I had so much fun a couple of days ago hanging in the backyard by the pool, spending time with the pups and getting some work done for my new blog shop! After winding down, and showering all the chlorine out of my hair, I made dinner! I was craving seafood and couldn’t decide between salmon or shrimp, but the shrimp was already thawed out, so I went with that.
Before cooking up the shrimp, I made the roasted red potatoes! You can find that recipe here. Roasted Red Potatoes.
My shrimp was seasoned with 2 tablespoons of soy sauce, sprinkle of garlic powder, onion powder, salt, pepper, and 1 tablespoon of brown sugar.
I grilled the shrimp on the tin foil for ten minutes and then finished it off on the grill without the foil.
I had romain lettuce for a side!
For some reason I always associate red potatoes with seafood. My mom always cooked them together. The only thing missing here is corn on the cob!
Today, I took the leftovers and made a shrimp and lettuce wrap!
I also made a homemade ranch with Whole Foods 365 ranch season packet, greek yogurt, and skim milk.
This was the first time Grumps didn’t beg…
He was too busy watching Hank.
And Wilma…my pet birds.
