Good Morning, Everyone!
Before I get started with this recap post, I wanted to send my thoughts and prayers to Texas! Kyle and I donated to Austin Pets Alive and The Salvation Army. If you can donate, please do! No amount is too small. My hearts break for everyone dealing with this tragedy. It’s heartwarming to see the nation come together to help Texas.
On Wednesday morning, I woke up and took the dogs for a super long walk, worked for a bit, and then took a drive to the grocery store to pick up some things for the house. I tried this Zevia energy drink on the way home, and it was delicious! Sometimes the natural energy drinks are a huge fail, but I loved the flavor of this one. I’m excited to try the other flavors. For breakfast, I had watermelon, eggs, and peaches!
Earthfare always gets me in trouble. I picked up some cereal, protein powder, turkey burgers, fresh fruit, bread, and some other goodies.
It’s been a little over a week since making the switch to black coffee, and I love it so far. I’ve also been using protein shakes as “milk,” and I can’t believe it’s taken me this long to do it!
For lunch, I had an Applegate Turkey burger, pineapple, avocado, and toast. I have been eating Turkey burgers a lot lately. They are so easy to throw onto the skillet and an excellent source of lean protein. The only ingredient in them other than turkey is rosemary, a wonderful addition. When I do my meal prep next week, I’m going to make my own turkey patties with fresh herbs that I can wrap up and put in the freezer.
I ended up making it into a sandwich 😉
On Wednesday night, I headed to my favorite workout class. It’s thirty minutes of glutes & abs, and thirty minutes of Tabata. Tabata is one of the best workouts! It gets your heart rate going up and down! I’m already excited for tomorrow’s class.
Easy dinner: Turkey burger, veggie fries, and avocado!
The weather was perfect on Thursday. The boys (pups) and I took a really long morning walk and then headed back to the couch to work and cuddle.
Black coffee, pumpkin spice Cheerios, chocolate puffs, and protein milk for breakfast!
For lunch, I had a turkey burger, avocado, one fried egg, and cotton candy grapes. If you’ve never had cotton candy grapes, I highly recommend you find some! They taste 100% like cotton candy (hence the name.)
I met up with my parents on Thursday night to play tennis. The weather has been perfect in the evenings and tennis is one of our favorite ways to get active.
The drive home was beautiful.
I told you, I’ve been a turkey burger addict lately. I had broccoli and turkey burger for dinner. I had chips and salsa for my carbs while the food was cooking 😉 Leo was in bed waiting for me to cuddle up with a movie. He’s the cutest. What I love most about Leo is his personality. He is literally the silliest dog, and I feel like he does things on purpose to get people to laugh.
Friday = power cleaning day!
I spent three hours cleaning and doing other chores. My mom started this tradition when I was growing up. She always had Fridays off from work and would spend the day decluttering and scrubbing the house from ceiling to floor. As soon as Friday comes around, I’m in full cleaning mode. I weirdly enjoy it. I blast music throughout the house and go at it.
For lunch, I had Applegate chicken nuggets and GoVeggie fries. Those are the best store-bought chicken nuggets I’ve ever had. They don’t have a weird/fake taste.
While I had lunch, I wrote a blog about eleven life improvements I’ve been making.
Around five, I made a protein shake before the active evening. My shake had frozen raspberries, frozen peaches, water, and vanilla protein powder.
My mom’s birthday was on Friday, so Kyle and I met up with her and my dad to play tennis.
*Crazy short story for you guys* My mom is a twin, but they have different birthdays. My mom’s sister was born right before midnight and my mom was born after midnight. I just think that’s cool 🙂
Kyle and I picked up sushi for dinner, and then ended the night with a Dateline episode.
I woke up around six am to have coffee, walk the dogs, and head to the gym before taking off to Greenville. The HIIT class was incredible!
When I got home, I got ready, packed my bags, made a protein shake, and headed over to pick up my mom! My shake had chocolate protein powder, banana, and water.
I bought my mom and I tickets to go see her favorite musical, The King and I, for her birthday. She was so excited and so was I.
I couldn’t believe how gorgeous Greenville was. It’s a short drive from Charlotte, and I’m embarrassed it took me so long to visit. I can’t wait to come back with Kyle and the pups. It’s a very dog-friendly city.
We did some exploring. The walking trails were breathtaking.
We were ready for some coffee around noon. We headed to, Bex. It’s a coffee shop/Juice bar. I loved the rustic and vintage design.
We ordered two dark roast coffees and the Whimsical Leaves juice. The green juice had green apple, mint, kale, romaine, lemon, extra ginger, and mint. By far the best juice I’ve ever had.
The coffee was great too! Bex was the perfect place to stop for good coffee and good conversation. The young gentleman working couldn’t have been friendlier. We chatted with him the entire time.
My mom and I were so hungry around one, so we decided to split a salad at Rick’s Deli & Market. Our salad had chickpeas, avocado, romaine, cheese, balsamic, and grilled chicken on top. We wanted to split a meal because we had dinner reservations at six.
We spent the rest of the afternoon walking around the town. There were shops everywhere, so much art, and a lot to look at! I tried on that red coat and wanted it so bad, but I can’t pull myself together to buy a $200 coat. Just nope. I did find a cheaper red/black plaid coat online that I ordered! I can’t wait until it gets here!:)
My mom and I toasted to the weekend! Red blend & Champagne! We headed back to the hotel after our drinks, and got ready for dinner! My mom was so adorable in her dress!

We had dinner at Pomegranate on Main. We had the nicest waiter ever! I feel like Greenville is just the friendliest place I’ve ever visited.
My mom and I split a salad and entree. We ordered their house salad with balsamic citrus dressing and the roasted salmon. The entree had fresh filet of roasted salmon marinated in Persian and saffron, a side of basmati rice mixed with dill and lima beans, and roasted tomato on the side. Wonderful earthy flavors and seasoned to perfection. I loved that they didn’t overload their food with salt. It was amazing!
We walked around and did some more exploring! Greenville’s beauty is never-ending.
This is my favorite dress. It’ so soft and comfortable! It’s blue with gold polka dots 🙂 I got it from Loft a couple of months ago, but they are out of stock, unfortunately! I wish they had this in every color!
We stopped at a little health store to buy some dark chocolate for dessert.
Chocolove is my favorite brand of dark chocolate.
Ginger for the win! The ginger flavor is my fave!
We decided to get coffee at Spill The Beans. The musical was going to be a late show, so we needed some caffeine! I go to bed early, so I need it.
This place smelled like heaven when you walked in. They had fresh house-made waffle cones, ice cream, and desserts. And the addition of coffee on top of all the heavenly smells!
Again with the Greenville friendliness. It must be in the water there 🙂
This was another cute and rustic coffee spot.
My mom ordered a skim latte with vanilla, and I had their dark roast blend. It was so tasty, especially with my dark ginger chocolate! I love that dark chocolate is so rich that you only need a couple of pieces and you’re content.
We walked across the bridge to head over to the Peace Center for the show! We were so excited!
Greenville is breathtaking. The show was by far the best musical I’ve ever seen live.
I’ve been to over 25 musicals in my lifetime. The acting, the set, the voices, the dancing…just incredible! We were left in tears.
My mom and I woke up early, had a hotel breakfast, and headed out to walk the trails. My breakfast had fresh fruit and oatmeal.
Lesson learned: bring your own containers to hotels for their breakfast!
I wasn’t a fan of the hotel coffee (pretty sure it was Folgers), so I ordered a coconut milk cappuccino with an extra shot of espresso before our walk.
I had such a great time with my mom, and I plan on making more trips with her! She’s a blast 🙂 If you live in the Carolinas, I highly recommend visiting Greenville!
We got back around noon! I headed uptown to see Kyle and the pups! We took the boys for a walk around uptown during the pride parade. So many people! Charlotte is a great city:) Also, Leo grew out of his old Ruffwear! He is moving on up to the green. We sometimes call him “Lizzard” so it’s very fitting. Hooking the leash in front of the Ruffwear helps you control their movements. It’s really helped with pulling, especially with Grumples! We use leashes with extra handles, too.
Salad for lunch: Strawberries, blueberries, kale, romaine, mandarines, chicken, onions, cucumber, eggs, and tomatoes!
Kyle, Steve, and I headed to Freedom park to play tennis. We’ve been having the best weather.

Kyle wanted my chicken enchiladas for dinner so bad. He picked up all the ingredients, and I showed him and Steve how to make them. I’ve actually made this recipe into stuffed bell peppers, which is my favorite way to eat them!
I took the boys for a long walk Monday morning in uptown! I love this lil(big) guy 🙂
I headed to an ultimate conditioning class around noon, and it was tough! We did a latter workout, followed by sprint work. I shared the workout on my Instagram story yesterday, but here it is again!
We did ten rounds of each exercise and subtracted one rep every round.

I stopped at The Fresh Market after the gym to pick up some eats! My favorite organic turkey burgers, yogurt, fruit, chocolate, quinoa chips, ginger, water, and Daiya mac and cheese. I have been so curious to see what it tasted like.
My breakfast before the gym: 3 egg whites + 1 yolk, oats & cinnamon.
Post workout: blueberry coconut milk yogurt with fresh fruit.
I ended up going back to the gym with Kyle around six. I just went to walk the track while he lifted weights. There’s nothing wrong with getting some extra steps in! It was such a pretty walk to the gym, and it felt like fall outside.
For dinner, I had strawberries, Daiya mac & cheese with black pepper and garlic powder added, taco-inspired hummus, and organic turkey! The mac and cheese was tasty for being dairy free/gluten free/ and vegan. I was surprised by the outcome. It needed some spice added!
Kyle and I watched Bachelor in Paradise before bed. <3 I wish I could jump into the TV and match all the couples up myself!

I love the Zevia Energy Drink – the Mango Ginger is my favorite! They are also the right price! I find a lot of the organic energy drinks are more expensive than their regular counterparts, but not the Zevia’s. I haven’t even tried the other flavors because I am too hung up on the mango ginger! If you try any of the other ones please let us know 🙂

The last place I traveled was Nashville (It’s my favorite city besides Chicago) ..LAST YEAR. Since we were due for a getaway after a very stressful summer related to my mom having some health issues, my husband and I decided to toss out the “can’t afford it” excuse and book a 4 day mini-vacation to Door County, Wisconsin for Labor Day weekend! We’re staying at an adorable B&B and going to spend our time hiking, going to farmers markets, eating cherry pie, and drinking coffee. I couldn’t be more excited.
Lately I haven’t been able to put down my Siete Tortilla chips and salsa. The lime flavor goes FAST in my house. I just discovered this brand not too long ago and I love it.

My fiance is an energy drink fan and in hopes of getting him to stop drinking red bull, I started buying him the Zevia drinks. He also likes them! I tried daiya mac n cheese and I’ve added truffle oil which took it to the next level. Ha! The last place I traveled to was a lake house in northern Wisconsin, I’m going to a wedding this weekend, and I’ve been really into enchiladas lately. I haven’t tried your recipe though so maybe I will the next time I make them. 🙂

I make sure to eat mindful/healthy, workout, and be happy! I sometimes make sure I’m eating enough gram of proteins/carbs on high intensity days.

I grew up in Greenville & it’s quickly growing and a lot of people are coming here! I’ve been following you for years now and the places you have moved to and traveled to. I’m glad you finally made your way here & I hope you come back to Greenville soon!
We’re known for our food so any of the restaurants downtown are great! Ink & Ivy has good food and is a great place to grab drinks. The Trappe Door is a Belgian restaurant if you’re interested in that quisine I highly reccomend. Biscuit Head is also near downtown Greenville and it is an amazing place for breakfast, they also have them in Asheville which is where they started. If you or anyone likes to check out breweries Birds Fly South is in the Greenville area, is super dog friendly, and I highly recommend it.
Not sure if you’ve been, but I love to hike Table Rock it’s not too far from Greenville, has amazing views and I definitely recommend. Also check out the Greenville Drive baseball games if you’re ever back during the season! Have a great week!

Ahh Daiya! My fiance and I are both vegan (mostly plant-based… though we like some of the junk food! ;), and I had such high hopes for their mac and cheese, but both Daiya and the Amy’s vegan one just cannot beat the recipes we’ve found– I try to avoid oil in my cooking, so I’m basically in love with anything Minimalist Baker and the pumpkin mac and ‘cheese’ sauce from Oh She Glows. Because it’s pumpkin, it’s amazing with some cinnamon added in!!
I’ve never been to Greenville, SC, but I went to school in Greenville, NC! 😉 A couple of people I know from high school live in the one in SC, though, so I should probably visit the city at some point– it looks too cool to pass up!!

I went to NYC a few weekends ago for the night- it’s always fun but the city exhausts me honestly! Lol
I’m dog sitting for someone who lives only a few blocks from me, so other than lots of walks I have two family bbqs.
I love a fried egg on an English muffin with…American cheese. I know it’s overly processed and not good for you but it melts so well and tastes so yummy I can’t resist. Also TJ’s unsweetened mango slices. I have to carefully portion them out because I could easily eat a whole bag, ugh.

I feel so awful seeing all the pets left behind in Houston from the flooding. I know the Austin shelters are working hard to try and take some of those pets in and find their owners/new homes. Labor day we’re headed to the State Fair… it’s becoming a yearly tradition for us! It’s great people watching, a great way to get steps in, and a great way to counteract those steps with all the food bahaha
Nothing crazy on repeat lately, food wise, just lots of eggs! I love eggs. It’s also the week before vacation, so my fridge is pretty bare. I hate having to throw food away, so my fridge is always super empty before vacation!

Mother daughter dates at the best! Our favorite girls getaway is Vegas – shopping and FOOD galore, I think you and your momma would love it!
Last place we traveled to was Italy! So amazing :), itching to book another trip now haha. The travel bug is real!
Probably nothing crazy for Labor day, it gets so insane around here at all the camping spots and in the mountains, so we’ll just have some quality pool time on labor day, and lots of yummy summer treats!
Lately we’ve been making a HUGE batch of homemade granola every weekend, and then I’ve been having that with greek yogurt and blueberries every morning for breakfast. SO yummy, and keeps me full the whole morning!

1. Last place I traveled to was Atlanta, GA for a work conference.
2. No fun plans so far for Labor Day yet, though I might hang out with some girlfriends. The weekend prior is going to be crazy. We’re going to an Arts & Crafts festival (I’m sure I’ll be getting my steps in), meeting with another family for my brother and their kid to play, and I’ll be going to a movie and post-movie discussion.
3. My newest obsession food-wise has been the Simple Mills almond flour crackers. They have some really great flavors, and they even have a nut & seed based one that is super spicy and jalapeno flavored…
Out of curiosity, as a fellow Bachelor in Paradise fan, who would you match make if you had the power to? I’m slightly disappointed in how indecisive Dean is with his two ladies, but then again if I were in his shoes and had two attractive men to choose between I totally understand 😉

The las place I traveled to is France, two weeks ago. I went to Perpignan and Collioure in South of France. I think you would love it! Collioure is a small charming seaside town 🙂 When I was there, I reminded your visit in France and I thought about you then!
There is no Labor Day in Spain on 4th so I can´t relate, but I have some funny plans for the weekend. Dancing salsa and trying new restaurants 🙂
I have been repeating a lot salmon these days. Roasted salmon with avocado and broccoli, salmon in sushi, salmon with salad… A lot of salmon 😀

I have visited Southport, which is very close to Wilmington!
I spent some time in France and Marseille was gorgeous! I remember having a latte in the freezing cold on the beach. I went their in the fall.
You can never go wrong with salmon!

Great post and your photos are amazing. The king and I is fantastic! Greenville looks beautiful. The last place I traveled to was south Australia to see my family for 30 hours I went to surprise my cousin for her surprise birthday dinner. Labour day I am hoping to go to the beach ad have a family BBQ if the weather is fine. I am not eating anything on repeat but I can’t get enough of nectarine tea at the moment it’s seriously great hot or cold and is caffeine free, it also makes a great base for fruit punch. By the way your new hair style looks amazing! Hope you have a fantastic week!

I love Greenville! I went to college there, so I will always have a soft spot for the city. Looks like you explored some of the best things that Greenville has to offer and I can’t believe how much it’s changed in the last few years. Such an incredible place.
For Labor Day, I’m actually headed to Charlotte this evening so I can spend the next few days with my parents and family, which I cannot wait for. The last place I visited was probably Boston and Newport, RI. The later being such a charming small town in the NE!

Lol there were ten before the photo 😉 I usually just throw the portion that I want into the oven! That way you arent tempted to eat the entire bag! And they were veggie fries, so much better than the fried ones 🙂

I lived in Greenville 10 years ago and still miss it. Definitely check out Tsunami off Main the next time you go. Who knew the best sushi in the world was in South Carolina!

The last place I traveled to was Destin, Florida last month for a beach vacation! It was so nice and we had perfect weather!

Greenville is one of my favorite towns to visit! Next time you go, check out the mouse statue scavenger hunt! There are little mice statues spread around downtown! The scavenger hunt is just another fun way to get people to walk around and explore the town. So glad you and your Mom had an awesome time! 🙂

I wanted to ask you something a little more personal, it is ok if you prefer not to talk about it.
How do you manage to stay on track with your period while staying so active? I have a history of an eating disorder, very similar to yours, and every time I start exercising regularly and intensively (not too much, but I also love it!), my cycle goes off track and doesn’t come for a few months. Do you have any tips?

I’m so glad you finally came to Greenville! Our town is so rich with food, shopping, and culture that even 5 years living here I still find new things! If I may suggest a few things: Methodical Coffee is great for coffee. You will love that place! Also coffee underground is the perfect place for coffee and desserts. I just found a new healthy restaurant called Healthy + Hale, it’s pretty good! There’s also Caviar & Banana’s if you want that boujie feel.
I never heard of Bex before, so I need to scope that place out for myself now! Thank you for the post!
