Tonight was a throw everything leftover in the house together and hope it turns out great night. I got back into town after a meeting around seven and was super hungry. I was going to make turkey burgers but wanted to make something a little bit more flavorful with more ingredients. I had a lot of vegetables to use up and so I pulled those out of the fridge too. I also reached for the pine nuts and quinoa in the cabinet. I put pine nuts in my turkey burger doing a Blue Apron once and now I’m hooked. That company has taught me so much! It was time to make a juicy vegetable quinoa turkey burger!
I also had some mint leaves, cucumbers, limes, and Greek yogurt to use up. I decided to make a lithe creamy salad to go with my rice and quinoa turkey burgers. I made a lemon one with Blue Apron as well and I wanted to try it with lime.
Ingredients For Burgers:
(inspired by blue apron)
1 cup cooked quinoa
1/4 cup pine nuts
1 lb ground turkey (or beef)
1 egg
1/2 tablespoon garlic powder
1 cup sautéed red onion and carrots
1 tsp onion powder
2 Tbsp fresh parsley or
2 Tbsp fresh chives
1/2 tsp salt
1/4 tsp pepper
Mix all ingredients together in a large mixing bowl, form the turkey burger mixture into six patties, and throw them onto a frying pan with 2 tablespoon of olive oil.
-You could also bake them or grill them.
The cream sauce had juice of half a lime, 2 large cucumbers, 2 tablespoons fresh mint leaves, 1/2 cup plain greek yogurt! It was really good paired with the burgers and rice!
The throw it all together dinner worked out great! I’m excited to eat the leftover burgers with my salad tomorrow!
By the way…the Bachelorette’s ending last night…they have got to stop doing the “to be continued…..” ugh!

Ummmm… YUM! I feel like we all usually have the same turkey burgers whenever we do have them.. this looks like such a great alternative while still being able to have our burger…

Tara. You’ve got to be kidding. Remember a few weeks ago when your readers could get free stuff from Blue Apron due to your link? Some of us received this meal. You did not just throw this together with leftovers. You got this recipe from blue apron. It’s almost exactly the same thing minus a few substitutions. You are getting paid to do this. What a blessing!! It’s a shame you feel the need to take credit for other companies’/people’s recipes. It’s actually quite disgraceful. Maybe not in this setting, but in college or work you can get kicked out of FIRED for not giving credit where due.

I’m NOT getting paid to do this and it’s not a review. I made these burgers last night with the stuff that was in my fridge (not blue apron) and said they were thrown together (which they were) but I got some ideas from Blue Apron. (which was stated in the post)I mentioned them helping me a lot and inspiring me. That is the purpose of blue apron, to teach you how to throw new ingredients together and cook with things you usually wouldn’t. This is not the same recipe. I don’t know what else you want for me. It’s just a recipe, inspired by blue apron which was mentioned!

This looks perfect for a fast dinner at home- I’m totally making the cuke salad for my next potluck- looks amazing and I love salads like that because it’s good even for people with gluten sensitivities and stuff- which can be hard to plan for nowadays at potlucks.

It’s a fact that recipes cannot be copyrighted, so I’d venture to guess even Blue Apron got the inspiration for this recipe somewhere else. And if you used the recipe, you cooked the meal, AND you gave credit to your inspiration then you’ve done nothing wrong! Keep on keepin’ on 🙂

Have you ever tried the quinoa/black bean burgers from Trader Joes? They are so good. These look delicious, but the TJ ones are great to have in the freezer when you don’t have time to cook.
