Yesterday morning my mom, dad, and I hovered around the kitchen while my brother cooked us breakfast. He’s a behavioral scientist in the Air Force, but his second career choice was a chef. I’m not kidding when I say this guy can cook! I love when he is home. He’s always making seafood pasta, homemade pizzas, and burritos all from scratch.
I have the recipe for my mama’s sweet potato hash up, but I’ll do a little recap!
Ingredients: *2 Large Sweet Potatoes (skinned and diced), *2 Tbsp Olive Oil *1/4 Tsp Salt, *1 Tsp Pepper, *8 Vegetarian Sausages Patties, *1 Cup Diced Sweet Onion, *1 Cup Diced Green Bell Pepper *5 Large Eggs.
-Cook and brown the potatoes in one tbsp of olive oil after dicing.
-In another pan, saute the onions and peppers in a frying pan.
-Add the onions and peppers into the same pan as the sweet potatoes.
-Scramble the eggs with salt and pepper in the onion and peppers pan. Don’t wash the pan before adding the eggs.
-Crumble and cook up the sausage in a pan, too.
-Add the cooked eggs and sausage to the pan with the sweet potatoes and vegetables.
Give the hash one last mix in the frying pan. You can add cheese on top if you’d like. This recipe makes 12 (1 cup) servings!

Looks delicious I have left over corned beef from at pattys I’ll probably throw some of that in. He is super cute too! Good looking family!
