yet. I’m so sorry to hear you deal with both! I can totally relate to those awful pains. Especially when you try to do everything right to ease it up.

I’m so sorry to hear about everything you go through with your endometriosis! I know it’s not even close to the same but I went off hormonal birth control and WOW, my period symptoms are so much worse! I literally wake up in the middle of the night with cramps and it’s awful so I can only imagine how terrible you feel.
And I 100% think it’s a good idea to give your brain a break with blogging. You write SO much each day, you don’t want to fall out of love with it!
Lately my breakfast has been 3 parts since I work out in the mornings now. I have a muffin before I work out, a protein shake after, and some fruit while I’m teaching!
I actually do function well but I’m SO much more likely to get sick, which is a no-no working with kids, so sleep is a priority to me!
I’ve really been wanting to try spirulina powder to make my smoothies amazing colors! Unicorn smoothies FTW!

Sounds like you get awful cramps as well! The only thing that has helped instantly is a hot bubble bath with mint muscle relaxing bath salts! If you’re ever waking up in the middle of the night, try that!
You’re so right about that. I don’t think I could fall out of love, but I can totally get burned out. I felt so good starting my week without already working all Sunday night. I also thought about building my recap a little each night so it’s already done and ready for Monday! So there’s another idea 😃

Wow your parents backyard is stunning! Super impressed that your dad built that fireplace. I actually have been dying to try the Beyond burgers everyone has told me they are amazing. Random dumb question but when you freeze cupcakes do you just defrost them in the fridge before serving and do you have any issues with them becoming soggy? I have never tried to freeze cupcakes for later.

This may be weird, but we like them frozen! lol They don’t get super hard where you can’t bite into them but I love cold cupcakes! Kyle will sometimes microwave them for ten seconds to make them soft and that works! 🙂

I’ve been reading your blog for awhile so I ask this strictly out of curiosity- I remember you cutting gluten and dairy awhile back, but then i feel like you added it back in because you didn’t notice a difference? But now you’ve cut it out again? I love that you preach to do what’s best for your body, so i’m not judging or have any negative comment, i was just curious!
1. smoothies or bars- something easy i can eat on the go! Or hard boiled eggs and proscuitto. I did whole30 awhile back and while i HATED it, I’ve stuck with these as easy, but healthy breakfasts

Back when I cut gluten and dairy the first time it was because of feeling bloated and wanting to see if it would change the way I felt when I was doing more HIIT workouts. I stopped because I didn’t feel a difference in how I was feeling. This time, my doctor had suggested that I cut it to see if it would help my endometriosis symptoms. I don’t cut it for “diet” purposes or anything like that. Gluten and dairy also show up on my highly reactive foods on my food sensitivity test. My pain is still bad so I don’t know if it’s helping or what she’ll suggest next, but I have an appointment next week to follow up.

2. Ahhh wish my brain would let me nap! It’s rare when it happens, but I’ll usually fall asleep super early on tired days.

I usually use a ground cinnamon in my smoothie, but coffee shops always use a cinnamon syrup! You can buy them on Amazon.

Unfortunately, nooooo The only running I’m doing is tennis! I’ll be sticking to the treadmill, maybe some light jogs, but that’s about it! I just hate the stress it brings to my body and walking and tennis seem to really be working for me and it’s something I enjoy 🙂

Absolutely not, which will be interesting since I’m currently in my 3rd trimester with our first child! I’ll have to adjust, maybe it will help me in the long run. I’d love to be that person who doesn’t require a full 8 hours of sleep just to function normally throughout the day.
Is there a product you’ve been wanting to try but haven’t yet?
Honestly there’s ton’s of stuff I’d love to try, but we have no access to whole foods, trader joe’s, anything remotely healthy in our area so all the new “fad” items, we never get. Everything always looks and sounds amazing, but I’m also hesitant to try because if I do like it, I’ll never be able to get it again! The struggle is real…lol

I’ve said it before and I’ll say it again, thank you for addressing the fact that you don’t post everything that you eat! I feel like that disclaimer goes a long way for girls who are trying to adjust their activity and diets to match those they see online–so thank you for being real!
Also, I think it’s hilarious that your dogs actually get into the pool. I live in Arizona and I’ve tried SO MANY TIMES to get my dogs into a kiddie pool when it’s hot and they just won’t do it. They act like it’s just a giant water bowl!
Question: When you create recipes, do you look online at different recipes for inspiration and then mix and match the ingredients to fit your needs? Or do you just completely wing it? I see your recipes and all I can think is, “How did she come up with that??”

I love giving ideas on WHAT to eat, but not an exact diet 🙂 Even my meal preps are not only what I eat during those days. I’m only human, so of course my hand is going into the m&m jar! lol

For my grilled chicken, I just place it on a grill-friendly tin foil with sesame oil and flip it ever 8 minutes until it reaches 167-175! 🙂 I also marinate it for hours in advance!

That pie looks INCREDIBLE– looking forward to the post! My husband and I sometimes buy Beyond burgers at Whole Foods, but I cannot wrap my head around how raw Bareburger makes them– they’re literally mushy and hot pink still. 😐 Love them otherwise, though!!
Your treadmill incline walks are seriously inspirational. I need to build to some myself, but I just love running outside. I’m doing a 10K at the end of September, so maybe I’ll incorporate some incline walks over the next few weeks! 🙂

Ahh! I was at the game too on Friday night. Flew down from Boston, landed just in time for some pre gaming and then football! It was too hot for this northerner, though! I was able to cool off on Saturday after doing some hiking near Asheville!

Since I work early Monday-Friday my go to breakfast is usually just an egg omelet with a side of fruit! I usually only get creative on the weekends!
I can barely even function if I don’t have enough sleep. I used to be able to stay up almost all night (when I 16-20) and function fine but now that i’m a little older (24) and I need my sleep lol.
Theres so many products that i’ve been wanting to try that I haven’t yet. I think I’m going to start making a list so I can cross one thing off at a time 🙂

This is such a strange question hahah but how do you keep your nut butters looking so creamy? I find whenever I have natural butters (peanut, almond, cashew) they are good once I open them, but as soon as they’ve been in the fridge a few days they go hard and lumpy. Fine to spread on toast but that’s ahout it. Yours looks almost melted on top of your meals!!

I usually keep my cashew butter out of the fridge! It’s a pretty creamy nut butter. Whenever i put it in the fridge, it’s not creamy at all! BUT…If you’re looking for a creamy texture, you can heat it up!

Love your blog girl! You are so good to your dogs, I just love the pool and I bet they do as well. My go to breakfast is either gluten free oatmeal with cashew milk or lactose free plain yogurt with either fresh or frozen raspberries and chia seeds. I DO Not function well on a little sleep! I get very weepy and could almost cry when i’m overtired, don’t like the feeling. I would love to try BP2 Powered Peanut butter.

Just wanted to comment quick on your endometriosis… I also used to suffer from severe menstrual pain that was unofficially diagnosed as endometriosis (never had the laproscopic sugery to verify). I used to be in such pain I missed school or work the first day or so of my period. The pain was so intense that I would get really shaky and sometimes even vomited.
I was also diagnosed with PCOS (small cysts on my ovaries found by ultrasound) and was prescribed the diabetic drug Metformin. The way i was explained pcos had somethimg to do with the relationship between sugar and your ovaries (I dont remember the exact science explained…too long ago😉) Metformin worked great and regulated everything and helped slightly with the pain.
Want to know what cured me? Giving birth to my son!!! I have two sweet young boys now and my periods are SO much more tolerable. My doctor said that happens a lot with endometriosis and getting pregnant…it gives your body a reset and time off for those stray cells to stop growing where they shouldn’t. I know this isn’t the best option for you right now (Propose to her already Kyle!!! 🤣) But just wanted to give u a little hope that someday you will find relief. In the meantime, my heart goes out to you!! I know how debilitating it can be!
I did find that cutting out caffeine (IKR 😲!!!) and making sure to take daily vitamins helped (prenatals seemed to work better even when I wasn’t expecting…iron/folic acid). You could also try taking Ibuprofen a day or two before your period is expected, which is supposed to help get a jump start on inflammation and etc.
Now when I have my periods I think “is this what other women thought a painful period was?” Haha! A little medicine and the pain goes away! Take comfort in knowing too that IF you want kids someday, you are ready to handle labor pains because endometriosis pain ranked pretty high up there! I pray that the Dr can find some kind of relief for you! God Bless!!!

Thanks for taking the time to write to me. I had some cysts on my ovaries during my last ultrasound about three months ago but my gynecologist never said it was PCOS but it would make sense if it was. The doctor I was seeing a couple years ago told me that giving birth can remove endometriosis and it’s good to hear that it worked for you! Of course, I still have many years before that happens, but it’s nice to know that you’ve found a solution, and got a beautiful soul out of it. ❤️
You’re SO right about caffeine. I struggle during the first few days but I don’t allow anymore after my first cup of coffee. I definitely take ibuprofen three to four days before! I know when it’s coming because my cramps start easing their way in! I’ll look into taking prenatal!

Glad to hear you taking a break from things as needed. I think it’s rare for us to actually realise we need the mental break, and even rarer for us to follow through and give ourselves a break. We are such a culture of go go go and more more more. Hope it helps!
1. Every morning I have a smoothie with spinach/kale, scoop of vanilla protein powder, scoop of collagen, scoop of flax seed, scoop of chia seeds, frozen blueberries or raspberries, 1/2 and avocado, and almond milk. Following the “Fab 4 Smoothie”.
2. I don’t think I function at all with little sleep. It’s so important. I’m trying to get up earlier each do to get more done, but if I don’t get to bed on time, it’s a real struggle. I’m not a morning person either.
3. I’ve heard MCT Oil is really good for you… so I’m interested in learning more about that and trying it.

1. My husband and I make smoothies every weekday morning! They’re so good, and easy to take on the go if one of us is running late!
2. I do not function well on little sleep — my brother in law got married this past weekend and I almost cried I was so tired Sunday afternoon. I can normally do two days, but 3 nights with only 5-6 hours was not enough for me.
3. I don’t have a product I want to try, but am on the lookout!

Have you ever seen a chiropractor for your endometriosis? I know it sounds weird, but a large part of the pain is from disorganized or too little peristaltic action, which is controlled by nerves. If anything isn’t out of alignment, particularly in you’re lower spine that can interrupt nerve function more. Getting those signals firing right can give relief! Now that I sound like a total dork I’ll stop haha

I love your blog. Inclined walking is one of my favorite workouts because it burns a lot of calories and is great for your butt, but is sustainable for a longer time than running (for me, anyways).
