Good, Afternoon! I hope your Monday has been fantastic so far!
I’ve had a very productive morning. Later on today, I am going to groom Grumples (and, yes! he loves it) and finish up the last load of laundry, and then put it away, of course. That is not my favorite part of laundry, but it does feel good to have everything clean and put away. I’ve been making it a chore to wash all the clothes on Sunday and put them all away on Monday. That keeps the laundry under control and also breaks up the dreaded process. I know I usually do my recap posts on Tuesday morning, but it’s going to be a busy one. I have to take Grumples to the vet for another biopsy on a new lump. I’m pretty positive it’s another non-cancerous lipoma (fatty tumor) because it’s common to get several after the first. I’ll keep you posted.
This morning was beautiful. I could hardly keep my eyes open last night, so a 9:30 pm bedtime had me awake at 6 am. It was a blessing because it was 68 degrees and breezy outside. I got dressed and took Grumples for a 1 1/2 mile walk, and then took Leo on his 1 1/2 mile walk. This is how I fit three easy walking miles into my morning every day. I do the same at night, and it adds up without it being too much.
When I got back from my walk, I fed the pups, made coffee, and had breakfast. I always have a light pre-workout breakfast and hour before class. I had 1/2 whole-grain waffle with peanut butter, a small banana, and two egg cups. I didn’t take a photo because nothing made it to a plate.
I headed to the class, and it was tough as usual. I look forward to my Monday morning HIIT workout. I love the instructor, and her workouts are killer. We did so much today and burned out almost every muscle in the body. My arms and legs are on fire. I will most likely go back to the gym tonight with Kyle to do some cardio and abs. Cardio helps me with the lactic acid buildup that I know will be attacking my muscles in the morning.
The past couple of weeks, I’ve been prepping food. I didn’t think this was important for staying on track until this weekend when I learned the hard way. I don’t necessarily plan meals or portions out, but having food prepared helps me make healthier choices. I could easily go for a bowl of cereal or pancakes for breakfast, but knowing I have egg cups, Greek yogurt, and other foods prepared, I go for those. Because I didn’t feel like cooking and I had no food prepped, I had animal crackers, cereal, and peanut butter for dinner on Saturday night. I woke up feeling bloated and motivated to start prepping meals. Also, there is nothing wrong with eating cereal for dinner. 🙂
I already had some ingredients at home like Greek yogurt, almonds, multi-grain waffles, natural no sugar added nut butter, and eggs. So I just picked up what I needed to prepare some easy meals. I bought steamable broccoli, green beans, all-natural skinless & boneless chicken breast, quinoa, blueberries, and garlic chicken marinade (because plain chicken is gross.)
For the chicken, I sliced the giant breast in half, added to a greased baking pan, and topped it with garlic powder, black pepper, onion powder, and Herb & Garlic marinade. I baked the chicken for 23 minutes at 380 degrees.
I also made egg cups, cast iron green beans (seasoned with sea salt, black pepper, garlic powder), chopped pineapple, and tri-colored quinoa.
I put them in containers, and they’re now ready for lunch and dinner! I usually make enough for four days worth of meals, so I can get creative and treat myself on the other days. I’d get bored if I stuck to the same meals.
And next week, I’ll change up the meals and share another food prep post.
Some of you were asking about my pre & post-workout drinks that were in my Instagram story this morning. The clear bottle is for my pre-workout, which I use IdealLean. The second bottle is filled with Amino post-workout & recovery.
For lunch today, I threw my prepped food onto the plate. Easy as that 🙂 I had 1/4 cup quinoa, green beans, baked chicken, pineapple chunks, and unsweetened matcha green tea. Yes, we see you, Grumps!
I left the last recap post off on Wednesday morning. I skipped out on the early workout and decided to get some things done at home. For breakfast, I had four egg cups with a sprinkle of cheese on top. These egg cups are game-changers. I used to have to make omelets all the time, and I love the convenience of having them already made.
For lunch, I had iceberg lettuce with goat cheese and Greek dressing and a turkey wrap. The turkey wrap had avocado, cucumber, bell pepper, shredded lettuce, Applegate smoked turkey slices, yellow mustard, and a multi-grain Flatout wrap.
I started on the frame project. I am using four colors to create fun paintings for the inside of the frames. I am not going to paint the outside because I love the way the dark wood brings out the bedroom furniture. My guest bedroom is looking so amazing, and I am excited to reveal the before and afters once the headboard is done being built.
I was completely restless on Wednesday night, so I turned my rest day into a non-rest day. Sometimes planned rest days are better left unplanned. I have a love/hate relationship with my Wednesday night instructor. I love how tough she is (and she knows it), but I hate how sore she makes me the next day. Our workouts are tough, and you have to prepare yourself to kill your glutes. I’m also a huge fan of the 30 minutes Tabata we do after the first 30 minutes of class. I actually didn’t like the class the first time I took it two months ago. I thought it was too hard, and I felt like I wasn’t in shape enough to do it. Now, I’ve doubled my weights, hardly ever stop, and I look forward to her classes. Sometimes, you have to stick something out, deal with the pain, and then you’ll find yourself proud and more motivated to go back each time. Two months ago, I struggled with 20 knee pushups, but now I can do 20 regular push-ups at full speed.
Kyle and I made stir-fry together after the gym. I posted the recipe here 🙂 This is also great for meal prep.
I woke up early on Thursday morning, walked the pups, and then headed out for a three-mile neighborhood run. This was my “recovery/rest” day. It was burning hot outside, but I managed to run the three hilly miles at a 9:45-minute pace, which is pretty good considering I don’t run much anymore.
For lunch, I had leftover stir fry and cottage cheese.
After finishing up my work on Thursday evening, I started a new book and enjoyed some almond milk mixed with protein powder. This book is really good so far!
I spent Friday morning at the pool! It was gorgeous outside. My mom had Friday off, so we hung out a bit, watched a movie, and had coffee.
These boys crack me up. Off to the gym!!! (Dropping them off at home first) I had a kick-ass 45-minute workout on Friday. I wrote it all out on the way to the gym (Kyle was driving), and I was excited to try it. I love creating workouts and leaving the gym in success sweat. This workout looks simple, but it got the heart rate going, the sweat flowing, and the muscles tearing. Even the 5lb weight exercises were burning.
We decided to make Flatout Pizzas for dinner. Can you tell we love these? Mine had GoVeggie vegan cheese (i honestly love the way it tastes) pizza sauce and turkey pepperonis. I had a side salad with spinach, kale, goat cheese, alfalfa sprouts, and Greek dressing on the side.
Kyle’s Flatout had buffalo sauce, mozzarella cheese, blue cheese crumbles and grilled chicken.
I woke up 5:30 am on Saturday. I wanted to get the dog’s walks in, have some coffee, and relax before heading to Boot Camp with Meighan. On my way to the gym, I had a multigrain waffle with peanut butter and a small banana. This is my go-to before tough workouts. I also had two bottles of water already downed by 8 am.
After running ten laps around the track, we went into our station exercises. There were stations set up all around the gym, and we swapped workouts every time the timer went off. This would be a good workout to do by yourself at the gym as well.
After we had completed the stations, we started our new rounds of workouts. After the cardio/ab round, we stretched and DONE!

Meighan and I decided to head to some stores and then grab a late brunch. We went to one of my favorite places, Le Peep.
I ordered the egg white omelet with goat cheese, green and red bell peppers, onions, spinach, tomatoes, and bacon. I also had a side of fresh fruit.
I didn’t order coffee at breakfast because I knew we planned on going to Brakeman’s, a new coffee shop in Matthews.
It’s such a cute little coffee house surrounded by a white picket fence and sunflowers.
There is indoor and outdoor seating.
I loved the modern & rustic decor.
I ordered a small cappuccino with skim and an extra shot of espresso.
SO CREAMY & DELICIOUS.
They have so many spots to sit, and it looks like the perfect place to bring your laptop or friends. They were very friendly too! I will have to split a dessert the next time I go.
I stopped at World Market to pick up my favorite coffee blend, and a couple of my favorites. Their lemongrass sparkling water is so refreshing. My weakness in life is dried fruits. When people ask what your last meal would be before the world ends, mine would be dried fruits, peanut butter, Oreos, and pizza.
I got home around 4 pm, and it started to pour down rain. I took that as a hint to make popcorn and watch a movie! I decided to try out the new show Big Little Lies on HBO, and I was sucked in. I watched the entire first season in six hours. Even Kyle go sucked into it. I highly recommended this show! I made air-popped popcorn flavored with garlic powder, sea salt, onion powder, black pepper, and cayenne pepper.
Grumples and I woke up around 6 AM on Saturday Sunday morning. It was his birthday! We went for a three-mile walk together, and then came home to have coffee and breakfast. I made scrambled eggs with a side of peaches and cottage cheese. I love cottage cheese mixed with my eggs and my peaches 🙂
I had about thirty minutes before my mom was stopping by, so I reorganized the entire pantry closet. I hadn’t organized this since moving into my home in December. I also organized the coffee/tea cabinet and dish cabinet. I have about four more to go. The top shelf has appliances, the second shelf is filled with mine and Kyle’s protein powder and pre/post workouts, the third shelf has snacks, and the fourth has all baking items. My eyes keep going back and forth to the photos because of the difference.
We took Grumples and Leo to Canine Cafe (in my Charlotte list) to get him some toys, treats, and a birthday cake! We did this last year, and he loved it.
After we had left the cafe, we headed out to play in the backyard.
The boys are OBSESSED with bubbles.
They were having so much fun with my mom. If you haven’t tried bubbles with your dog yet, you have to! It crazy because some dogs do not react to them and some go nuts.
After they ran around for an hour, we got ready for Grumples’s cake!
I was in need of coffee at this time too.
This was Leo’s first birthday party, and he had no idea what was going on. Grumples has been through this six times now! Look how cute they are! 🙂
They each got a slice of the cake, and they devoured it within seconds! They were so happy, and I loved every second of it. I can’t believe Grumples is six! He’s been apart of this blog since the beginning.
After a fun afternoon with the pups, I headed to a kettle bell class. This class is an hour long and filled with cardio and kettle bell workouts. I’m not a huge fan of all the dancing involved, but it’s a good workout. I was drenched in sweat when I left.
For dinner, we made garlic grilled cheese sandwiches on multigrain bread with Havarti & Gouda cheese. We dipped it in leftover pizza sauce. 🙂 We finished the night with a long dog walk and two episodes of Naked & Afraid. This was the perfect end to Sunday!

Meal prepping is so useful. I literally just bought these glass Anchor containers from Walmart for this, and proceeded to buy pre-made lunches on my way back from this weekend’s trip without thinking. 😐 next week, I guess!
I had this one teacher for a Children’s Literature class in high school who everyone said was really hard and didn’t particularly like, so at first, I was intimidated. Both of my parents had him when they were in school, and they said he was a good teacher, but never really expanded on that. At first, I thought he was a jerk, but then I realized that he actually just wanted us to be active participants in the class (which was just one huge discussion, really) and to see further than what might just meet the eye, and it turned out to be a pretty cool class. I even switched my major in college to elementary education and took another CL class, and while that didn’t turn out to be my job, it made a pretty big impact.

Crazy how we can already think we don’t like a teacher based on the opinions or our first impressions. Even when they are doing their jobs, we feel like we are entitled to some kind of treatment, and it’s wrong on our part! I had an English teacher give me a D on a paper that I work SO SO SO hard on. She had me work on that paper over and over, and I respected her for that. She genuinely wanted me to be better. She didn’t give me the grade and call it quits, she made me improve. Love when a teacher can make an impact on your life!

I am SUCH an early bird. Even on the weekend. But it’s actually my favorite time of the day! My boyfriend sleeps in until 8:30 so when I get up at 6:30 it gives me a nice two hours to myself to have my coffe and read or get some work done and then I sneak back in and snuggle with him until he gets up ?

Happy birthday to Mr Grumples!! He is such an adorable dog! It was my dog, Mia’s 6th birthday on Sunday, every year I take her for a long walk to the lake for a swim then a wash and groom, new toys and steak for dinner.. she brings so much joy into my life so I try to make sure her birthday is special, my parents even came over just to give her a new toy. I am always an early bird, i try to make it useful like do the washing or do baking/meal prep. I fully under stand not liking the instructor, I use to avoid Mondays at crossfit just because of the instructor three months later I really like his classes, and he’s helped me with my lifting form. Isn’t it crazy how we can get these impressions of people but latter on realise how great they are. Have a fantastic week!

I am definitely an early bird! I get up around 5 every day, so when the weekend comes, my “sleeping in” is until about 630 if I didn’t do anything the night before! I actually slept until 815 on Sunday and felt like my entire day was over haha

You should get a dehydrator! We love dried fruit/veggie snacks so its the best thing ever!
Also, do you wear flat bottom shoes when doing squats? Just curious because I have always been advised by different instructors to not wear my running shoes during squats amd other weight bearing activities because the different levels of tread and supports in them can mess up your alignment with hips/back. Thats why power lifters/crossfit shoes are more flat on the bottom soles.

I do have one!;) It just doesn’t do it like the dried fruit I buy at the store. You know, the unhealthy kind lol But I do love dehydrating fruits!! In the fall, I make apple chips and cinnamon pear chips!
I usually wear my running shoes to classes that we are going to be running a run and doing a lot of sprints. If it’s just weights, abs, and non-running exercises, I’ll wear my flat training shoes. I’ve actually noticed that when I wear my Nike shoes to train in, I’m in pain. I’ve been looking for better shoes. The Nike ones are so bad (cute but ouch). I’ve never heard of that theory, but thanks for pointing that out!

What do you do for your pet’s birthday?
This year I could be at home to celebrate our two dogs’ birthdays, so I brought them new toys. They have extra cuddles, and I have in my phone some cute videos of my sister and I singing “Happy birthday” and giving them their gifts

Oh, yes. When I went to military academy, I was terrified by my instructor at the beginning . And, after four months of efforts, I realized how great she was. She found the right worlds to help me get better after a little nervous breakdown during the final exams.

1- Tell me about the consistency of the veggie cheese? I tried Daiya on pizza and could not take the gummy consistency. What is the consistency of the cheese you had on your pizza?
2- As a fellow doodle mom, I am amazed at the donut toy. How did it hold up? Our doodle destroys everything so we stick to Nylabones, black Kongs and Orbee toys. Do you know of other durable ones?

The go veggie literally tastes like mozzarella! You cannot tell the difference. Its NOT gummy or weird at all. It’s definitely cheese consistency. You wont be disappointed.

For student standards I am such an early bird! I currently get up at 7 on weekdays because I like having a relaxed start to my day instead of rushing it.

I have no idea when my kitty’s actual bday is, but I’m completely obsessed with her, so basically every day is her birthday.
I literally can’t sleep in, so I get overly excited when I wake up on the weekends and see that it’s 8 or 9 and not 6!
That has happened SO many times with yoga instructors! I’m such a person of habit so I have a hard time being open to new instructors, but I need to quit that because I’ve found some GREAT ones I thought I didn’t like!

That is too funny! My parents ALWAYS woke up at 5 am when I was a kid and drank coffee and watched the news. I’d end up getting up at 6 am and my mom would let me have sips of her coffee and I’d start my day just like that lol I think that’s how I formed my routine.

Hi Taralynn, I have been reading your blog for awhile and love your recipes and workouts. I also suffer from runners knee and I wanted to ask if you modify your gym class workouts at all? I can’t handle box jumps, and sometimes even squats bother me. I’d love to know if you have any advice. Thanks!

You know, I actually don’t experience any runner’s knee pain during circuit training. I’m actually shocked. I make sure to pay attention to lunges and squat form! If box jumps hurt, try doing burpees instead. Instead of squats do floor leg lifts to work the same muscles without the impact!

Really thankful that you are going to post more of the food prepping because I just now am starting to try to food prep and trying to come up with different items so I don’t get bored is definitely the hardest part. As for the birthdays, 3 of my fur babies have their birthdays in the fall, pretty much the same month and only one of them was born in spring so I usually do a little joint birthday party for all of them to make it easier, everyone gets a new toy and some kind of treat, and also some yummy chicken for doggos and tuna for the kittys. I try to be up by 8 am every morning and by try I mean my puppy will scream in his kennel until I get up to feed him and let him go potty right at 8 am…..every……single…..morning, no matter what time mommy got home from work.

hahahaha Leo used to have us up at 5 am every morning! Now, I’m the annoying one and waking the pups up at 6! I’m like ‘”LETS GO ITS WALKING TIME!!!”

Hi Taralynn I am starting to meal prep as well. How do you keep your chicken from being tough and rubbery? I made this last night, and mine turned out a bit rubbery. Any tips? Thank you!

Did you bake yours? Sometimes if you overbake chicken it can get that way! Invest in a thermometer! & store the chicken breast in closed containers in the fridge!
