I have no idea where the week went. I’m heading to the gym in thirty minutes, but before I leave, I wanted to blog one of my favorite go-to recipes for a healthy dinner. I make stir-fry at least once a month because it’s quick, delicious, healthy, inexpensive, and makes the best leftovers! It’s high protein, high fiber, low carb, and filled with nutrients. You can customize it by adding different types of protein like shrimp, steak, turkey, sausage, or even tofu. You can add all kinds of fun vegetables that you enjoy.
Chicken & Vegetable Stir Fry
Ingredients
- 3 Large Bell Peppers (green & red)
- 1 Medium Yellow Onion
- 1 Cup Carrot Chips
- 1 Cup Snow Peas
- 2 Cups Fresh Broccoli
- 2 Tbsp Olive Oil
- 3 Lbs Chicken Breast (skinless & boneless)
- 1/2 Tbsp Garlic Powder
- 2 Tbsp Honey
- 3 Tbsps Low Sodium Soy Sauce
- 1 Tsp Black Pepper
- 1/2 Tbsp Onion Powder
- 1 Tsp Apple Cider Vinegar
Instructions
- Slice the bell peppers and onions. Heat a frying pan or cast iron skillet with olive oil. Add all the vegetables and saute.
- In a separate pan, add the diced chicken breast and one tablespoon of olive oil. Stir every three minutes until completely cooked. Add one tablespoon of soy sauce to the cooked chicken.
- Drain the juices from the chicken pan and add the chicken to the sauteed vegetables. Turn heat to low, and add the garlic powder, black pepper, onion powder, apple cider vinegar, soy sauce and honey.
- Serve with rice & sweet chili sauce!
Notes
Stir-fry is great for meal prepping. It heats up well, it’s even good cold.
I always double up on the chicken! Sometimes, I’ll mix in steak.
We love stir-fry with rice and sweet red chili sauce.

Why do you add soy sauce to the cooked chicken just to drain the chicken in the next step?

When the chicken is cooking, it seeps in and adds more flavor. I drain the juices because the stir fry will be “watery” if you don’t. That is why I add extra soy sauce once everything is combined.

I’ve tried chicken, ground turkey and shrimp stir fry and I think shrimp is my favorite! I use frozen stir fry veggies on nights when I don’t have time to chop/prep.
Another favorite quick dinner recipe is ground turkey lettuce wraps. They’re similar to PF Chnags except with a lot less sauce (sugar!). I usually use your sesame green beans as a side for this meal. Quick, delicious and healthy!

Definitely might have to make some stir fry soon! It’s my favorite 30 minute meal, so quick & easy (I think I said that in my comment on your last post haha). I usually do chicken, but sometimes I’ll do steak if I happen to pick it up for some reason. Sometimes to switch up the flavor I add about a quarter cup of orange juice into the sauce and red pepper flakes with some cornstarch to thicken it up. So good!

I love adding steak in there too! Red pepper flakes are so good if you like the spice 🙂 & I bet it tastes like orange chicken with the orange juice!!

I also make stir fry at least once a month. It’s great for leftovers and so easy to use whatever you have in the fridge.

I have to say .as a Chinese we basically eat this kind of food each and every day.u have no idea how we good at this!lol If u enjoy this style .u should try Chinese food .most of us can make this and really good at this.sometimes we also try sandwich and salad like u do

This looks delicious! I do a mini version of this (I think it’s mini since i only use two veggies ?) with asparagus and mushrooms and we use quinoa instead of rice. I LOVE to add shrimp to a stir fry.

I loved this recipe it’s so easy and simple I made it a few weekends ago for dinner and wanted to make it again I have spent 40 min looking for this recipe because I really enjoyed it making sure to bookmark. My husband isn’t too crazy about Chinese takeout but I do and I’m not very familiar with Asian cuisine so this was great for a first attempt at it and he loved it too even though he was a little hesitant on it but he’s excited to have it again too!
