One thing I love about leftovers is you can turn them into completely different dishes. We do this a lot at Thanksgiving when there is so much food left, but cooking for one person means tons of leftovers throughout the week. Since I had a lot of chicken leftover, I decided to make some sandwiches with it. You can do just about anything with leftover chicken. You can add it to your salads, pastas, soups, etc…
For the chicken sandwiches, all you need is: 1 Tbps roasted red pepper hummus, 1/4 of an avocado sliced, 1 honey wheat bagel, 1/4 cup of chopped kale, cucumber slices, and 3 ounces of baked chicken. You can add any kind of sandwich toppings you like!
Some good ones? Cream cheese, onions, tomatoes, mustard, pickles, spinach, jalapeños….
AND HERE IS HOW IT’S DONE:
Slice the bagel in half, add the hummus and avocado slices.
Top one side with kale and chicken, the other with cucumber slices.
Smack the slices together and slice! Boom, you have yourself a delicious sandwich.

That sandwich looks so good! Last night we had tacos and today for lunch I used the leftovers to make a big taco salad with veggies, salsa, corn chips and taco meat. It’s nice not having to make anything and just use what you have in the fridge. By the way, that outfit is soo cute! I’m so excited for the 4th.
