Well this post is a little late considering that it’s already Tuesday. But as I always say “better late, than never!” Sunday afternoon, I whipped up a delicious lunch salad with the produce from the Eastern Market!
A lot of people avoid salads in the fall and winter months because they aren’t warm or comforting. That’s true! But, I make them warm and comforting by lighting up a couple candles, throwing on my slippers, and eating the salad on the comfy couch!
This fresh Sunday salad had: lettuce, bell pepper, cucumber, croutons, tomato, avocado, onion, and egg! I used garlic vinaigrette for my dressing.
