Good morning & happy Monday! I hope you all had a great Easter weekend.
I woke up around 5 am so that I could fit this blog post in before heading to yoga this morning. I mentioned last week that I was going to start my week off right by devoting an hour to a yoga class to help me set my intentions for the week. It seemed to do the trick last week because I felt very calm and motivated to get everything done. I was even calm and laughing during some of the most hectic moments (if you saw my Instagram story yesterday, you know what I’m talking about.) I’m braving it out again and going to the advanced class this morning, so wish me luck! I was so sore after last Monday’s class. I’m so bad at it compared to everyone else at this point, but it only motivates me to keep going and improving.
I’m about to admit to something that I guarantee at least one other person will be able to relate to. I get to class super early so I can find a place in the back. I HATE being upfront in yoga classes (at least not right now anyway.) I’ll usually find a spot, put my stuff down, and then go run a mile to warm up my muscles before class starts. I find that cardio before yoga helps with my flexibility.
Going to yoga used to be so hard for me to do. I used to be self-conscious of my form, my lack of yoga terminology knowledge, and never let myself truly relax. When I stopped worrying about others around me, I began to let myself learn and become comfortable with my practice. Now, I work harder on grounding my mind and allowing myself simply be in the moment. The more you go, the better you get, and that’s with just about anything in life.
It was a pretty cold morning on Monday, so I warmed up with a yummy bowl of oats and a cappuccino for breakfast. I was so hungry during yoga, that I almost walked out. (I learned my lesson and have a muffin waiting for me to eat on my way to yoga this morning.)
My oats had sliced banana, cashew butter, pumpkin seeds, and nuts on top. I usually just cook my oatmeal in the microwave for one minute with water. I do it the lazy way.
At noon, I headed to the eye doctor to pick up my new glasses. I had been wearing my old glasses with tape around the sides because I kept putting off the eye doctor. It feels good to finally have glasses that stay on my face that align with my vision. I had a couple of people asking about the brand on Instagram! They are Hackett, and actually from the men’s section. I have bigger cheeks, so I always feel like women’s glasses fit too small on my face.
For lunch, I had leftovers from the weekend. It consisted of ground turkey with rice and sauteed cherry tomatoes, broccoli, sweet potatoes, and cabbage. I sauteed the vegetables with toasted sesame oil and sea salt. After lunch, I worked on some more writing.
I was hungry later in the afternoon after a dog walk, so I made a protein smoothie bowl with Forever Beautiful superfood mix. They kindly sent me over a couple of mixes to try out. I’m not sure if it’s a coincidence, but my skin has been 100% clear for the first time in years (this is not an ad.) This superfood mix has the six most powerful skin superfoods. I usually have to buy them separately, so it’s great that they are in one mix.

The rest of my smoothie had raspberries, protein powder, 1/2 banana, cashew milk, pineapple, and ice. I keep all of my fruit frozen to get the perfect smoothie bowl texture.
For dinner, I had kale tossed in Tessemae’s Green Goddess dressing with sliced avocado, grilled chicken, sweet potatoes, and cherry tomatoes on top. After dinner, I headed out for an evening walk with the dogs and then did a load of laundry before sitting down to watch American Idol. I think they did a good job getting Lionel Richie as a judge.
I woke up so sore from vinyasa on Tuesday morning. I decided to skip out on Tuesday class and just get work done at home.
I was extremely excited because Tuesday was devoted to the gluten-free vegan carrot cake creation! I had been wanting to do a gluten-free and vegan carrot cake without all the sugar in it for a while now.
When Kyle tried it, he said he only wanted one bite but ended up eating the entire container. Meighan said she licked the plate clean, and my parents were literally fighting over the thing! I think it was a damn success! 😀
I am so proud of how it turned out. I’m making again this week, but turning it into a sheet cake. I loved getting photos from all of you who made it! I think I’m going to start sharing your pictures at the end of my recap posts. It always makes my dad when you tag me in your photos.
On Tuesday night, I made a giant dinner salad and headed out to my parent’s house. My mom was having a little surgery (which I will blog about in the upcoming weeks, but it’s nothing extreme!) on Wednesday. I could tell she was kind of nervous, so I headed over there to keep her mind off of it and reassure her that it was all going to be fine. We headed out on a long dog walk together, had dinner, and then when she went off to bed, I stayed up until 2 am editing my carrot cake post because I wanted it to go live asap! I was also watching one of my favorite childhood movies, The Cutting Edge to keep me awake. I am not a night person, so I was fighting the eyes!
Leo is my morning spirit animal. Even when we don’t sleep much, we are still happy to be awake with coffee! I always have to hide my coffee or take it with me when I leave the room because he loves the taste of it. Kyle always says our personalities are the same.
I headed home to get ready before going with my mom to get her surgery. My package of cookies was waiting for me on my doorstep, and I was so excited. I talked about them in my last recap post! I ordered them for my go-to breakfast before coffee or a workout. They have no added sugar; they’re vegan, gluten-free, and so so so so good!
I made an oat milk cappuccino for a pick-me-up! I was running on four hours of sleep.
I threw on some mascara, blush, lipgloss, and undereye concealer to hide those dark circles!
While my mom was having her surgery, I walked across the street to get some work done and reply back to comments at Starbucks. I ordered a decaf coconut milk latte with vanilla. I also brought an RXBAR for a snack!
I stayed out at my parent’s house a couple of days last week to help out.
We made it back to my parent’s house around 2 pm. I made myself some lunch after stopping at Earthfare for some groceries. My lunch plate had mixed greens with Herb Goddess dressing, trail mix, tortilla chips, and vegetable chili. I also had a Cayenne Cleanse Healthade Kombucha! This is my favorite flavor 🙂 I’m sure this is going to sound weird, but I love the tingly spice feeling it puts in your stomach.
The grocery store was out of my go-to green goddess dressing, so I decided to try out the Organic Girl Herb Goddess dressing. It was a blessing in disguise because this dressing is OUT OF THIS WORLD! I can’t compare it to anything I’ve ever had because it’s so unique and flavorful. I could use this as a marinade, a dip, and so on! It was just so good. The three main ingredients are green onion, parsley, and basil. I found this at Earthfare, but you can use their store locator to find it near you. I promise it will not let you down!
We decided to do pizza night! Above is a basil pepperoni pizza. It had gluten-free crust with pesto, tomatoes, pepperoni, and mozzarella cheese.
I love the dairy-free and gluten-free Daiya pizzas! I did a cheese pizza with turkey pepperonis on top and a side salad with the tasty herb goddess dressing!
My mom’s favorite dessert is key lime cheese cake. I picked up the Daiya Key Lime Cheezecake to try out for fun. I wasn’t expecting it to be great since it was vegan and gluten-free. Vegan “cheese” can sometimes be a little off. Well, that’s not the case with this dessert. They really nailed this one! You could NOT tell that it was vegan. If you eat dairy-free or a vegan diet, I recommend this X 1000000000000000. I have the strawberry flavor sitting in my freezer, and I’m excited to try it out. We were so shocked! We cut it into little bite-sized species because it’s so rich that a couple of bites are all you need for fulfillment.
Because I was running on very little sleep, I fell asleep around 9 pm!
The weather was so beautiful on Thursday morning. I made some coffee and headed outside to sit on the swing while the dogs played in the yard.
I made it to Yoga a little later in the morning. It was alignment yoga, so it wasn’t advance. It’s great for getting a deep stretch and relaxing. I love being able to disconnect from all technology and just focus on the moment. When I go out on dog walks, I leave my phone at home 90% of the time. I also use that time to shut off from it all.
I made a smoothie after yoga. It had frozen cranberries, pineapples, raspberries, coconut water, and vanilla protein powder.
Later in the afternoon, we took the boys for a cow ride. I know this may seem silly, but my dogs LOVE cows. I can’t even say the word “cow” without them freaking out. We drive the back country roads and take them by all the farm animals.
They were in cow heaven! They start wagging their tails, crying, and barking.
Why is everything so much prettier on the countryside?
For lunch on Thursday, I had a giant salad with herb goddess dressing, guacamole, and the chipotle black bean burgers from Gardein. This was the week of amazing finds! These black bean burgers are legit restaurant style if not better.
I ended up having the same for dinner but with an egg, broccoli, and Brussels sprouts on the side.

I told you guys the story about the baby bird in this post! He’s been doing great back up in the nest with his mama! The poor little guy is still too small to fly.
They live in the nest in the palm tree. The mama is very tame and absolutely loves my dad! It’s the cutest. He talks to her every morning and calls her “mama.”
The parent’s of the baby dove were going crazy on the roof when their little one fell out of the nest. As soon as she was back in the nest, the mom flew in to be with her. The dad goes in to feed them every morning. I just love these birds 🙂
I headed home on Friday morning to have coffee and get all of my work done. I made a delicious oat milk cappuccino! 🙂
For breakfast, I had a smoothie bowl! It had blackberries, cashew milk, peaches, protein powder, and the forever beautiful superfood mix.
Around noon, Meighan and I headed out on a 6.5-mile walk at the Riverwalk. It was a perfect day to get outside!
For dinner, I had Siete grain-free chips (they are bomb), mixed greens and cherry tomatoes with herb goddess dressing, and the best combo ever. You guys HAVE to try this…
Udis gluten-free sandwich bread toasted with a Gardein black bean chipotle burger, guacamole, and black bean salsa on top. I will be having this exact thing for dinner tonight! I could eat this over and over again. Kyle loved it too.
I headed to Power Yoga on Saturday morning. This was definitely a great class for strength training! Boy, was I sore!

I wanted to put together my herb garden that I had been dreaming of all winter! It was 80-degrees out on Saturday, so perfect for being outside! I am going to do a separate post on my DIY pots and rustic shelves! 🙂
I didn’t do my gardening alone. The two little girls next door helped me every step of the way. It’s so funny how kids think that littlest tasks are so fun! They were so curious about the plants, gardening, and the growing process. Hopefully, they learned a thing or two! 🙂 They also drew a picture of me and I think it’s pretty accurate! haha. I let them pour the dirt, water the plants, and then they stuck little cupcake stickers all over my front porch pots. They are now the best-looking pots in the neighborhood.
I had guacamole toast with the green goddess dressed mixed greens on top for an afternoon snack and it was so tasty! I also made an oat milk cappuccino while I worked on the lettering.
Lucky for me, Kyle made dinner again. He has been trying to perfect his wings for a while now. I think they are already perfect and way too delicious. They are so crispy and taste restaurant style! These wings had gluten-free Szechwan sauce. I had Siete chips and a side salad as well.
I woke up early on Sunday morning to have coffee before my parents came over. My dad brought his tools to help me hang the shelves and I was so excited!
While my dad worked, I made a delicious smoothie bowl for breakfast.
It had frozen strawberries, banana, protein powder, and cashew milk. I’ll be having the same after yoga this morning!
Well, the calm morning took a turn…
We marked where I wanted the shelves hung. My dad used his stud finder to find the support, but the stud finder read the drain pipe as a stud. WHOOPS! It was so scary at first because we had no idea there was a drain pipe there. Who puts a drain pipe there?! We were so lucky it wasn’t a waterline. Even though it looks like a really bad situation, it could have been worse and it makes for a great Easter memory. It’s situations like this where you just have to accept them, laugh about it, and fix it. I’m lucky enough to have a dad that is really good at this stuff! The cool this is that I get to learn how to do it all.
We headed to Home Depot to pick up a temporary fix. My dad and I are going to replace the pipe and add drywall on Tuesday, so the big reveal will hopefully be up by Friday! I’m just so happy I wasn’t home alone trying to hang up the shelves. I would have been so freaked out with water shooting out of my wall! I probably would have called 911 (but not really.)
We hung up one shelf to cover up the hole temporarily. This isn’t where it’ll be, but it looks much better than having a big hole in the wall! I’ll include all the shelf and prop details in my plant/shelves DIY post!
I had a delicious lunch late in the afternoon! I just can’t get enough of this burger combo.
Gluten-free toast with mixed greens tossed in herb goddess dressing, sweet potato slices, a chipotle black bean burger, salsa, and guacamole!
After lunch, I greased up my face and chest with sunscreen and headed out on a three-mile walk. It felt so weird to walk alone without the dogs for the first time in like a year. I just need to decompress! Walking is a great way to de-stress.
When I got back, I turned on Fixer Upper, made an oat milk cappuccino, and worked a bit.
Later in the afternoon, Kyle and I took the boys for a dog walk together and worked on their training. We’ll be meeting back up with their trainer on Sunday at our house, so it’ll be interesting to see how they behave in their environment!
For dinner, I went with something sweet! My lunch was so savory, and I was craving a light smoothie bowl. It had 1/2 cup frozen blackberries, 1/2 frozen banana, 1 1/2 cup cashew milk, vanilla protein powder, and topped with granola!
I ended the night watching American Idol and Naked And Afraid while blogging!

Are you still self-conscious when you go to yoga classes? I know that you said that you aren’t anymore, but you still go to the back of the yoga class? Or do you go there just because it’s your favorite spot? 🙂 sounds like nowadays workout routine consist of yoga and walking. Is that all?

Lol being in the back is really just so I can copy other people when I have no idea what I’m supposed to be doing.
That is pretty much what I do but now and then I’ll do a circuit, hike, and go for a three-mile run.

I wish I had a green thumb, your garden sounds/looks so cute! I also would have been panicking if I hit a drain line and didn’t have my dad there, I always have to at least talk to him before I start a project and get his advice haha (he lives 2 hours away so sometimes he can’t come help, but always has good advice and deals with my million phone calls ha). I haven’t had too many DIY fails because I haven’t done that much only living in an apartment, but last summer I tried repainting this cute little side table and I wanted to stencil flowers on top. Well, I didn’t tape the stencils down tight enough so there was tons of overspray plus I pulled them off before the paint was fully dry so it ended up smearing and I sprayed it too thick, so even when I tried to respray the top a solid color you could see the smudgy outlines of the flowers haha. Hope you had a great Easter!

You should I’ll try zennioptical.com for glasses. They are so cheap and the best glasses/lenses I’ve ever had. I used to spend $400 a pair and now I spend $30-$50. I usually rotate between 3 pairs because they are so affordable. Plus they make it really easy on how to measure so you get the right fit

We actually didn’t get to celebrate Easter this year. My fiance and I dog sat for family this weekend, so with one adult dog and one still a puppy, we didn’t sleep much, ended up coming down with something, and drove back home yesterday. Hoping to feel better this week back in our house! When I was growing up though, we always had brunch at my grandma’s house with pierogies, kielbasa (kolbasi, as her parents, who were Polish immigrants, called it), dyed eggs, hot cross buns, and a few other things, so we DID have pierogies last night in the air fryer with applesauce– does that count? 😛
I almost always choose a back spot in fitness classes. I find it’s easier to focus, even though I know everyone in the class is just there to do their best!!

Hey Taralynn, hope you had a good Easter! Question–does your mom still make an Easter basket for you? I’m going 28 years strong with the basket haha! My Easter was bittersweet. My grandpa is very sick in the hospital so I visited him for a few hours, then I had dinner with my boyfriend’s family. I’m seeing my parents tonight to do a little belated Easter dinner. I love your herb shelf idea! What’s your favorite fresh herb? I don’t think I’ve ever had a DIY fail as I don’t do it myself too much, but I also have a handy dad who can help me if I do fail lol. I’m more of a middle row kinda girl during classes. Definitely not front and center, but close enough so that I can easily see what moves to do lol.

I did yoga on and off for a while, but now I’m really diving into it since my gym is offering so many classes with new instructors. I think it’s one of those things where you really have to let yourself be comfortable with it and give it a chance. It’s easy to do it one time and never go back.

Might I suggest you do a workout legging review? You recently bought a pair of lululemon leggings and I would love to know details about if they are squat-proof, if they show sweat easily, and if they have washed well. You wear a lot of workout gear so it would be great to know your recent favorites and if some items are worth the splurge.

Great post! I hope to be able to do yoga soon. In graduate school it’s tough to find the time, and money, so I hope once I graduate to be able to pay for classes again. It’s not the same as doing a YouTube one at home! Also, are you wearing a ring on your ring finger in the post with your glasses/coffee mug?!

Okay so first… The carrot cake was SO GOOD. It was seriously one of the yummiest I’ve ever had! I’m so addicted. And I’m so glad that you tried the Daiya Cheesecake because I wasn’t sure it’d be good since their cheese can have that off flavor (but I still need to try the pizza since I hear it’s way better on that). I’ll be buying one next shopping trip!
I’m definitely an in the front person in classes haha. I really have a hard time with form since I favor my right side so hard, so being in front of the mirror helps me with that!
My entire life is one big DIY fail haha. I always have grand plans of DIY projects and the turn into big fat Pinterest fails. I think my worst one was when my friend and I made those amazing ornament wreaths and it took HOURS and turned out so good… And then I dropped it! I seriously almost cried. Christmas explosion in my face!
Easter was perfect and now I’m so excited that spring is happening. I love this season! We’re going to start our garden soon but I love the idea of having a little herb garden inside too!

I’ve just started doing yoga and love it! It makes me a little relieved to hear you think you’re bad at yoga! I was so intimidated at the thought of being the worst one (aka wrong form and constantly falling over) that it made me not go…but now I just don’t care! I’m usually off to the side, close to the front.
My dog, Carmen and I spent Easter at Folly Beach, then the waterfront park in Charleston! It was the perfect day!

Aww the birds! That’s so sweet of your dad. My Easter was pretty relaxing and I spent the time with family after church. I haven’t really have DIY fail because I know that I am not artistic or handy enough to try things on my own. The most I’ve done is build Ikea furniture lol. Glad you got it figured out quickly though!

Oh my goodness! I was watching your stories on Sunday and it made me laugh! It’s totally something I would do! I can’t wait to see the finished product. Green is quickly becoming my favorite color. Haha I am obsessed with plants and gardens. And those little girls are adorable!
Your photos are so colorful and they are definitely chasing away the winter blues. It makes me so excited for the warm weather to be permanent.
Also, your glasses! I love them so much! And I totally understand about having to buy men’s glasses, I have the same problem! At first, my mom thought I was just trying to be trendy, but once I actually started wearing them, she realized how much of a difference they make! I have been looking for a new pair after my old ones snapped. Contacts are great, but I miss having glasses!

So, I recently bought maca powder to try out in smoothies and in my yogurt. I mixed it into my yogurt and the smell and taste made me gag. I even tried to bake it into something and that didn’t work… had to give it away. Does the forever beautiful blend have a strong maca smell or taste?

You definitely want to use maca with other ingredients! I always blend mine in my smoothies and I can’t taste it ever! I definitely wouldn’t mix it in my yogurt, but you can’t taste the maca at all in this mix! I also have a ton of other fruits coating it, so that helps! 😀

1. Every time I try something DIY, I fail. I am totally inept when it comes to anything even mildly artistic or creative. Ugh! I will continue through the struggle!
2. Easter was good! Uneventful, the best kind 🙂
3. I used to always go in the WAY back of the class, but then other people would get in the way of the instructor and idk what I’m doing so I have to see her. I’ve settled for the middle, so I can creep on other people and the instructor as needed lol

I started my first little garden this past weekend! I picked up some houseplants for some indoor greenery and some sunflower seeds for outside 🙂 This weekend I’m going to pick up some pots for my own herb garden. I want to do vegetables but it’d be too challenging with the small amount of space I have + city rats!

I actually have a question for you, would you please share what kind of shoes you wear for running? I am a newish runner and all I wear right now are $30 athletic shoes from CostCo 🙂 and though they are nice, they aren’t what I need for the amount of running I do. Thank you in advance.

I would totally get fitted for running shoes! We all run differently and it’s important to pay attention to that! 🙂 I do love Asics though.

Have you ever had a DIY fail?
I am the definition of “DIY fail”, I can’t do anything good with my hands (focusing on simple tasks is very difficult – but I’m the best when you need to assemble furniture!)
How was your Easter?
I eated chocolate, went running on the beach (I have a race in less than three weeks) and cleaned my house (traditional spring cleaning)

Have you tried Trader Joe’s green goddess salad dressing?? The one in the salad section, not the shelves. It’s the same way–very few ingredients and can be used as a dip, dressing, etc. I recommend it!!!
