I am currently working on my weekly recap post. I skipped it on Friday because I wanted to share my Savannah weekend with you all! Before I get to my recap, I want to post a really easy and delicious dinner recipe for you! I made an awesome dinner on Friday night before we headed off to Savannah. I prepared baked chicken with a homemade honey pineapple glaze topped with sautéed onions and garlic, roasted red potatoes with brussels sprouts, and a side spinach kale salad mixed with goat cheese, balsamic, sunflowers seeds, tomatoes and homemade croutons. This meal was really simple to make and took less than an hour! Its meals like this that make me want to cook at home all the time! This baked chicken was probably one of the best I’ve ever made.
I always start with the potatoes because they take the longest to cook! I used small red potatoes and softened them by boiling them. You can speed up the process by microwaving them instead. Once they are fork tender, remove them from the pan and slice them.
Slice brussels sprouts and add them to a baking dish with the potatoes. I flavored them with garlic powder, sea salt, black pepper, onion powder, dill weed, italian seasoning, one teaspoon balsamic, olive oil and two teaspoons of honey.
Bake at 375 degrees for 45-50 minutes. Flip every 12-15 minutes.
I sautéed garlic cloves, green onion and sweet onions to top the chicken with.
I sautéed them in olive oil, honey, black pepper, low sodium soy sauce, italian seasoning and balsamic.
My glaze had: *3 tablespoons of pineapple juice, *1 tablespoon low sodium soy sauce *2 teaspoons honey, *1 tablespoon apple cider vinegar.
Add the glaze to boneless, skinless chicken breast and sprinkle garlic, italian seasoning, black pepper, onion powder and dill weed on top.
Bake at 350 degrees (minutes depending on how big your chicken breast is)
Take the roasted brussels sprouts and potatoes out once they are golden brown around the edges.
Top the chicken with sautéed garlic and onion.
I also made a side salad! I massaged kale and spinach with a balsamic dressing and then topped it with chopped tomato, sunflower seeds, and crumbled goat cheese.
I made my own crouton slices too. I added sunflower oil to whole grain bread and sprinkled garlic on top and then baked them on an oven rack while the chicken cooked. Once they were crispy, I added them to the salad!
The best part about this meal was coming home to the leftovers after the trip! I’m huge fan of leftovers.

Lately all I’ve wanted to do is cook! Besides on Fridays after work I’m exhausted and want to go home. I just bought a cast iron skillet at World Market yesterday and I want to try some new recipes with it since I’ve never actually cooked with one before!
I’m all for leftovers. I made feta & basil chicken with rice on Monday night so I can have it for lunch for a couple days too! That’s my favorite way to have chicken, too! I love the tang from the Feta and the freshness of the basil!

1. Depends. Sometimes I need a night out (and used up all my groceries earlier in the week lol) so I’ll go out, but others I just want to stay in and relax. Just depends on how the week went.
2. I love leftovers! I like to make big meals and then freeze them in individual portions so that I can grab a quick lunch when I need it. It’s hard to cook every night of the week, so leftovers a must.
3. It’s so hard to beat roasted chicken with mashed potatoes and gravy, it’s one of my favorite comfort food meals. Also, chicken salad sandwiches are so simple and yummy as well.

1. I feel ya! I used to ALWAYS want to go out on Fridays, but I’ve really enjoyed eating at home lately and dining out on Saturday nights.
2. Leftovers are everything! I don’t understand how some people can’t eat them. Sometimes I think they taste better the next day!

Exactly what it sounds like 🙂 Massage the lettuce with the dressing. It takes away the bitterness! Really use your hands and squish it all together.

Quite often I spend my Friday evenings in the train to get home and see my family. But when I stay at one place I love to cook togehter with my friends or parents.
Are you a leftovers person?
Definitely! I often even cook things that need longer such as rice or potatoes for several days ahead so I save time making the following meals.
What is your favorite way to cook chicken?
I am vegetarian so I don’t eat chicken. But my family loves to bake it in the oven.

I’m a vegetarian like Vanessa. It’s not hard to get protein without meat! You can find PLENTY of protein in eggs, dairy, grains, beans, and veggies (for example, spinach packs a protein punch!). Most people eat much larger servings of meat than they should, anyway!
The thing I have to watch is my iron intake. It can be on the low side of I’m not being mindful.

1. I almost always prefer to go out to eat on Fridays because I force myself to pack my lunch and eat at home all week. At the end of a long week it’s so nice to take a break! Although sometimes I’ll throw together something quick and easy.
2. I love leftovers. since I live alone I like to cook once and eat multiple times, so my lunches are all leftovers and I repurpose them so I don’t get bored!
3. It’s boring but I love just baking it with simple seasoning. I don’t think I’ll ever get sick of chicken. My mom does a French roast chicken that I love but I haven’t mastered it yet. Might have to try your glaze though!

Leftovers are my favorite. I think food tastes better after it sits for a day. If I cook a huge meal I usually don’t care to eat it when I am done for some reason so leftovers are always the best!!
I love grilled chicken either on a gas grill or a charcoal grill with a little hickory wood chips or any other wood chips we have around!!

This looks really delicious! I love leftovers for lunches the next day. If I do takeout i like doing it on Fridays or the weekends for a little break since i cook every day for every meal during the week.

1. Friday nights are for going out!! I’m all about cooking during the week and making great meals, so by Friday I want someone else to cook for me!! Plus it’s the weekend so I like to indulge a little….which includes a nice glass of wine or cocktail out at a restaurant!!
2. Certain leftovers are GREAT….while others not so much!!! My favorite thing to do is take leftovers and make something new! I just took leftover buffalo chicken dip and made it into a buffalo chicken pizza! It was AMAZING!!
3. Chicken is my all time favorite go to meal. I eat it at least 4 times a week…lunch AND dinner!!! I think grilled bbq chicken on the grill is hands down the best way to cook it! But I also love sautéing, roasting, or lightly breading it. It’s so versatile!

1. I like to go out or do leftovers on Fridays. I’m so exhausted after the workweek that I just want to veg.
2. I’m big on leftovers. I always plan my weeknight meals so there will be leftover for lunch the next day. sometimes the leftovers taste better than the original meal. i’ll make something like a whole chicken or a roast on sunday and then make as many meals as possible out of it. I once got six meals out of a whole chicken I roasted. it’s fun to see how creative you can be.
3. I pretty much love chicken any way. soup, casserole, baked, roasted, grilled…chicken parmesan is my favorite meal.

1) I prefer staying home alone, even though I have a boyfriend, hahaha. Fridays are kind of my “me” days, I take the occasion to clean up the house and then relax watching a series after having cereals and almond milk for dinner 🙂
2) I don’t really cook so I’m not a leftovers person, but I’d love to be, I mean… being able to use everything you buy and not throw food away is something I admire and would like to do.

This meal sounds amazing! I especially want to try the kale salad and the baked chicken! I like the fact that it all is easy to prepare.
I am not a huge fan of cooking, however, I do prefer it over eating out. I have control over what ingredients I use, and know how many calories are in my meals!
I am a leftovers person! I’m not a picky eater so leftovers are fantastic.
I prefer grilled chicken, but sometimes I feel that baked chicken holds in more flavor of the sauce/seasonings. 🙂

Thank you so much. I don’t necessarily meal prep, but I like to make food and eat all the leftovers though out the week. I never have a set schedule, so I’m always afraid I’ll meal prep and let it all go to waste. I do make sure to keep fresh fruit cut up, cut up veggies and other munchies that I know I’ll eat.

I have to say I love cooking, but sometimes Friday’s is the day I go out with friends or the fam! But during the summer, Friday’s are always a great night to grill and enjoy the nice weather outside! I HATE wasting food and always say yes to leftovers. Sometimes my favorite meals are the ones made with random combinations of leftovers! I love grilled chicken because I love when the edges are crispy, but the middle is still nice and juicy!
I love Brussels sprouts and this post makes me want to make some soon!!!!
