I’m so glad I swapped my rest day from yesterday to today! It was so hot and sunny yesterday and today is the opposite. It’s going to be colder and rainy. I do plan on fitting in some yoga and a light walk, but it’s a great day to just kick back and relax.
Yesterday for breakfast I had scrambled eggs that consisted of 5 egg whites, 1 whole egg, garlic powder, cashew milk, and sea salt. I had fresh fruit for a side. I did have a whole grain english muffin an hour earlier too.
If you havnt noticed, I’ve been on a coconut water kick lately. I’ve always liked coconut, but never was a fan of coconut water. Maybe I was drinking the wrong brands, because I love it now. I found this brand, Zola, and fell in love. I’ve had their coconut water, coconut water with pulp, and espresso coconut water. They’re all equally delicious. If you don’t like coconut flavored anything, you can’t even taste the coconut in the espresso one.
I like to have 8 oz of coffee before I run with water for energy and I think I found my new go-to!
I only had two miles planned yesterday, but felt so good I wanted to go three. I have a 5k coming up on the 20th and so I’ve just been running 5k’s for the past week. Each day, I’ve knocked 30-45 seconds off my time. I just ordered a new Garmin, two new pairs of running shoes, a new foam roller with deep tissue massage triggers, and a new knee wrap. I can’t wait until they get here!
When I run, I hate stopping for traffic and so I found a 1.2 mile neighborhood near me that has no stops that I just like to lap around. Once I stop, I hate starting again.
I met up with friends for dinner last night at Phat Burrito in Southend. I love Phat Burrito because the ingredients are so fresh and the food is made right in front of you. My salad kind of looked like a taco, but it was a salad. It had lettuce, onion, tomato, grilled zucchini, grilled squash, grilled chicken, and a grilled tortilla. I liked that the tortilla was grilled and not fried. It had mozzarella cheese on top which I thought was kind of a weird choice for a Southwestern-style Mexican restaurant. I had three types of salsa and guacamole for my dressing.
Today, I’m going to be whipping up my homemade cinnamon rolls for a brunch with friends tomorrow! I’m also thinking some homemade blueberry muffins.

I’ve never heard of Phat Burrito, but I will be in Charlotte in August for a wedding, so I may have to check it out.
I love all these places you tell about in your blog! If my husband picks the school in Charlotte, I will be set on good places to eat! 😉

Shaving off 30-45 seconds a day seems like so much, especially since you are running so often! You are so dedicated, you should run in races.

That was my goal before I got injured but now I’m doing baby races! 5K next week 🙂

LOL! Baby races would be running like 2 ft wearing a onesie. Give yourself(and anyone else who runs 5K’s) some credit—5k is better than no K! 🙂

I hope you’ll be posting about your 5k! I have been trying to turn myself into a runner for years and after joining a running group this year it’s finally starting to stick – I have a 10k tomorrow and my 3rd half marathon planned for May!
