Good Morning,
I’ve been up since 3 am. It was a pretty rough night and there has been so much going on I couldn’t sleep. I tossed and turned for about an hour and then just gave up. I went downstairs, made coffee and stretched a little. I finished watching last night’s episode of Nashville and then read random blogs for a couple of hours. I had breakfast early, a bowl of fiber one cereal and a grapefruit. I got hungry again around ten and decided to make some scrambled eggs.
I love scrambled eggs for a snack because they’re quick, high protein, and have healthy fats.
This scramble had: 2 eggs, 3 egg whites, 1/2 tsp garlic powder, 2 tbsps cheddar cheese, sprinkle of black pepper & salt, 1 tbsp light cream, and 1 tsp olive oil.

Yummy! My breakfast is similar… 1/2 cup of quick oats and fresh blueberries early in the morning, and around 10 am when I get hungry, I’ll scramble some eggs/egg whites or if I’m on the go I’ll have an apple and a protein shake.

Do you do anything with the leftover yolks when you just use egg whites? I never know what to do with them so I usually throw them out!

I love the second breakfast – it’s just so necessary when you get up SUPER early and have to eat right away at 6am. I actually eat a small brakfast at 9am so I can eat a snack at 11am and then lunch at 1pm! Best 🙂

I’ve had your blog bookmarked for years & check it regularly,same with your instagram& I’venever commented. Decided to start today, haha. I want to love eggs-I’m a vegetarian (since I was 7 yrs old) so the lower carb/higher protein/good fat options aren’t as in abundance- but I rarely come across any that I can enjoy. I am going to try adding the cream, evoo, etc! Fingers crossed!
Also- I really like your new background & profile image. Very consistent with the brand you’ve created!
