Happy Saturday!
I was supposed to go out and explore estate sales this morning, but Grumples is still sick 🙁 I decided to plant myself at home and do some gardening, or some other projects around the house. I also thought it would be a very good time to blog about some delicious cookies I made last week, while I’m cuddled up next to him.
Coconut and almond are one of my favorite combos. I could eat macaroons every day if it were healthy! I decided to make a macaroon inspired cookie (without the chocolate) to help curb the cravings. AND THESE WERE DELICIOUS, ESPECIALLY WITH COFFEE. <– you knew that was coming.
If you want to get fancy, you could dip the bottoms of these cookies in dark chocolate.
Ingredients:
*1/2 Cup Coconut Flour, *1/2 Cup Almond Flour, *1/2 Cup All-Purpose Gluten Free Flour, *1/3 Cup Unsweetened Shredded Coconut, *1 Teaspoon Baking Soda, *2 Teaspoons Baking Powder, *1/4 Cup Honey, *1 Packet Stevia, *1 *Teaspoon Vanilla Extract, *2 Teaspoons *Almond Extract, *2 Large Eggs, *3 Tablespoons Almond Milk *1/4 Cup Coconut Oil, *Melted, 1/4 Teaspoon Sea Salt, and *Sliced Almonds for the Top!
Preheat the oven to 350 degrees.
Combine the almond flour, coconut flour, all-purpose flour, baking soda, baking powder, shredded coconut, sea salt, and stevia together in a large bowl.
In a separate bowl, mix the coconut almond extract, vanilla extract, almond milk, and eggs.
Pour the wet ingredients into the dry ingredients, and combine.
Mix in the coconut oil and honey.
Grease a baking sheet. Drop tablespoon sized dough onto the baking sheet. You will need to use your hands to form the cookies.
Drizzle a teaspoon of honey on top, a sprinkle of almonds and sea salt.
Bake for 17-19 minutes. The bottoms of the cookies will be slightly brown. Just keep an eye one them because all ovens cook differently. This recipe makes 22 tablespoons sized cookies.

These cookies look delicious! I recently just made some breakfast cookies with leftover bananas that tasted great, they just weren’t that pretty. But they were GF and vegan! Sometimes banana cookies look ugly because of the brown color, but they DEF taste awesome!

I cannot stand the feeling of either almonds or coconut in my teeth (but I love the flavor of both, I’m weird about the texture of things in my teeth haha), but these look really good!

Hahaha that is so funny. Textures have never bothered me. But the combo of the two is so delicious. Let’s hope you won’t get the weird texture with the flavors in a cookie form!

SO GOOD in almond milk. The coconuts flour tends to make things a bit dryer, so it’s a good combo with milk!
