Luna’s Living Kitchen: Arugula Harvest Salad

I was craving some Luna’s Living Kitchen Monday afternoon. If you live in or around Charlotte, you need to try this place out! It’s a raw vegan restaurant. I ordered online and headed over to pick it up. I always get their Harvest salad; it’s freakin’ delicious, and their homemade dressing is pretty ballin’ as well. They know what they’re doing over there!

The arugula harvest salad comes with “tangy, savory arugula salad tossed in a maple-mustard vinaigrette, topped with red cabbage, spiraled root vegetables, avocado, pear, caramelized pecans, pumpkin seeds, raisins, and homemade cashew basil cheese”

They forgot the cashew basil cheese, but I’ll forgive them this time.

Their salads are giant, which I love, because they fill you up all day. The vegetables are always fresh and ripe. I also had their tree of life juice with my lunch. I’m obsessed with the jars that their juices come in. I like to keep them for to-go drinks and around the house.

    I have been following your blog since back in your “sugar free jello with shredded carrots” phase and I wanted to let you know how inspiring your recent posts have been for me. I have struggled with restrictive eating and over-exercising for awhile now, and seeing you “loosen up” and enjoy life has helped me tremendously in my journey to overcome my own disordered eating thoughts. Being a long-time follower, I know you face a lot of unnecessary criticism and negativity, but I hope that you never let those comments truly get to you. You have been an inspiration to me and I think you are more beautiful now than you have ever been.
